FLAMMKUCHEN AKA TARTE FLAMBéE (AUTHENTIC RECIPE)
Tarte Flambée or Flammkuchen (known as German pizza in the US) is a thin flatbread topped with creme fraiche, thinly sliced onions and smoked bacon lardons. Traditionally it is baked at extremely high temperatures in wood-fired ovens. This recipe is designed for baking in a home oven.

Steps:
- Sift the flour. Combine the yeast, sugar and water in a bowl and let the yeast activate.
- Add the flour, salt and oil and mix until a dough forms.
- If using a stand-up mixer, let it work on the dough for a couple of minutes.
- If kneading by hand, knead actively onto a floured surface for 5 minutes.
- Cover the dough and let rest in a warm spot for about 1 hour.
- In the meantime cut the bacon into small, thin strips and thinly slice the onions.
- Heat the clarified butter or cooking oil over medium heat and cook the bacon until it just begins to get crispy. Move it to drain over a paper towel.
- In the same pan with the grease left from the bacon, saute the onions. When translucent move away from the heat and let them cool off.
- Mix the creme fraiche or sour cream with the yolk, salt and pepper, nutmeg.
- Heat the oven to 425 F.
- Knead the dough for a minute and divide it into portions (8 for appetizer sized or 4 for bigger flammkuchen).
- Roll out the dough pieces thinly and place then onto parchment paper lined baking sheets.
- Spread creme fraiche mixture over each tart, top with onions, bacon and sprinkle with caraway seeds. Bake for 20 minutes or until the edges begin to darken.
- Serve right away.

GERMAN ZWIEBELKUCHEN (ONION PIE)
Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green' wine can have explosive consequences later on!

- Preheat oven to 425 degrees F (220 degrees C). Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
- Saute onion in a skillet until translucent and pour cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, chop and add to onion; mix well.
- Stir in sour cream. Beat eggs enough to break up yolks, then mix in to pie mixture. Add flour to thicken mixture (onions will create a lot of water), then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seed.
- Bake in preheated oven for about 1 hour, or until onions start to turn golden brown on top.

PIZZA PIE
Make a deep-dish Chicago-style pizza pie to serve everyone at once. This is a veggie version, but you can add any fillings you prefer

- To make the dough, combine the flour, yeast and sugar in a large bowl and make a well in the middle. Tip in 1 tsp salt, the oil and 250ml tepid water. Bring the mixture together into a dough using your hands, then tip onto a lightly floured surface and knead for 10 mins until smooth and elastic. Drizzle a bit more oil into the bowl, add the dough, cover with a damp tea towel and leave to rise for 35-40 mins, or until doubled in size. Meanwhile, combine all the ingredients for the sauce in a bowl.
- Heat the oven to 190C/170C fan/gas 5. Lightly oil a 23cm springform cake tin. Tip the dough out onto a floured surface, and knock the air out of it a few times using your hands. Remove a quarter of the dough and set aside, then roll the rest out thinly so it's large enough to line the tin with some overhanging. Press the dough into the base and up the side of the tin.
- Spread half the sauce over the pizza dough base, then sprinkle with half the mozzarella and half each of the olives and basil. Roll the reserved dough out into a circle that's large enough to fit over the first layer of filling, then lay it over the top. Top with the remaining sauce, most of the remaining cheese, and the rest of the olives and basil. Fold the overhanging dough over the filling slightly, then scatter the remaining cheese over the exposed filling in the middle.
- Transfer the tin to a baking tray and bake for 45-50 mins until golden and crisp. Remove from the oven, undo the springform clip and leave to cool for 20 mins before removing from the tin and cutting into wedges to serve.

GERMAN PIZZA
I got this from a "Taste of Home" Family Favorites cookbook, one of those little ones sold by the checkstand in the grocery store. Anyway, this is very good and my teenage son, who is very picky, loves it too. The only thing I can't figure out is why it is called "german" pizza. Usually, if it has "german" in the title, there is sauerkraut in it. Guess it doesn't matter what they call it because we eat it and love it!

- In a 12 inch stove top or an electric skillet, over medium heat, brown beef with onion, green pepper, 1/2 teaspoons salt and pepper. Remove meat mixture from skillet and drain. Reduce heat to low. Melt margarine. Spread potatoes over margarine and sprinkle with remaining salt. Top with beef mixture. Combine eggs and milk. Pour over all. Cook covered about 30 minutes. Top with cheese. Cover and heat until cheese is melted, about 5 minutes. Cut into wedges or squares to serve Top each serviing with a dollop of sour cream. (I use the fat free sour cream and it tastes just the same in casseroles and other dishes).
