Kale is supposed to have cancer-fighting properties. I love it, but my husband hates it. Cooking it this way is the only way he'll eat it.

1 bunch kale
1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Soak kale leaves in a large bowl of water until dirt and sand begin to fall to the bottom, about 2 minutes. Lift kale from the bowl without drying the leaves and immediately remove and discard stems. Chop the kale leaves into 1-inch pieces.
  • Heat olive oil in a large skillet over medium heat; cook and stir garlic until sizzling, about 1 minute. Add kale to the skillet and place a cover over the top.
  • Cook, stirring occasionally with tongs, until kale is bright green and slightly tender, 5 to 7 minutes.

2 tablespoons olive oil
3 cloves garlic, finely chopped
1 bunch kale, stems removed, cut into 1-inch pieces
1/2 cup slivered almonds
1 lemon, halved
1/4 cup shaved pecorino Romano

Steps:

  • Heat the olive oil in a large skillet over medium heat until shimmering. Add the garlic and cook, stirring constantly, until translucent and soft. Add the kale and stir to coat with garlic and oil. Cook until tender, about 5 minutes.
  • Meanwhile, heat a grill pan over medium-high heat. Place the lemon halves cut-side down in the pan and cook without moving until grill marks are visible, about 2 minutes.
  • Toast the almonds in a small skillet over medium-high heat until fragrant and slightly golden brown, about 3 minutes.
  • Transfer the kale to a serving bowl and squeeze a charred lemon half over the top. Sprinkle with the toasted almonds and pecorino shavings. Serve with the other lemon half on the side. Enjoy!

4 garlic cloves, minced
1 teaspoon olive oil
1/2 cup golden raisins

Steps:

  • In a large saucepan, bring water to a boil. Stir in kale. 3 pounds fresh kale
Kosher salt
1 tablespoon unsalted butter
1 tablespoon minced fresh garlic
3 cups heavy cream
Freshly cracked black pepper
1/2 cup finely grated Parmesan
1/8 teaspoon freshly grated nutmeg

Steps:

  • Prepare the kale by removing the center stems and tearing the leaves into bite-size pieces. Set a large pot of water over high heat and bring to a boil. Season generously with salt. When it returns to a boil add the kale. Stir well so it cooks evenly. When it turns bright green and becomes tender, 10 to 12 minutes, remove and drain in a colander.
  • To a high-sided saute pan over medium heat, add the butter and garlic. Stir in the cream with some salt and pepper. Set over high heat and bring to a simmer. Cook until the cream reduces by half, 6 to 7 minutes. Once reduced, add the kale, Parmesan, nutmeg and more salt and pepper and bring back to a simmer so the kale is heated through and the Parmesan has melted. Stir to coat everything evenly. Taste and season again if needed.

1 bunch raw kale (washed, de-stemmed and dried)
2 Tablespoons tahini
2 Tablespoons apple cider vinegar (or water)
2 Tablespoons lemon juice
2 Tablespoons Bragg's liquid aminos (tamari or soy sauce will work)
4 Tablespoons nutritional yeast
2 teaspoons 1-2 cloves minced garlic

Steps:

  • Break or cut kale into bite size pieces and place in a large bowl.
  • Puree all ingredients except kale in a blender or food processor to blend the dressing.
  • Pour dressing over kale and massage into the kale with your hands until all pieces of kale are coated.
  • Let the salad sit in the fridge for an hour or so to marinate. You can skip this step if you need to eat right away, but allowing some time to marinate will wilt the kale a bit and make it a little more palatable - particularly for those who are skeptical of eating raw kale.

4 cloves garlic, grated
2 bunches lacinato kale, ribbed, roughly chopped
1/4 tsp. freshly ground black pepper
1 tsp. crushed red pepper
4 cups water
1 lb. medium pasta shells
10 oz. VELVEETA, cut into 1/2" cubes

Steps:

  • In a 7.25-quart Dutch oven over medium heat, heat olive oil. Once glistening, add grated garlic, allow to cook until fragrant, about 30 seconds. Add kale and stir to coat in olive oil and garlic.
  • Cook for 10 to 12 min. until kale begins to wilt. Season with black pepper and stir in crushed red pepper. Add water and bring to a boil.
  • Once boiling, add shells. Cook, stirring occasionally, 4 min. shy of package directions.
  • Add VELVEETA and stir until pasta and kale become creamy and cheesy, about 5 min. Remove from heat and serve.
