Garlic Basil Chicken - you won't believe that this easy real food recipe only requires 7 ingredients like basil, garlic, olive oil, tomatoes, and butter.

1 lb. boneless skinless chicken breasts
salt and pepper
1/4 cup olive oil
5-6 roma tomatoes, diced
3 cloves garlic, minced
one handful fresh basil, loosely packed, cut into ribbons
1/4 cup LAND O LAKES® European Style Super Premium Salted Butter
8 ounces pasta, like spaghetti, linguine, or bucatini

Steps:

  • Cover the chicken with plastic wrap and pound each piece to an even thickness, about one inch or so in the thickest parts (this just helps it cook faster and more evenly). Remove the plastic and sprinkle each piece of chicken generously with sea salt and freshly ground pepper.
  • Prep the tomatoes, garlic, and basil and set aside. Make the pasta according to package directions.
  • Heat the olive oil in a large heavy skillet until a drop of water sizzles across the top. Add the chicken and pan-fry for several minutes on each side - the goal here is to get the chicken cooked AND get a nice browning on the outside. When the chicken is done, set aside.
  • Give the oil a few minutes to cool, add the tomatoes, and return to heat (if you add the tomatoes to the hot oil it will be a splatter-fest). Simmer to cook the tomatoes down into a chunky-sauce-like-mixture. Add the garlic and butter and stir to combine until the butter is melted. Add the chicken back in to soak in the sauce for a few minutes.
  • Just before serving, stir in the basil. Top servings of pasta with the chicken and the sauce.

Browned butter is the quick cook's best-kept secret: Less than two minutes in the pan caramelizes the milk solids in butter for a fragrant, nutty note in any dish. Try not to chop the tomatoes too finely; you want them somewhat chunky so they'll break down in the sauce faster, but you also want them to retain some shape. If your chicken breasts are larger than 6 ounces (some can be as big as 12 ounces), halve the two breasts horizontally instead of pounding them thin. Serve over a bed of whole-wheat couscous, whole-grain polenta, or brown rice.

4 (6-oz.) skinless, boneless chicken breasts
3/4 teaspoon kosher salt, divided
3/4 teaspoon black pepper, divided
2 tablespoons olive oil, divided
2 tablespoons unsalted butter
6 garlic cloves, sliced
2 cups halved grape tomatoes
3 tablespoons fresh flat-leaf parsley leaves

Steps:

  • Place chicken breasts on a cutting board; pound to a 1/2-inch-thickness using a meat mallet or small, heavy skillet (all four breasts should fit in one large skillet). Sprinkle chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Heat 1 tablespoon oil in a large skillet over medium-high. Add chicken to pan; cook 4 to 5 minutes on each side or until done. Remove from pan; keep warm. Do not wipe pan clean.
  • Reduce heat to medium. Add remaining 1 tablespoon oil, remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, butter, and garlic to drippings in pan; cook 2 minutes or until butter just begins to brown, stirring frequently. Stir in tomatoes; cook 2 minutes or until tomatoes are wilted. Spoon tomato mixture over chicken; sprinkle with parsley.

1 cup of tomato sauce (homemade or store bought)
4 cloves of garlic (peeled and finely chopped)
8 ounces 2 sticks unsalted butter (room temperature)
4 Boneless (Skinless, Chicken Breasts)
basil (oregano or cilantro)
pasta (rice or quinoa)

Steps:

  • Preheat your oven to 400 degrees.
  • In a saucepan on the stove, over low heat, melt the butter and saute the garlic for 1-2 minutes. Add the tomato sauce. Heat to boiling, then remove from heat.Stir to combine everything as much as possible.
  • Rinse chicken and then pat dry with towel. Place chicken in a square glass baking dish. Cover with the sauce and bake in oven at 400 degrees for 45 to 50 minutes.
  • While chicken is cooking, cook rice, pasta or quinoa and maybe grill up some veggies for a side dish.
  • When chicken is done serve chicken and sauce over pasta, rice or quinoa.
  • We topped ours with capers and some fresh purple basil and cilantro from our garden.

  • Preheat the oven to 180°C (350°F).

A lovely combination of spices and the chicken is beautifully tender and moist. This was a recipe from a supermaket promotion, which I have slightly adapted to my own tastes. Very rich, so we do not have it too often! Served over rice and with a fresh salad to counteract the richness. A few have commented that they were not so fond of the cinnamon in this dish, and so another spice combination that is good is to leave out the cinnamon and ginger and replace with 1 teaspoon each of nutmeg and cumin.
