- Let eggs stand at room temperature for 30 minutes. In a large bowl, beat egg yolks and sugar for 10 minutes or until light lemon-colored. Beat in vanilla. Combine cake flour and baking powder; add to egg mixture alternately with water, beating well. Fold in walnuts., In another bowl and with clean beaters, beat the egg whites on high until stiff peaks form. Fold a fourth of the egg whites into batter; fold in remaining whites. , Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a small saucepan, whisk the milk and pudding mix. Bring to a boil, stirring constantly. Remove from the heat. Pour into a bowl; press a piece of waxed paper or plastic wrap over pudding. Refrigerate for 30 minutes., In a bowl, cream the butter, shortening and confectioners' sugar until light and fluffy. Beat in vanilla and cooled pudding. Split each cake into two layers. Place one bottom layer on a serving plate; spread with about 3/4 cup filling. Repeat layers. Garnish with chocolate curls if desired.

SANDRA'S GERMAN APPLE CAKE
My mother sent me this unusual recipe back in the 70's. I was baking rolls in a health food restaurant at the time. The restaurant wanted me to come up with a dessert for the menu, so I made my mother's recipe using wholewheat flour, turbinado sugar and organic walnuts*. It was an enormous success! You should note there is no liquid in this recipe. The moisture that binds the ingredients comes from the eggs, oil and fresh apple slices. A pretty good electric mixer and/or strong arm is required to incorporate all the flour no matter what kind of flour you use. The result is more like a stiff dough than any cake batter I've ever seen. I continue to make this cake with wholewheat flour and turbinado sugar because I like the result. You, of course, may use any flour and sugar you want. *Nostalgia Note: In 1974, organic walnuts came from a tree in their original packaging called a shell. To use the nut, the shell had to be broken with something hard called a nut cracker and then the nutmeat was picked out; repeat until the amount of nutmeats equal what the recipe calls for. Today, walnuts come in a bag and if there are any shells involved you can lodge a complaint.

- Cake: Beat the eggs until light.
- Add and beat after each ingredient: oil, sugar, vanilla, baking soda, cinnamon, salt.
- Add the flour in 1/2 cup increments. It will be stiff.
- Fold in the walnuts.
- Fold in the apple slices.
- Pat the dough into an oblong cake pan that's been oiled and dusted with flour.
- Bake at 350°F for 45 to 60 minutes (or until a knife inserted in the middle comes out clean).
- Frosting: Combine the cream cheese, butter, vanilla and powdered sugar. Whip until creamy. Pour over the cooled cake.

GERMAN NUT CAKE
This old time passed down recipe was given to me by a dear friend. The cherries and walnuts in big bite size adds to the charm of this wonderful cake. The cinnamon sugar dusting adds a crunchy outside texture to this cake...Yum Yum!

- Cream together the two cups of sugar, vanilla, margarine, and eggs.
- Add the sour cream and blend well.
- Add the dry ingredients (except the set aside ingredients).
- Blend together well.
- Prepare a bundt pan by coating it well with shortening and dusting the pan with the 3 tbs sugar and the 1/2 teaspoons cinnamon.
- Pour the cake batter into the pan and poke the walnuts and cherries evenly as possible down into the cake batter to distribute these two ingredients evenly.
- Or you can take your chances by adding them to the batter before pouring the batter into the bundt pan.
- Bake in a hot oven at 350 degrees for 1 hour and 15 minutes.
- Enjoy!

GERMAN HAZELNUT CAKE
An excellent cake from Dr Oetker German Home Baking that's simple and easy to make. Hazelnut cakes are also made in Switzerland and probably other European countries. If you have a kitchen scale I would recommend using the weight measurements as they're more accurate but to make it more friendly to North American kitchens I added volume measurements in brackets. You can find bitter almond essence in German delicatessens and in some supermarkets.

