Steps:
- Preheat the oven to 375 degrees Fahrenheit. Butter an 8-inch square pan or equivalent-size baking dish.
- In a small bowl, whisk together the flour, baking powder, and salt. In a medium bowl, cream together the butter and 1 cup of the sugar. Stir in the eggs and vanilla. Add the flour mixture and beat until combined. Spread the mixture evenly in the prepared pan.
- In a small bowl, combine the remaining 1/3-cup sugar with the cinnamon. Squeeze lemon juice into a medium bowl. Peel, core, and slice the apples into the bowl. Add the cinnamon-sugar mixture and toss to thoroughly coat each apple slice. Arrange the apple slices on top of the batter in overlapping rows, pressing lightly into the batter. Bake for 45 minutes, until a cake tester or toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
- In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
- Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

- Preheat oven to 350°. Grease and flour a 10-in. tube pan. Combine the first 3 ingredients; set aside. , In a large bowl, beat eggs and sugar. Combine oil and orange juice and add alternately with dry ingredients to egg mixture. Beat until smooth; add vanilla and beat well. , Pour half of the batter into prepared pan. GERMAN APPLE CAKE
Apple cake is revered in Germany, and Rick Stein's classic apfelkuchen with a crunchy cinnamon topping will show you why. Any dessert apples will work for this, but avoid using Bramleys that won't keep their shape.

- Preheat the oven to 170C/150C Fan/Gas 3. Butter and line a 23cm/9in round cake tin.
- Coat the apple wedges in the lemon juice and set aside.
- In a large bowl, beat together the butter and sugar, using an electric hand mixer, until pale and fluffy. Add the eggs and beat until smooth. Sift in the flour, baking powder and salt and mix well. Slowly add the milk, mixing well after each addition, until you have a smooth batter.
- Transfer the batter to the cake tin. Arrange the apple slices, flat-side down, on the batter in a spiral pattern.
- For the topping, mix together the demerara sugar and cinnamon. Sprinkle over the batter.
- Bake in the middle of the oven for 40-45 minutes, or until a skewer inserted in the centre of the cake comes out clean and the top is golden-brown. Leave to cool for 15 minutes in the tin. Run a knife around the edges of the cake and turn it out of the tin onto a wire rack.
- Serve warm or at room temperature with whipped cream.
GERMAN APPLE CAKE (WIENER APFELKUCHEN)
Steps:
- Gather the crust ingredients.
- Whisk together flour, sugar, and baking powder in a medium bowl.
- Cut in cold butter for pie dough until small crumbs form.
- Use 4 to 6 tablespoons of the egg-water mixture to moisten the crumbs. Stir just until the mixture forms a ball. Wrap in plastic and refrigerate 30 minutes.
- Gather the batter ingredients.
- Cut each quarter apple into 3 long pieces, then cut crosswise into small trapezoids. Sprinkle with lemon juice, toss and set aside.
- Beat together softened butter with sugar in a mixing bowl until light and fluffy. Beat in egg and lemon zest.
- Whisk together flour with baking powder (and a dash of salt if using unsalted butter) in a separate small bowl. Add to creamed butter mixture alternately with whipping cream and beat until smooth. Set aside.
- Preheat oven to 350F. Butter an 11-inch springform pan and sprinkle with breadcrumbs or flour, shaking out excess.
- Roll out the crust and line the pan, piecing crust as necessary to form a 1- to 1 1/2-inch lip.
- Place drained apple slices in the crust.
- Spoon cake batter over apple slices as if setting dumpling batter on a stew, then smooth over apples to edges.
- Sprinkle 2 tablespoons almond slices then 4 tablespoons granulated sugar evenly over batter.
- Bake for 1 hour in the preheated oven, then turn off the oven and leave the cake for another 15 minutes. The crust should be golden brown and filling should be moist but set.
- Allow cake to cool completely in the pan for best taste. Serve with whipped cream . Refrigerate any leftovers.

- Preheat oven to 350°F and grease 8 or 9-inch springform pan.
- Cream butter and 1 cup granulated white sugar together until a smooth texture is reached.
- While blending, add in eggs one at a time. Add flour and baking powder. Mix until smooth and uniform.
- Spread cake batter in greased pan. The batter will be sticky so be careful.
- Peel and slice apples and place on top of cake batter. Overlapping apples and pressing down into the cake just slightly. The cake batter will rise around the apples.
- Sprinkle the extra 3 tbsp. granulated sugar on top of the batter, but don't mix in. This step is optional.
- Bake cake for 40-45 minutes or until a toothpick comes out clean.
- Remove baked cake promptly from pan and let completely cool before cutting into it. Dust with powdered sugar on top and enjoy.

- Preheat oven to 350 degrees F. Butter and flour a 9x13" baking dish or spray with non-stick baking spray.
- Mix flour, butter, sugar, egg, and vanilla together in a large bowl using an electric mixer until combined.
- Pat the cake dough into an even layer on the bottom of the prepared baking dish using the back of a rubber spatula or your hands. Refrigerate until apple filling is ready.
- In another large bowl, combine the apples, lemon juice, lemon zest, sugar, cinnamon, and applesauce. Spoon apple filling in an even layer over the cake dough.

- Pastry: 160g white flour 80g chopped almonds 160g cold butter, chopped into chunks 80g sugar pinch of salt 1 egg 1.Mix all the ingredients together quickly 2.Roll out the pastry so it is 4mm thick and has a 3cm border. 3.Lay the pastry in a 20cm dish and pinch it to the sides and corners. Fork a couple of holes in the pastry so the air can get through.
- Filling: 4 apples, peeled, quartered then thinly sliced. 1 tsp cinnamon 50g chopped almonds 1.Heat the oven to 180deg C fan. 2.Lay two thirds of the sliced apple on the pastry then sprinkle over the almonds and cinnamon. 3.Lay the remaining apples on top in a decorative fashion.
- Custard Filling: 2 eggs 150g sugar 1 tsp vanilla sugar pinch of salt 50 g vanilla custard powder 250ml cream 1.Beat the eggs, sugar, vanilla sugar and salt for a minute, then mix in the custard powder and cream. 2.Pour the whole mixture over the apples. Bake for 45 minutes. If the apples are browning too quickly, cover the dish with aluminium foil.
- Tips - If you have time, try to prepare the pastry in advance and leave it wrapped in cling film in a ball in the fridge. This will make it a lot easier to roll and stop the pastry from cracking apart.
GERMAN APPLE PANCAKES

- In a blender, combine the eggs, vanilla, and sugar and blend for about 15 seconds, until combined. Add the flour and the baking powder and mix for 60 seconds more, until very smooth. Preheat the broiler to medium-high heat. Heat a 12-inch non-stick skillet over medium heat and add the butter. Saute the apples for 4 to 5 minutes, or until softened. Add the cinnamon and the sugar, sprinkling them evenly over the apples, and stir together for 2 minutes more, until the apples are glazed and slightly translucent at the edges. Distribute the apples evenly in the skillet and pour the batter over them. Cook until the bottom seems quite firm, about 8 minutes. Transfer the pan to the broiler and, watching carefully, cook until the pancake is firm throughout and golden on top. Cut the pancake into 4 wedges and transfer them upside down to breakfast plates.
