This authentic German potato salad recipe came from Speck's Restaurant, which was a famous eating establishment in St. Louis from the 1920s through the '50s. I ate lunch there almost every day and always ordered the potato salad. When the owner learned I was getting married, he gave me the recipe as a wedding gift! -Violette Klevorn, Washington, Missouri

3 pounds medium red potatoes
5 bacon strips, diced
1 medium onion, chopped
1/4 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon celery seed
1/4 teaspoon pepper
1-1/4 cups sugar
1 cup cider vinegar
3/4 cup water
3 tablespoons minced fresh parsley

Steps:

  • Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain and cool., In a large skillet, cook bacon over medium heat until crisp; using a slotted spoon, remove to paper towels. Drain, reserving 4 tablespoons drippings. In the drippings, saute onion until tender. , Stir in the flour, salt, celery seed and pepper until blended. Gradually add the sugar, vinegar and water. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened. , Cut potatoes into 1/4-in. slices. Add potatoes and bacon to the skillet; cook and stir gently over low heat until heated through. Sprinkle with parsley. Serve warm.

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
¼ cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Steps:

  • Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
  • Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

12 medium potatoes
12 bacon strips
1-1/2 cups chopped onion
1/4 cup all-purpose flour
1/4 cup sugar

1-1/2 cups water
3/4 cup white vinegar
Chopped fresh parsley

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Peel and slice into a large bowl; set aside. , In a large skillet, cook bacon until crisp. Using a slotted spoon, remove bacon to paper towels; drain, reserving 2 tablespoons drippings. , Saute onion in drippings until tender. Stir in the next six ingredients. Gradually stir in water and vinegar; bring to a boil, stirring constantly. Cook and stir 2 minutes more or until thickened. Pour over potatoes; toss to coat. This is one of those true German recipes. My dear MIL is a "true" German. Trying to get measurements from her is like pulling teeth. I have made this for DH for 34 years now. I still throw it together without measuring so today while preparing it I tried to eyeball the amounts. Hope it works for you and that it is enjoyed. There is no sugar included like most potato salads. DH does like mayo on the side.

4 medium white potatoes (cooked)
1/2 cup onion, chopped
1 tablespoon butter
1/4 cup water
2 beef bouillon cubes
1/4 cup vegetable oil
1/4 cup vinegar
salt & pepper
3 slices bacon (cooked and crumbled)

Steps:

  • Cook potatoes in skin till tender (not too soft) needs to be on the firm side. Set aside to cool.
  • Sauté onion in water and butter till high simmer.
  • Add bouillon cubes. Set aside to cool.
  • Peel cooled potatoes and slice into circles about 1/8-inch thick.
  • Put potatoes in casserole dish.
  • Drizzle oil and vinegar over top of potatoes.
  • Pour onion mixture on top, salt & pepper to taste finish with crumbled bacon bits.
  • Do not mix at this time. Let sit at least 1-2 hours in the refrigerator to let flavors blend. Over night is best.
  • Serve cold or bring to room temperature.
  • Mix all together before serving.

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • Place bacon and onion in a large, deep skillet. Cook over medium heat until bacon is evenly brown. Drain excess grease from skillet.
  • Add the sugar and vinegar to the bacon and onion mixture and bring to a boil. Pour the mixture over the potatoes and stir.

2 pounds white new potatoes, cut in half
Kosher salt
Extra-virgin olive oil
8 bacon slices, cut into lardons
1 onion, cut into 1/4-inch dice
1/2 cup chicken stock
1/4 cup apple cider vinegar
1 bunch fresh chives, finely chopped

Steps:

  • Toss the potatoes in a medium saucepan, cover generously with water and season generously with salt. Bring the pot to a boil and reduce to a simmer until the potatoes are fork tender, about 20 minutes. Drain and reserve.
  • Coat a large straight-sided saute pan lightly with olive oil. Toss in the bacon and bring the pan to a medium heat. When the bacon is brown and crispy, toss in the onions and cook them until they are very soft and aromatic, 7 to 8 minutes. Add the stock and vinegar. Toss in the potatoes when they are still warm and cook until the liquid has absorbed into the potatoes. Taste and season with salt if needed. Toss in the chives and serve warm or at room temperature.

