2 eggs
1 cup vegetable oil
2 cups white sugar
2 teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
4 cups apples - peeled, cored and diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
  • In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
  • Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and four a 9x13 inch pan. In a medium bowl, mix together flour, baking soda, cinnamon and salt. Set aside.
  • In a large bowl, combine eggs, oil and sugar. Beat until foamy. Add flour mixture and beat well. Add vanilla and stir in chopped apples and walnuts. Pour into a 9x13 inch pan.
  • Bake for 45 to 50 minutes, or until a toothpick inserted into the cake comes out clean. Allow cake to cool, then spread with cream cheese frosting.
  • To make the frosting: In a medium bowl, combine cream cheese, softened butter, confectioners sugar and 1 teaspoon vanilla. Beat until smooth, then spread on cake.

3 teaspoons baking powder
1 teaspoon salt
4 large eggs, room temperature
2 cups sugar
1 cup canola oil
1/2 cup orange juice
2-1/2 teaspoons vanilla extract
4 cups thinly sliced peeled apples (about 4 to 5 apples)
2 teaspoons ground cinnamon
3 tablespoons sugar
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. tube pan. Combine the first 3 ingredients; set aside. , In a large bowl, beat eggs and sugar. Combine oil and orange juice and add alternately with dry ingredients to egg mixture. Beat until smooth; add vanilla and beat well. , Pour half of the batter into prepared pan. Arrange half the apples over the batter. Combine cinnamon and sugar and sprinkle half over the apples. Top with remaining batter, apples and cinnamon mixture. , Bake until a toothpick inserted in the center comes out clean, about 1 hour and 10 minutes. Cool 1 hour before removing from pan. Cool, apple side up, on a wire rack. If desired, sprinkle with confectioners' sugar.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt or tube pan. In a medium bowl, combine the diced apples, 1 tablespoon white sugar and 1 teaspoon cinnamon; set aside. Sift together the flour, baking powder and salt; set aside.
  • In a large bowl, combine 2 cups white sugar, oil, orange juice, vanilla and eggs. Beat at high speed until smooth. Stir in flour mixture. Fold in chopped walnuts.

1 lemon, juiced
1 ⅛ cups unsalted butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a deep baking pan with butter or line with parchment paper.

  • Combine butter, sugar, and vanilla sugar in a large bowl and beat using an electric blender until pale and fluffy. Add eggs, one at a time, and mix well after each addition. 5 cooking apples, peeled, cored and thinly sliced
5 tablespoons sugar
2 tablespoons cinnamon
3 cups unsifted all-purpose flour

1/3 cup orange juice
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees.

1 tablespoon double-acting baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter or margarine, softened
1 3/4 cups sugar
3 large eggs, separated
1/2 cup milk
8 medium (about 3 pounds) cooking apples, such as Golden Delicious, Granny Smith, Gravenstein, Greening, Jonathan, Macoun, Pippin, Starr, Winesap, Yellow Transparent, or any combination, cored and diced (peeling is optional)
Glaze (optional):
1 cup confectioners' sugar, or 1/2 cup confectioners' sugar and 1/2 cup light brown sugar
1/2 teaspoon vanilla or almond extract
1 to 2 tablespoons milk or water

Steps:

  • 1. Preheat the oven to 350°F. Grease a kugelhopf or 10-inch Bundt pan.
  • 2. Sift together the flour, baking powder, and salt. Beat the butter until smooth, about 1 minute. Gradually add the sugar and beat until light and fluffy, about 4 minutes. Beat in the egg yolks, one at a time. Stir in the flour mixture and milk.
  • 3. Beat the egg whites on low speed until foamy, about 30 seconds. Increase the speed to high and beat until stiff but not dry. Fold one-fourth of the whites into the batter, then gently fold in the remaining whites.
  • 4. Pour half of the batter into the prepared pan. Spread with half of the apples. Top with the remaining batter, then the remaining apples.
  • 5. Bake until golden brown, 50 to 60 minutes. Let cool in the pan for 20 minutes, then transfer to a rack and let cool completely.
  • 6. To make the glaze if using: Combine all the glaze ingredients, stirring until smooth and of pouring consistency. Drizzle over the cake and let stand until set.

3 cups flour
3 teaspoons baking powder
1 teaspoon salt
4 eggs
2 cups sugar
1 cup vegetable oil (you can replace half or all with apple sauce)
1/2 cup orange juice
2 1/2 teaspoons vanilla
4 cups sliced apples (peeled)
2 teaspoons cinnamon
3 tablespoons confectioners' sugar (icing sugar)

Steps:

  • Combine dry ingredients except mix the sugar with wet then add dry to wet/sugar in thirds.
  • Add cinnamon and confectioners' sugar to apples. Then add 1/2 the batter to the sprayed bundt/ tube pan then half the apple mix then add the rest of batter then apples.
  • Bake in preheated 350°F oven for 70 minutes.

German Bundt Cake image

A favourite that I have made time and time again over the past 20 years. This is a Margaret Fulton recipe. A rich cake with a golden crust of butter-fried almonds.

200 g butter
1/3 cup whole blanched almond
3/4 cup icing sugar, sifted
3/4 cup caster sugar
3 eggs, separated
3/4 teaspoon vanilla essence
1/4 teaspoon almond essence
2 1/4 cups flour
1 1/2 teaspoons baking powder
1 pinch salt
3/4 cup milk
icing sugar, to finish

Steps:

  • Set the oven at moderate (180C/350F).
  • Grease a 6-7 cup fluted ring cake mould with 30g of butter, putting large dabs in the creases of the mould and embedding an almond in each dab. Put in the refrigerator to set while preparing the mixture.
  • Cream the remaining butter well. Gradually beat in the sugars, beating well between each addition. Add the egg yolks one at a time, and beat until smooth. Stir in the vanilla and almond essences. Sift the flour, baking powder and salt three times and fold into the creamed mixture alternately with the milk.
  • Whisk the egg whites until stiff, stir a spoonful into the cake mixture and, when incorporated, fold in the remaining whites carefully and lightly using a large metal spoon.
  • Pour into the prepared tin and bake for about 1 1/2 hours, or until the cake is cooked when tested with a skewer. Allow to stand for about 15 miutes before turning out.
  • Allow the cake to cool completely before dusting with sifted icing sugar. Cut this rich cake into thin slices to serve.

1/2 cup butter, softened
2/3 cup sugar
2 eggs
4 teaspoons milk
1/8 teaspoon lemon extract
2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/8 teaspoon salt
2 medium tart apples, peeled and thinly sliced
1 cup confectioners' sugar
2 tablespoons butter, softened
2 to 3 teaspoons milk

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs; mix well. Beat in milk and extract. Combine the flour, baking powder and salt; beat into creamed mixture just until moistened. With lightly floured hands, pat into a greased 9-in. springform pan. Arrange apples over the top., Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 10 minutes before removing from pan. Combine the confectioners' sugar, butter and milk; drizzle over the top.
