6 large eggs, separated
1 cup butter, softened
2 cups sugar
1 tablespoon grated lemon zest
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cardamom
6 tablespoons 2% milk
2 tablespoons confectioners' sugar

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Generously grease and flour a 10-in. tube pan., In a large bowl, cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in lemon zest and extracts. In another bowl, mix the flour, baking powder, salt and cardamom; add to the creamed mixture alternately with milk, beating well after each addition., With clean beaters, beat egg whites on medium speed until soft peaks form. Fold into batter., Transfer to prepared pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in center comes out clean. Cool in pan for 10 minutes before removing to a wire rack to cool. Sprinkle with confectioners' sugar.

The pound cake is the underdog of the dessert world. It's not flashy. It's old-fashioned. It's simple. But I implore you to take a closer look. If you give it a chance, the pound cake will never disappoint. This cake gets a flavor boost from browned butter, the aromatic liquid you get when you melt butter and cook it until the milk solids have turned golden brown and the butter smells nutty. It's heavenly stuff and makes this pound cake even better.

19 tablespoons (2 sticks plus 3 tablespoons) unsalted butter, plus more for the pan
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1 cup granulated sugar
4 large eggs
1 vanilla bean, split and seeds scraped
3 ounces cream cheese, at room temperature
1/4 cup confectioners' sugar
2 to 4 tablespoons warm milk

Steps:

  • In a medium light-colored skillet, melt 16 tablespoons (2 sticks) of the butter over medium-high heat. Cook, swirling the pan occasionally, until the milk solids are golden brown and the butter smells nutty, 4 to 6 minutes. Immediately transfer the butter to a large bowl (this will be for the cake batter); be sure to scrape out the browned bits from the bottom of the skillet. Wipe the skillet out and repeat the same process with the remaining 3 tablespoons butter. Transfer the butter to a medium bowl (this will be for the glaze). Set both bowls aside until the butter has solidified to the texture of softened butter.
  • Preheat the oven to 350 degrees F. Butter a 4 1/2- by 8 1/2-inch loaf pan.
  • To prepare the cake, whisk together the flour, baking powder and salt in a medium bowl and set aside. Add the granulated sugar to the 2 sticks of browned butter and beat the mixture with an electric mixer on medium-high speed until light and fluffy, 3 to 4 minutes. Add the eggs one at a time, beating after each addition. Then add the vanilla bean seeds. Beat in the flour mixture just until combined. Transfer the batter to the prepared pan.
  • Bake until the cake is golden brown and a toothpick inserted in the center comes out with moist crumbs attached, 60 to 70 minutes. Transfer the cake to a rack to cool for 20 minutes, then remove the cake from the pan and let cool completely.
  • Add the cream cheese to the 3 tablespoons browned butter and beat with an electric mixer on medium until fluffy. Beat in the confectioners' sugar. Add enough milk to the mixture to make a thick but pourable glaze. Top the cooled cake with the glaze before slicing.

This is a great switch on dark chocolate once in awhile. You can use the glaze shown below, or just hit it with some powdered sugar. I think that the cinnamon is a welcome addition. Enjoy! I take my baking chocolate squares out of the box they come in and put them in zippered bags, but I think the name of the chocolate is "German's Sweet Chocolate."

1 (4 ounce) package sweet baking chocolate
1 cup butter or 1 cup margarine, softened
1 3/4 cups sugar
3 eggs
1 egg yolk
2 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cream of tartar
1/4 teaspoon ground cinnamon
3/4 cup milk
1 teaspoon vanilla extract
1 (4 ounce) package sweet baking chocolate
1 tablespoon butter or 1 tablespoon margarine
1 egg white
1 cup sifted powdered sugar
1 -2 tablespoon water

Steps:

  • Grease and flour a 10-inch tube pan. Line bottom of pan with waxed paper. Set aside.
  • Place chocolate in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Let cool.
  • Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs and yolk, one at a time, beating well after each addition. Add chocolate, mixing well.
  • Combine flour and next 4 ingredients; add flour mixture to chocolate mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in vanilla. Pour batter into pan. Bake at 350°F for 1 hour and 5 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan 15 minutes; remove from pan, and let cool on a wire rack. Pour sweet chocolate glaze over top of cake, if using.
  • For the glaze:.
  • Combine chocolate and butter in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Cool.
  • Beat egg white (at room temperature) at high speed of an electric mixer 1 minmute or until stiff peaks form. Gradually add powdered sugar, beating until stiff peaks form and sugar dissolves,(2 to 4 minutes).
  • Fold chocolate mixture into egg whites. Add water, stirring until smooth.

