- In a large pot of boiling salted water, cook green beans until crisp-tender, about 5 minutes. Drain.
- In same pot, heat 2 teaspoons oil over medium-low. Add garlic; cook until starting to soften, about 2 minutes. Return beans to pot. Add lemon zest and juice, remaining 2 teaspoons oil, and parsley; season with salt and pepper. Toss to coat. Serve immediately.

GARLICKY GREEN BEANS
I make this often with my summer's crop of green and yellow beans ---for this recipe I really don't bother to measure so really the exact amounts do not matter, however I have posted the amounts that I I think is pretty much close to what I use --- I usually have my beans already steamed and stored in the refrigerator until ready to use for this recipe, do not make this using uncooked raw beans they must be cooked firstly, prep time does not include pre-steaming the beans or peeling the garlic cloves.

Steps:
- In a skillet melted the butter with oil over medium heat.
- Add in the sliced garlic and crushed chili flakes; cook stirring for about 4 minutes or just until the garlic is just lightly browned (do not burn the garlic).
- Add in steamed beans and toss until heated through.
- Season with salt and freshly ground black pepper.
- Remove to a bowl and sprinkle with Parmesan cheese.
- Delicious!
GARLICKY GREEN BEANS
Steps:
- In a microwave safe bowl, add green beans and 1 tablespoon water. Cover with plastic wrap and cook on high setting for 6 to 8 minutes or until crisp-tender.
- While green beans are cooking; in a large frying pan, heat the butter, oil, sliced garlic, and chopped bacon gently over medium heat. NOTE: Do not let garlic burn - a light golden brown is as dark as garlic should get.
- Drain any liquid from the green beans and add to frying pan. Toss to coat beans and season with salt and pepper.
GARLIC AND HERBED EARLY PEAS AND FRENCH BEANS
Steps:
- Combine frozen green beans and peas in a microwave-safe bowl. Add 1 tablespoon water, cover and heat on high or 8 to 10 minutes, stirring once.
- In a large saucepan, brown chopped bacon. Remove all but 1 tablespoon of bacon fat from the pan and add onion slivers, saute until softened. Add half-and-half and cognac to pan and whisk in garlic herb sauce mix. Bring to a boil, stirring constantly. Reduce heat and simmer until thickened.
- Drain green beans and peas. Add to pan with the sauce and stir. Season with salt and pepper, to taste.
PEAS WITH GARLIC OIL

When our beautiful son was young, he would eat peas, broccoli, etc. When he turned 13 years old he became convinced that "green" anything was just too "gross." This recipe is one of the few he will eat that is not fried to a crisp. My DH and I love it too! Season to your taste...i.e. salt and pepper.

- "Snap" and remove the "strings" from the beans.
- Combine the beans with enough water to cover in a saucepan.
- Bring to a boil; reduce heat, cover and simmer for 6 to 8 minutes or until "tender-crisp.".
- Drain and plunge the beans into a large bowl of ice water to immediately stop the cooking; drain.

INDIAN GREEN BEANS AND PEAS
I love this recipe. This is a nice homemade traditional indian recipe. Served with roti's on side or can have it as a snack as a sandwich filling. The white lentils makes it crunchy and really yummy. White lentil can be replaced with channa dal.

Steps:
- Heat oil in a saucepan on medium heat. Test the heat by adding one cumin seed to the oil. if the cumin seeds crackles then oil is ready.
- Add cumin, asafoetida, red chillis and white lentil.
- Stir fry for 30 seconds. Stop if white lentil changes color.
- Add green beans and peas and mix it well. Cover the pan turn the heat down a bit, between medium and low. (Before adding beans and peas make sure you wash them with cold water).
- Let it cook for 5 to 6 minutes or until the beans and peas are tender. Make sure you stir in between while it is being cooked.
- Remove the cover and add turmeric, red chilli powder, coriander powder and salt.
- Let the beans cook without cover and make sure you keep mixing for all the spices to blend inches
- Keep stirring for the next 2 to 3 min make sure it does not stick to the pan.
- Turn off the heat and add lemon juice.
- Serve with roti's.