- Preheat oven to 350°F.
- Mix together the sugar, eggs and flavouring and set aside.
- In another bowl, cream the butter and gradually add it to the sugar mixture.
- Mix the flour, baking powder and ground nuts together.
- Add it to the sugar and butter mixture a spoonful at a time.
- Fold in the chocolate.
- Grease a 26 cm (10 1/2 ") ring baking tin and fill with the batter.
- Bake in preheated oven for 50 to 65 minutes.
- Test cake for doneness by piercing the middle with a wodden toothpick; if it's clean it's done.
- Remove from oven and allow to stand for 5 to 10 minutes, loosen from sides of tin with knife then turn out onto a cake wire so that it can dry off.
- Dust the cooled cake with icing sugar.

My most requested recipe. It also got me the sweetest compliment I ever had on my baking. - When the five year old french niece of my best friend came visiting with her parents she was very shy. When she had tasted a little of the cake she insisted that everone present, please try the cake immediately, because "c'est le meilleur gateau du monde" - it is the best cake in the world! And that is what my friends call it now when requesting it. :) - We like it topped with a dollop of sweetened whipped cream.

- Note: Time for cooling is not included.
- Preheat the oven to 350°F (180C). For best removal of cake: Thoroughly grease pan with melted butter. Put it in the fridge for 5 minutes. Remove, fill with 2 tablespoons flour, shake pan over the sink until evenly dusted with flour. Discard any loose flour. Keep dusted pan in fridge until filling.
- Mix flour with baking powder.
- Beat egg whites with a pinch of salt in a large clean bowl with clean beaters until stiff but not dry. Set aside.
- In another large bowl beat soft butter and sugar until creamy white and fluffy. Add egg yolks, one at a time, beat until light in color and increased in volume, about 3 minutes.
- Put nuts and chocolate into bowl with the butter and egg yolks and mix a few seconds on low until just blended.
- Sift flour over mixture. Don't mix. Put 1 cup of egg white on flour.
- With a rubber spatula fold flour and the cup egg white into nut mixture, this will be rather stiff, but it does not need to be blended completely.
- Give rest of egg white on nut mixture and fold it in until completely blended. (If you try to mix in flour without egg white first and then fold in all of egg white at once, the flour mixture will be too firm to do this, therefore the two steps.).
- Fill batter evenly into pan.
- Bake in the middle of the oven for 60-75 minutes. If it browns too much reduce heat by 15 degrees and cover loosely with parchment paper.
- Test doneness by inserting a wooden skewer into the middle of the cake. If only melted chocolate but no crumbs stick to it the cake is done. Remove from oven.
- Let cool in pan for 10 minutes, then carefully lay it on the side and let cake slip out of form. You may cut with a thin knife along the sides between cake and pan to make sure it will come out.
- Best eaten while still a little warm but will keep several days. Dust with a little powdered sugar before serving if you like. Cut into 1/2 inch slices. Serve with a dollop of sweetened whipped cream.
- Note: Using fresh unsalted butter, freshly ground nuts and a really good-quality chocolate are keys in making this cake really good. I usually make it with hazelnuts, and think this tastes slightly better than with walnuts :).

GERMAN APPLE WALNUT BUNDT CAKE
Posted for ZWT6 German Region. I found this on a Authentic German Foods recipe site. I did find it interesting to learn that the word "Bundt" comes from the German word "Bund" which literally means "gathering of people". Isn't that sweet?? This is a versatile recipe in that it is good for a breakfast treat, pack in a lunch, take on a picnic or serve as a dessert after dinner.

- Preheat oven to 350°F Grease and flour a Bundt pan and set aside.
- In a medium bowl, combine the diced apples, 2 tablespoons sugar and 1 teaspoons cinnamon; set aside. Sift together flour, baking powder, and salt.
- In a large bowl, combine 2 cups sugar, oil, apple juice, vanilla, and eggs. Beat at high speed until smooth. Stir in flour mixture. Fold in chopped walnuts and apple mixture.

- If using a vanilla bean, halve it and scratch out the seeds. Pour milk into a pot, add the vanilla pulp (or essence) and 1 tbsp of sugar. Bring to a boil.