4 ounces unsweetened baking chocolate, melted
2 unsweetened chocolate squares
2 tablespoons butter
1 cup confectioners' sugar
2 -3 tablespoons water

Steps:

  • Preheat oven to 300 degrees.
  • Grease and flour a 10-inch tube pan or bundt pan.
  • Cream shortening at medium speed of mixer.
  • Gradually add sugar until well mixed.
  • Add eggs one at a time, beating well after each egg.
  • Blend in vanilla extract.
  • Combine flour, baking soda and salt.
  • Add alternately with buttermilk to the creamed mixture.
  • Continue mixing well.
  • Mix in the melted chocolate last.
  • Pour batter into prepared pan and bake for about 90 minutes or until cake tests done.
  • Cool cake in pan on rack for about ten minutes, then turn out and let cake cool completely.
  • You may sprinkle with confectioners sugar or top with chocolate glaze.
  • For glaze, microwave chocolate and butter together, in a medium sized bowl, until melted.
  • Mix in confectioners sugar and just enough water to make a smooth glaze.
  • Pour glaze over cake and let trickle down the sides.

A favourite that I have made time and time again over the past 20 years. This is a Margaret Fulton recipe. A rich cake with a golden crust of butter-fried almonds.

200 g butter
1/3 cup whole blanched almond
3/4 cup icing sugar, sifted
3/4 cup caster sugar
3 eggs, separated
3/4 teaspoon vanilla essence
1/4 teaspoon almond essence
2 1/4 cups flour
1 1/2 teaspoons baking powder
1 pinch salt
3/4 cup milk
icing sugar, to finish

Steps:

  • Set the oven at moderate (180C/350F).
  • Grease a 6-7 cup fluted ring cake mould with 30g of butter, putting large dabs in the creases of the mould and embedding an almond in each dab. Put in the refrigerator to set while preparing the mixture.
  • Cream the remaining butter well. Gradually beat in the sugars, beating well between each addition. Add the egg yolks one at a time, and beat until smooth. Stir in the vanilla and almond essences. Sift the flour, baking powder and salt three times and fold into the creamed mixture alternately with the milk.
  • Whisk the egg whites until stiff, stir a spoonful into the cake mixture and, when incorporated, fold in the remaining whites carefully and lightly using a large metal spoon.
  • Pour into the prepared tin and bake for about 1 1/2 hours, or until the cake is cooked when tested with a skewer. Allow to stand for about 15 miutes before turning out.
  • Allow the cake to cool completely before dusting with sifted icing sugar. Cut this rich cake into thin slices to serve.

1/4 cup granulated sugar
1/4 cup butter flavor shortening or 1/4 cup butter
1/4 teaspoon salt
1 large egg
1 (1/4 ounce) packet active dry yeast
1/2 cup warm milk (105-115 degrees F)
2 1/4 cups flour
1 tablespoon vanilla extract
1 cup unsalted butter
2/3 cup flour
2 cups superfine sugar (Must use Extra Fine!!)
2 extra-large eggs
4 -5 tablespoons milk
1 teaspoon clear vanilla extract (optional)

Steps:

  • Mix sugar, shortening, and salt in a bowl.
  • Add egg, and beat together for 1 minute.
  • Dissolve yeast in warm milk.
  • To egg/sugar mixture, add flour, then yeast mixture and vanilla, beating about 3 minutes (with dough hook or by hand).
  • Turn dough onto lightly floured board and knead 1 minute.
  • Place in a lightly greased bowl, cover with a towel and let stand in a warm place to rise 1 hour or until double.
  • Make Topping: Cream butter in a mixer.
  • Mix together flour and sugar; gradually beat into butter.
  • Add eggs, one at a time, beating well after each addition.
  • Add vanilla.
  • Gradually add just enough milk to bring mixture to an easy spreading consistency, being careful not to make it too runny. Set aside until dough is doubled and ready for use.
  • When dough is doubled, punch it down and divide in two sections.
  • Roll or pat halves into bottom of two well-greased 8" square pans (or a 13x9 pan).
  • Crimp edges halfway up sides to hold topping. Prick dough with a fork to reduce bubbling.
  • Spread topping evenly over dough. Let stand 20 minutes. Heat oven to 375°F.
  • Bake 30 minutes for 13x9 or 20 minutes for 8x8 or until top is just golden and crusty, but still gooey.
  • DO NOT OVERBAKE!
