1 pound green beans, stem ends trimmed
4 teaspoons olive oil
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a large pot of boiling salted water, cook green beans until crisp-tender, about 5 minutes. Drain.
  • In same pot, heat 2 teaspoons oil over medium-low. Add garlic; cook until starting to soften, about 2 minutes. Return beans to pot. Add lemon zest and juice, remaining 2 teaspoons oil, and parsley; season with salt and pepper. Toss to coat. Serve immediately.

I make this often with my summer's crop of green and yellow beans ---for this recipe I really don't bother to measure so really the exact amounts do not matter, however I have posted the amounts that I I think is pretty much close to what I use --- I usually have my beans already steamed and stored in the refrigerator until ready to use for this recipe, do not make this using uncooked raw beans they must be cooked firstly, prep time does not include pre-steaming the beans or peeling the garlic cloves.

2 tablespoons butter
1 tablespoon olive oil
1/4-1/2 teaspoon crushed red pepper flakes (optional or to taste)
1 head garlic (peeled, then thinly slice all the cloves)
1 lb fresh steamed green beans (pat steamed beans dry using a paper towel)
1/4 teaspoon seasoning salt (or to taste) or 1/4 teaspoon white salt (or to taste)
fresh ground black pepper (to taste)
1/3 cup freshly grated parmesan cheese (or to taste)

Steps:

  • In a skillet melted the butter with oil over medium heat.
  • Add in the sliced garlic and crushed chili flakes; cook stirring for about 4 minutes or just until the garlic is just lightly browned (do not burn the garlic).
  • Add in steamed beans and toss until heated through.
  • Season with salt and freshly ground black pepper.
  • Remove to a bowl and sprinkle with Parmesan cheese.

  • In a microwave safe bowl, add green beans and 1 tablespoon water. Cover with plastic wrap and cook on high setting for 6 to 8 minutes or until crisp-tender.
  • While green beans are cooking; in a large frying pan, heat the butter, oil, sliced garlic, and chopped bacon gently over medium heat. NOTE: Do not let garlic burn - a light golden brown is as dark as garlic should get.
  • Drain any liquid from the green beans and add to frying pan. Toss to coat beans and season with salt and pepper.

4 strips bacon, chopped
1 cup red onions, slivered
1 1/4 cups half-and-half
1/4 cup cognac
1 (1.6-ounce) packet garlic herb sauce mix (recommended: Knorr)
Salt and pepper

Steps:

  • Combine frozen green beans and peas in a microwave-safe bowl. Add 1 tablespoon water, cover and heat on high or 8 to 10 minutes, stirring once.
  • In a large saucepan, brown chopped bacon. Remove all but 1 tablespoon of bacon fat from the pan and add onion slivers, saute until softened. Add half-and-half and cognac to pan and whisk in garlic herb sauce mix. Bring to a boil, stirring constantly. Reduce heat and simmer until thickened.
  • Drain green beans and peas. Add to pan with the sauce and stir. Season with salt and pepper, to taste.

150ml hot vegetable stock
200g frozen peas
600g mixed green vegetables - we used long-stem broccoli, asparagus and mangetout

  • Heat the oil in a large frying pan and bring a large saucepan of salted water to the boil. Gently fry the shallots and garlic for 5-8 mins, tip in the stock and peas, then bubble for a few mins until the peas are cooked.
  • Meanwhile, boil the rest of the veg, cooking the broccoli and asparagus for a couple of mins first, then throwing in the mangetout for the final min. Drain well and tip into the pan with the peas. Season, add the butter and mix well.

  • Heat the olive oil in a skillet on medium heat. Add green beans making sure that olive oil is distributed evenly, season with salt depending on your taste. Saute for about 10-15 minutes until softened but still crispy. Add minced garlic coating all green beans evenly for about 2-3 minutes, not too long as you don't want the garlic to brown at all--this can leave a bitter flavor. 1 garlic clove, large and crushed
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon lemon juice

  • "Snap" and remove the "strings" from the beans.
  • Combine the beans with enough water to cover in a saucepan.

6 ounces frozen green peas
2 tablespoons olive oil (canola oil)
2 teaspoons cumin seeds
5 dried whole red chilies
2 tablespoons washed white lentils (urad dal)
2 teaspoons coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon salt
1 tablespoon lemon juice
1 pinch asafoetida powder (hing)

Steps:

  • Heat oil in a saucepan on medium heat. Test the heat by adding one cumin seed to the oil. if the cumin seeds crackles then oil is ready.
  • Add cumin, asafoetida, red chillis and white lentil.
  • Stir fry for 30 seconds. Stop if white lentil changes color.
  • Add green beans and peas and mix it well. Cover the pan turn the heat down a bit, between medium and low. (Before adding beans and peas make sure you wash them with cold water).
  • Let it cook for 5 to 6 minutes or until the beans and peas are tender. Make sure you stir in between while it is being cooked.
  • Remove the cover and add turmeric, red chilli powder, coriander powder and salt.
  • Let the beans cook without cover and make sure you keep mixing for all the spices to blend inches
  • Keep stirring for the next 2 to 3 min make sure it does not stick to the pan.
  • Turn off the heat and add lemon juice.
  • Serve with roti's.
