This recipe comes from, "The Black Dog" restaurant on Martha's Vineyard. It's my favorite beef fajita recipe, by far! Grilling the beef really makes a difference in flavor and the blend of spices are perfect. However, if you don't want to grill, the beef can be done using a cast iron pan on the stovetop. The beef will have a more intense flavor if you let it sit in the refrigerator for a few hours after applying the dry rub. You can also make the salsa, slice the onions and peppers ahead of time. Whether you're entertaining or just have a hankering for a really good beef fajita, this recipe rocks.

4 ripe tomatoes, seeded and chopped
1 red onion, chopped
1 jalapeno pepper, seeded and minced
2 tablespoons lemon juice, freshly squeezed
1 bunch fresh cilantro, chopped
salt and pepper
2 tablespoons paprika
2 teaspoons cumin
2 teaspoons cayenne
2 tablespoons chili powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon powdered thyme
1 tablespoon ground marjoram
2 lbs skirt steaks or 2 lbs sirloin tip steaks
2 medium onions
2 -3 bell peppers, I like to use red and green combo
2 tablespoons olive oil
12 (10 inch) flour tortillas
1 cup sour cream

Steps:

  • Mix all of the southwestern spice rub ingredients, coat the beef with the rub - rubbing it in well on both sides - and set aside. (Or refrigerate for a few hours.).
  • Peel and slice the onions.
  • Remove the seeds from the peppers and slice.
  • Cook the pepper and onion slices in olive oil (cast iron pan recommended) until they are slightly wilted.
  • Grill the beef over medium flame (or cast iron pan on the stove top), flipping midway through cooking time, to your desired doneness. It typically takes about 7-10 minute for medium rare.grills/cooking times vary.
  • Warm up the tortillas by heating on the grill or in a dry pan on the stove.
  • After letting the beef rest for about 5 minutes, slice it across the grain in about half-inch slices.
  • Serve with the warm tortillas, the pepper and onions, the salsa, and the sour cream on the side.

For the Steak Fajita Marinade:
1/2 cup (120ml) soy sauce
1/2 cup (120ml) lime juice, from 6 to 8 limes
1/2 cup (120ml) canola oil
1/4 cup (55g) packed brown sugar
1 tablespoon chili powder (see note)
3 medium cloves garlic, finely minced (about 1 tablespoon)
2 teaspoons ground cumin seed
2 teaspoons freshly ground black pepper
2 pounds (900g) trimmed skirt steak (about 1 whole steak; see note), cut crosswise into 5- to 6-inch pieces
For the Fajitas:
1 large red bell pepper, stemmed, seeded, and cut into 1/2-inch-wide strips
1 large yellow bell pepper, stemmed, seeded, and cut into 1/2-inch-wide strips
1 large green bell pepper, stemmed, seeded, and cut into 1/2-inch-wide strips
1 white or yellow onion, cut into 1/2-inch slices
12 to 16 fresh flour or corn tortillas, hot
1 recipe guacamole , for serving, if desired
1 recipe pico de gallo , for serving, if desired
Sour cream, shredded cheese, and salsa, for serving, if desired

Steps:

  • For the Fajita Marinade: Combine soy sauce, lime juice, canola oil, brown sugar, chili powder, garlic, cumin, and black pepper in a medium bowl and whisk to combine. Transfer 1/2 cup (120ml) marinade to a large bowl and set aside.
  • For the Steak: Place steaks in a gallon-sized zipper-lock bag and add remaining marinade. Seal bag, squeezing out as much air as possible. Massage bag until meat is fully coated in marinade. Lay flat in the refrigerator, turning every couple of hours, for at least 3 hours and up to 10.
  • For the Fajitas: While steak marinates, toss peppers and onion in bowl with reserved 1/2 cup marinade. Refrigerate until ready to use.
  • When ready to cook, remove steaks from marinade, wipe off excess, and transfer to a large plate. Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate .
  • Place a large cast iron skillet over cooler side of grill. Transfer steaks to hot side of grill. Cover and cook for 1 minute. Flip steaks, cover, and cook for another minute. Continue cooking in this manner, flipping and covering, until steaks are well charred and an instant-read thermometer inserted into their center registers 115 to 120°F (46 to 49°C) for medium-rare or 125 to 130°F (52 to 54°C) for medium. Transfer steaks to a large plate, tent with foil, and allow to rest for 10 to 15 minutes.
  • Meanwhile, transfer cast iron skillet to hot side of grill and allow to preheat for 2 minutes. Add pepper and onion mix and cook, stirring occasionally, until vegetables are softened and beginning to char in spots, about 10 minutes. When vegetables are cooked, transfer steaks to a cutting board and pour any accumulated juices from plate into skillet with vegetables. Toss to coat.
  • Transfer vegetables to a warm serving platter. Thinly slice meat against the grain and transfer to platter with vegetables. Serve immediately with hot tortillas, guacamole, pico de gallo, and other condiments as desired.

