Steps:
- Prepare pasta according to package directions; drain.
- Heat oil in a large skillet over medium-high heat.
- Add garlic and cook for one minute.
- Add tomatoes, basil, salt and pepper.
- Cook for 3 minutes.
- Add hot pasta to skillet; toss well.
- Add chicken broth and stir.
- Toss with parmesan cheese and serve immediately.
FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

- Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
- Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
- Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

- Bring a large pot of salted water to a boil.
- Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
- Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

GARLICKY ANGEL HAIR WITH GRAPE TOMATOES
Steps:
- Bring a large pot of salted water to a boil. Adjust an oven rack to the upper middle position and heat the broiler to high. Line a large rimmed baking sheet with foil and rub it with oil. Toss the tomatoes with 1 tsp oil and about 1/4 tsp salt. Spread them on the baking sheet. Broil, saking the pan occasionally, until they're cracked, very soft, and shrunken, about 20 mins; they'll be blackened in places. Meaninwhile, chop the garlic and put it in a small saucpapn, along with 3 Tbs oil and the chile flakes. Bring to a simmer over medium heat and cook until the garlis just begins to turn golden, about 1 min. Remove from te heat and let the oil steep. Stack the basil leaves on top of one another and roll them into cigar shape. Slice across the cigar to create thin, but not ultra thin, ribbon ( about 1/4 cup). When the tomatoes are done, cook the pasta until tender, 3 to 4 minutes. Drain the pasta and return it to the pot. Immediately toss it with garlic oil (and garlic) and 1/2 to 1 tsp of salt. Grind lostd of fresh pepper over the pasta, add the broiled tomatoes and the basil, and tossto combine well. Add half the parmigiano, toss again, and immediately turn out into warm bowls. Top with the remaining cheese.
ROASTED CHERRY TOMATOES WITH ANGEL HAIR
This is something I threw together one day when I was faced with an abundance of fresh cherry tomatoes and basil from my garden. Delish!

- Preheat oven to 375 degrees F (190 degrees C).
- Combine tomatoes, olive oil, garlic, salt, and pepper in a bowl until well mixed; spread on a shallow-sided baking sheet.
- Bake in the preheated oven until tomatoes are soft and wrinkled, 25 to 30 minutes.
- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally until tender yet firm to the bite, 4 to 5 minutes. Drain; reserving a small amount of cooking water.
- Spoon tomatoes with their juices into a small saucepan; add basil and red pepper flakes. Mix in reserved cooking water to thin tomato mixture to desired consistency. Cook and stir over low heat until warmed, about 5 minutes; stir in pasta. Top with Parmesan cheese before serving.

Served with a fresh salad, I think this is a perfect summer weekday meal. It comes together very fast if you prepare all the ingredients beforehand. (note: typo in wine amount has been corrected - 1/4 cup, not 1 1/4 cup - yowza, that'd be a lot of wine!)

- Cook the pasta in several quarts of salted water (keep an eye on it - angel hair cooks a lot faster than other pasta and you don't want it mushy). Place it in a large serving bowl, add the basil and Parmesan cheese and toss to mix.
- While the pasta is cooking, heat the olive oil in a large skillet and saute the garlic for a minute or so until it *just* begins to change color. Add the wine and cook until it has been reduced by about half (2-4 minutes). Stir in the lemon juice and tomatoes and remove the sauce from heat until the pasta is ready.
- Pour lemon-tomato sauce over pasta mixture, add salt and pepper to taste and toss to mix. Serve with extra Parmesan on the side, if desired.
