LIME SPRITZ COOKIES

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 sticks unsalted butter, at room temperature
1 1/4 cups confectioners' sugar
2 teaspoons finely grated lime zest
1 large egg
1 teaspoon pure vanilla extract
4 drops green gel food coloring

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Sift together the flour, baking powder and salt into a medium bowl. Beat the butter, confectioners' sugar and lime zest in a large bowl with a mixer on medium-high speed until fluffy, about 2 minutes. Add the egg and vanilla and beat until combined. Reduce the mixer speed to medium low; add the flour mixture and beat until just combined. Transfer two-thirds of the dough to a separate bowl and set aside. Add the food coloring to the remaining one-third of the dough and beat with the mixer until combined.
  • Assemble a cookie press according to the manufacturer's instructions. Working in batches, fill the press with about 3 tablespoons plain dough, then 3 tablespoons green dough, then 3 more tablespoons plain dough. Press cookies about 1 inch apart onto 2 ungreased baking sheets.
  • Bake, switching the pans halfway through, until the cookies are set but not browned, 10 to 12 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

1 teaspoon vanilla extract
4 cups all-purpose flour

Red and green colored sugar, optional

Steps:

  • In a large bowl, cream the butter, sugar and gelatin until light and fluffy. Beat in egg and vanilla. Combine flour and baking powder; gradually add to the creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough into desired shapes 2 in. apart onto ungreased baking sheets. Sprinkle with colored sugar if desired. , Bake at 350° for 8-10 minutes or until set. Remove to wire racks to cool.

This recipe came from a magazine page in Good Housekeeping, and I remember making them in the early '80's with my mom, so this recipe is at least that old. I've made this with several different Jell-o flavors and they've all been good. If you have trouble handling the dough in the cookie press chill it a bit.

4 cups sifted all-purpose flour
1 teaspoon double-acting baking powder
1 1/2 cups butter
1 cup sugar
1 (3 ounce) package jell-o gelatin, any flavor
1 egg
1 teaspoon vanilla
additional Jello gelatin, to sprinkle with (or other cookie decorations)

Steps:

  • Sift flour with baking powder.
  • Cream butter.
  • Gradually add sugar and gelatin, cream well after each addition.
  • Add egg and vanilla; beat well.
  • Gradually add flour mixture, mixing after each addition until smooth.
  • Use cookie press to process dough, droping onto ungreased baking sheets.
  • Sprinkle with Jell-o or decorate as desired.
  • Bake at 400 degrees, about 13 or 14 minutes, or until golden brown at edges.
  • This can vary depending on your oven, in mine these will be done in about 6-8 minutes- to be sure keep an eye on the first sheet to go in so they don't burn.
  • Store in loosely covered container.
  • Makes about 5 dozen cookies.

Colored coarse sugar, optional

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter, shortening, sugar and gelatin until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 2 in. apart onto ungreased baking sheets. If desired, sprinkle with coarse sugar., Bake until set (do not brown), 6-8 minutes. Remove to wire racks to cool completely.

2 ½ cups all-purpose flour
½ teaspoon salt
1 cup butter, softened
1 ¼ cups confectioners' sugar
2 egg yolks
½ teaspoon almond extract
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Sift together the flour and salt; set aside.
  • In a medium bowl, cream together the butter and sugar. Stir in the egg yolks, almond extract and vanilla extract. Gradually blend in the sifted ingredients. Fill a cookie press with dough and shoot cookies about 1 1/2 inches apart onto an ungreased cookie sheet. If you like, decorate with sugar or sprinkles at this time.

Steps:

  • Using cookie spritzer, make cookie shapes. Sprinkle with colored sugar or sprinkles before baking.
  • Bake 400 degrees for 6 - 8 minutes.