2 lbs flank steak
2 large limes
1/4 cup + 2 tbsp olive oil
3 large garlic cloves, (grated)
1 tbsp chili powder
2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper (optional)
2 tsp salt, (divided )
1/2 tsp paprika
2 large bell peppers, (sliced)
1 medium onion, (sliced)
8 small flour tortillas
Sour Cream
Guacamole
Avocado Slices
Tomatoes (diced )
Extra Sour Cream (for serving)

Steps:

  • Add flank steak to a large plastic ziplock bag. Add lime juice, 1/4 cup olive oil, chili powder, cumin, garlic powder, and cayenne to the bag as well. Zip up. Massage marinade into meat. Refrigerate for at least 2 hours and up to 8.
  • Preheat the grill to a high heat - about 450 degrees. Place a grill pan or sheet on one side of the grill. Once the steak has marinated, remove and sprinkle with 1 1/2 teaspoons of salt on both sides. Add the peppers and onions to a medium bowl. Toss with remaining 2 tablespoons olive oil. Season with remaining 1/2 teaspoon salt and a little bit of pepper.
  • Add the pepper to the grill. Cook for 3-4 minutes and then add steak on the uncovered side of the grill. Use tongs to toss the peppers. Close the grill. Let the steak cook for about 4 minutes. Use tongs to flip the steak over. Toss the peppers again. If they are charred enough, remove from the grill.
  • Cook the steak another 3-4 minutes or until it reaches your desired doneness. (For skirt steak you really want medium-rare to medium which is an internal temperature of 140-145 degrees. It will increase 5 degrees as it rests. Remove the steak and peppers from the grill. Let the steak rest for 10 minutes.
  • Use a sharp knife to cut the steak against the grain into thin slices. Serve in warm tortillas with your favorite toppings.

2 tablespoons plus 1/4 teaspoon chili-lime seasoning, such as Good & Gather™ Chili Lime Seasoning Blend
2 cloves garlic, grated
2 limes
Kosher salt and freshly ground black pepper
Two 8-ounce New York strip steaks, about 1 inch thick, such as Good & Gather™ USDA Choice New York Strip Steak
3 bell peppers (about 1 1/2 pounds), stemmed, seeded and sliced 1/2 inch thick, such as Good & Gather™ Tri-Colored Bell Peppers
1 medium onion (about 8 ounces), halved and sliced 1/2 inch thick
2 tablespoons unsalted butter, at room temperature
Eight 6-inch corn tortillas

Steps:

  • Place a 12-inch cast-iron skillet on one side of a gas grill, preheat the grill to high and lightly oil the grates. Alternatively, lightly oil a large grill pan and preheat over high heat and preheat a 12-inch cast-iron skillet over high heat.
  • Mix the oil, 2 tablespoons chili-lime seasoning, garlic, the juice of 1 lime, 1 tablespoon salt and a generous amount of pepper in a large bowl. Place the steaks on a plate and spoon 3 tablespoons of the mixture on top, flipping so that both sides are nicely coated, spooning any marinade on the plate back onto the meat. Refrigerate covered for 15 minutes and up to 2 hours if time allows.
  • Put the peppers and onions in the large bowl with the remaining marinade and toss to coat evenly.
  • Place the steaks on the open side of the grill or on the grill pan and put the vegetables and any oil left in the bowl in the cast-iron skillet.
  • Cook the steaks, flipping once halfway through, until cooked through, about 8 minutes total for medium-rare. Transfer to a cutting board and let rest for 2 minutes. Cook the vegetables, stirring occasionally, until softened and charred in some spots, about 10 minutes.
  • Meanwhile, mix the butter and remaining 1/4 teaspoon chili-lime seasoning in a small bowl. Wrap the tortillas loosely in foil and grill until warm, about 1 minute per side.
  • Thinly slice the steaks and add to the skillet with the vegetables. Top with the butter and quickly stir until melted and incorporated, about 1 minute.