1/2 pound thick-cut bacon
3/4 cup finely chopped onion
1/3 cup white vinegar

1 tablespoon Dijon mustard

Steps:

  • Place the potatoes in a medium-size pot and cover them with enough water to extend 2 inches above the surface of the potatoes. Salt the water and bring to boil over medium-high heat. Continue cooking until potatoes are tender when pierced with a fork, about 15 to 20 minutes. Drain and slice into 1/4-inch rounds.
  • Cook the bacon in a large skillet over medium-high heat. Once crisp, place on a paper towel-lined plate and crumble into small pieces. Pour off the rendered fat, reserving 1/4 cup in the pan. Turn the heat to medium and add the onion. Cook until translucent and just beginning to brown, about 4 to 5 minutes.
  • Whisk in the vinegar, sugar, mustard, and salt and stir until thick and bubbly. Add the sliced, cooked potatoes and toss to coat. Top with the crumbled bacon and garnish with the chives. Serve warm.

This is a delicious dish served hot or cold. I loved it as a child but never learned how to make it until recently. As I usually do, I studied about 20 different recipes I found on Recipezaar and incorporated my favorite aspects of each recipe into my own version. I added one ingredient on my own because I felt it was necessary...GARLIC.

8 -10 medium sized potatoes
6 ounces center-cut bacon
1 medium onion
2 eggs (NOT boiled)
2/3 cup cider vinegar
2/3 cup white sugar
2/3 cup finely chopped celery, from the heart
1/2 cup beef stock or 1/2 cup broth
4 garlic cloves
1 tablespoon dry mustard
1 teaspoon salt
1/4-1/2 teaspoon red pepper flakes
ground black pepper

Steps:

  • Cook the potatoes with the jackets on by either boiling or in the microwave.
  • When they have cooled enough to handle, remove the skins and dice into approximately 1/2" cubes.
  • Place them into a large bowl and add the chopped celery.
  • Chop the bacon and mince the garlic finely, and cook them together in a saute pan until the bacon has browned.
  • Chop the onion and add to the bacon mixture. Saute over med-low heat stirring frequently until the onions start becoming translucent. If you are using dehydrated chopped onion, add it to the next step instead.
  • Mix together the vinegar, sugar, beef stock, eggs, salt, pepper, mustard and pepper flakes in medium bowl or large measuring cup until the the eggs are well incorporated and the sugar is dissolved.
  • Add to the pan with the bacon mixture. Cook and stir over medium heat until bubbling and thickened.
  • Pour over the potatoes and mix together well.
  • Serve now or later, hot or cold.

Most German potato salads are made with mayo, but this one is not. It is by far better than any that I have made with mayo. You must try it! We make this to accompany Recipe #112907. Great for a summer party.

3 lbs new potatoes
1 yellow onion, quartered
1/2 lb bacon, diced (thick)
1 large red onion, diced
3/4 cup cider vinegar
1 tablespoon mustard seeds
2 tablespoons hot mustard
1/4 cup canola oil
salt
fresh ground black pepper
8 green onions, thinly sliced
fresh parsley leaves, chopped

Steps:

  • Place unpeeled potatoes in a large pot with the onion and cover with water.
  • Cook on the grates of the grill (the bobby flay way) or just do it on the stove (the way we do it).
  • Bring to a boil and cook until tender (about 15 minutes).
  • Drain and discard onions.
  • When cool enough to handle cut potatoes in cubes or slices.
  • Place potatoes in a large bowl and cover to keep warm.
  • Place a large sauté pan on grill/stove, add the bacon and cook until crisp.
  • Remove the bacon with a slotted spoon and drain on paper towel-lined plate.
  • Add the red onions to the rendered bacon fat and cook until soft, 4-5 minutes.
  • Carefully add the vinegar and mustard seeds and cook 2 more minutes.
  • Whisk in the canola oil and hot mustard and season with salt and pepper to taste.
  • Add the potatoes to the pan of dressing and toss gently to coat.
  • Fold in the green onions, parsley and bacon; season again with salt and pepper to taste.
