1 tablespoon olive oil
1 tablespoon butter
1 pound yukon gold potatoes (sliced about 1/2 inch in thickness)
3 garlic cloves (minced)
1 teaspoon thyme (chopped)
1 teaspoon rosemary (chopped)
1 teaspoon oregano (chopped)
2 lean New York Steak strip steaks
salt and pepper
1/4 cup softened butter
3 garlic cloves (minced)
1 teaspoon thyme (chopped)
1 teaspoon rosemary (chopped)
1 teaspoon oregano (chopped)

Steps:

  • In a large cast iron skillet over medium high heat, add olive oil and butter, potatoes, garlic, thyme, rosemary and oregano. Cook for about 3 minutes, stir and cook and additional 3 minutes or until fork tender. Remove and set on a plate.
  • Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium high. Cook the steaks to desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
  • Right before the steaks are done, make the garlic butter compound. Mix the butter, garlic and fresh chopped herbs. Slather on top of steaks. Add the potatoes back to the pan and heat through and let the butter melt into the steaks.

2 (1 pound) flat iron steaks
¼ cup balsamic vinegar
3 tablespoons extra virgin olive oil
3 tablespoons finely chopped green onions
4 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon chopped fresh thyme
½ teaspoon dry mustard
¼ teaspoon ground black pepper

Steps:

  • Place steaks, balsamic vinegar, olive oil, green onions, garlic, soy sauce, thyme, mustard, and black pepper in an extra large resealable plastic bag, squeeze out excess air, and seal the bag. Knead the bag with your hands to distribute ingredients evenly and completely coat the steaks. Marinate in the refrigerator for 1 hour.
  • Preheat grill for medium-high heat and lightly oil the grate. Remove steaks from refrigerator and let sit at room temperature for 10 minutes.
  • Remove steaks from bag and discard marinade.
  • Cook steaks on the preheated grill until they start to firm and are reddish-pink and juicy in the center, 6 to 7 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove steaks to a plate and let rest for 5 minutes before slicing.

Kale will crowd the pan at first but will wilt quickly. 2 pound flank steak
kosher salt and freshly ground black pepper
2 teaspoons vegetable oil
3 tablespoons butter (divided)
3 cloves garlic (minced)
3/4 cup dry white wine (I used chardonnay)
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees. Mince garlic and parsley and set aside so they are ready to add to sauce.
  • Divide flank steak into 4 equal portions, pat dry and season with kosher salt and freshly ground black pepper.
  • In a large cast iron pan, heat oil over medium high heat until pan is very hot. Add 1 tablespoon of butter to pan and let melt. Sear steaks on both sides, about 3 minutes per side.
  • Place cast iron skillet into oven and cook for another 3 minutes, or until steaks reach 125 degrees on an instant read thermometer.
  • Carefully remove cast iron skillet from oven and return to stovetop, handle will be very hot. Remove steaks from pan and set aside to rest, then prepare pan sauce.
  • Heat skillet over medium low heat, add 1 tablespoon of butter and garlic to skillet and saute for 1-2 minutes.
  • Add white wine and any juices from resting steak to pan and increase heat to medium high. Bring to boil and let reduce about 5 minutes until slightly thickened, scraping up brown bits from pan as it reduces.
  • Remove pan from heat, add final tablespoon of butter and freshly chopped parsley to sauce and season with additional slat and pepper as needed.
  • Slice flank steak portions against the grain, spoon sauce over slices and serve.

Works great with Ribeye or New York strip steak, use what you prefer or what's on sale. If you don't have the thyme try rosemary or just omit it altogether you'll still have a delicious steak.

2 (12 oz) Ribeye or New York strip steaks ((about 1 1/4-inches thick))
1 Tbsp vegetable oil
1 tsp kosher salt
3/4 tsp freshly ground black pepper
2 Tbsp unsalted butter
2 sprigs fresh thyme
2 garlic cloves, (peeled and smashed)

Steps:

  • Let steaks rest at room temperature 30 minutes.
  • Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat (you want to let it get hot oil should be shimmering near smoking, preheating should take about 3 minutes if using a gas stove, longer for electric).
  • Dab both sides of steak dry with paper towels then season both sides with salt and pepper.
  • Place steaks in skillet and using metal tongs press down over top surface of steaks to ensure the entire bottom surface is making direct contact with skillet.
  • Let cook until browned on bottom, about 3 minutes.
  • Flip and continue to cook until steak is about 10 degrees away from desired doneness, approximately 3 minutes longer.
  • Reduce heat to medium-low, add butter, garlic and thyme.
  • Using an oven mitt grasp pan and tilt pan so butter pools to one side, spoon butter over steaks and continue to cook until steaks registers desired doneness (see notes below for temps, keep in mind they'll rise about 5 more degrees of heat), about 1 minute longer.
  • Transfer to plates. Let rest 5 minutes before slicing.
