Steps:
- Place a large skillet over medium heat.
- Add the olive oil.
- Add asparagus and saute for about 3-5 minutes. The total time depends on the size of the asparagus.
- Taste for doneness. Should be crisp-tender.
- Add chopped garlic cloves and continue to cook for about 1-2 minutes.
- Season with salt and pepper. Taste and adjust accordingly.
- Add lemon juice and saute for another 30 seconds or so.
- Remove from heat.
- Add lemon zest and toss to combine.
- If desired, garnish with grated cheese and serve.

- 1. Snap the tough ends from the asparagus by hand (don't use a knife, you won't get all the tough parts). This recipe can be made with spears or can be chopped.
- 2. Bring water to a boil, blanch the asparagus. About 5 minutes for thick stems, 2 for thin stems. Drain.

- Light a grill or preheat a grill pan; oil the grates. Grill the asparagus, turning occasionally, until crisp-tender, about 5 minutes. Transfer the asparagus to a work surface and cut them into 2-inch lengths. In a large skillet, heat the remaining 1 tablespoon of oil. Add the Chinese sausage, sauerkraut, ginger matchsticks and the remaining garlic and cook over moderate heat, stirring occasionally, until lightly browned, about 2 minutes. Add the asparagus and scallion and stir-fry until heated through, about 1 minute. Remove from the heat and stir in half of the sauce. Transfer the asparagus to a platter and drizzle with the remaining sauce. Serve right away.
