High-Altitude Chocolate Cake image

This moist chocolate cake never collapses, something I can't say for other cakes I've baked at high altitude! This cake has been tested at 9,000 feet and always turns out fluffy and moist! Frost this delicious layer cake with cream cheese vanilla bean frosting. Bailey's® buttercream or mocha frosting are also great choices.

¾ cup unsweetened cocoa powder
1 ½ cups hot coffee
1 ¾ cups white sugar
½ cup Greek yogurt
½ cup whole milk
2 large eggs, at room temperature
2 teaspoons vanilla extract
¾ cup olive oil
2 cups unbleached flour
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Place cocoa into a small bowl, pour coffee over top, and stir to combine. Set aside to cool.
  • Combine sugar, yogurt, milk, eggs, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add olive oil and mix to combine.
  • Combine flour, salt, baking soda, and baking powder in a large bowl; whisk until combined with no lumps remaining. Pour dry ingredients into the wet ingredients and beat until just mixed. Stir in the coffee mixture and pour batter into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean and the center looks slightly wet but springs back lightly when touched, 25 to 35 minutes. Cool on a wire rack for 15 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack and let cool, about 30 minutes.

Make any event extra special with a sweet chocolate cake. This GERMAN'S Sweet Chocolate Cake is triple-layer decadence with coconut-pecan icing.

1/3 cup boiling water
1 pkg. (4 oz.) BAKER'S GERMAN'S Sweet Chocolate
3 eggs, separated
2 cups sifted cake flour
3/4 tsp. baking soda
1/4 tsp. salt
3/4 cup butter or margarine, softened
1-1/3 cups sugar
3/4 tsp. vanilla
3/4 cup buttermilk
1 recipe Coconut-Pecan Filling and Frosting

Steps:

  • Heat oven to 350°F.
  • Spray 3 (9-inch) round pans with cooking spray; cover bottoms with waxed paper. Add boiling water to chocolate in small bowl; stir until chocolate is completely melted.
  • Beat egg whites in small bowl with mixer on high speed until stiff peaks form; set aside. Mix flour, baking soda and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Blend in egg yolks, 1 at a time. Add melted chocolate and vanilla; mix well. Beat in flour mixture alternately with buttermilk, mixing well after each addition. Gently stir in egg whites until well blended.
  • Pour into prepared pans.
  • Bake 35 min. or until toothpick inserted in centers comes out clean. Immediately run spatula around cakes. Cool in pans 15 min. Remove cakes from pans to wire racks; remove waxed paper. Cool cakes completely. Meanwhile, prepare Coconut-Pecan Filling and Frosting.
  • Stack cakes on plate, filling layers and spreading top of cake with frosting. (Note: Nutrition is for both cake and frosting.)

4 ounces German chocolate
1/2 cup water
1 cup butter, softened
2 cups sugar
2 tablespoons sugar
4 eggs, separated (whites beaten until stiff)
1 teaspoon baking soda
1 cup buttermilk
2 1/2 cups sifted cake flour
1/2 teaspoon salt
1 teaspoon vanilla extract
for the coconut nut frosting
1 1/2 cups butter
1/2 cup evaporated milk
1/2 cup half-and-half
1 cup sugar
3 egg yolks, beaten
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup coconut, shredded
1 cup nuts, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare three 8-inch layer pans by lining them with wax paper and greasing them.
  • In a double boiler melt the chocolate with the water over simmering water. Let cool.
  • In a large bowl using a mixer cream the butter (or use margarine or shortening) with the sugar until light and fluffy. Beat in egg yolks one at a time and then blend in the melted chocolate.
  • In a measuring cup dissolve the baking soda in the buttermilk.
  • In a bowl sift flour and salt together.
  • Add dry ingredients alternately with the buttermilk mixture, mixing well after each addition. Add vanilla. Mix well.
  • With a rubber scraper or whisk fold in beaten egg whites.
  • Pour batter into prepared pans.
  • Bake for 35-40 minutes or until cake center springs back when pressed with fingertip. Cool.
  • Fill and frost with frosting (use your favorite or the following recipe).
  • To make the frosting: in a saucepan combine butter, evaporated milk, cream, sugar, beaten egg yolks, and salt. Cook over low heat, stirring constantly until mixture is thickened. Remove from heat. Stir in vanilla, coconut and nuts. Beat until consistency for spreading.

This recipe was given to me by my great-aunt Julee over 40 years ago and I have had to convert it from SE Oklahoma Mountain area altitude to our altitude. We live in NM between 5000 feet and 7000 feet and I bake this 3-layer cake often for my family. If making a sheet cake, I use an 11 x 15 pan for this recipe.

2 ¾ cups cake flour (such as Pillsbury® Softasilk®)
1 cup unsweetened cocoa powder
1 ½ teaspoons baking soda
½ teaspoon salt
1 ¾ cups white sugar
1 cup butter, softened to room temperature
2 teaspoons vanilla extract
1 teaspoon almond extract
2 ¼ cups buttermilk, divided
2 eggs
1 ¼ cups butter, softened to room temperature
2 teaspoons vanilla extract
1 teaspoon almond extract
6 tablespoons milk, or more as needed
2 (16 ounce) packages confectioners' sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Coat three 9-inch round cake pans generously with cooking spray.
  • Mix cake flour, cocoa powder, baking soda, and salt together in a large bowl.
  • Beat white sugar, 1 cup butter, 2 teaspoons vanilla extract, and 1 teaspoon almond extract together in a large bowl with an electric mixer on medium speed until light and fluffy. Pour in half of the buttermilk and mix well. Beat in eggs one at a time.
  • Beat half of the flour mixture into the creamed butter mixture. Add remaining buttermilk; beat well to combine. Add remaining flour mixture and beat until batter is smooth, about 1 minute. Pour batter into prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, 26 to 30 minutes. Let cool in pans, about 15 minutes. Invert onto wire racks and cool completely before frosting, about 45 minutes.
  • Beat 1 1/4 cups butter, 2 teaspoons vanilla extract, and 1 teaspoon almond extract in a large bowl with an electric mixer on medium speed until creamy. Beat in milk gradually. Add confectioners' sugar, 2 cups at a time, scraping sides of the bowl as needed, until frosting is smooth. Increase speed to high and beat, adding more milk, 1 tablespoon at a time, until frosting is fluffy and spreadable.
  • Spread frosting between cake layers and smooth over top and sides of cake.
