GARLIC ROSEMARY TARO FRIES

Garlic Rosemary Taro Fries are the perfect substitute for regular fries made from potatoes. If you are among the many people sensitive to potatoes and other nightshades, these will be a pleasant surprise.

2 T. finely chopped fresh rosemary
2 t. garlic powder
2-3 t. sea salt (See note.)
4 medium-sized taro
3 T. extra virgin olive oil, hereinafter referred to as EVOO

Steps:

  • Pre-heat oven to 425 degrees. With a mortar and pestle (or the back of a sturdy spoon), grind together the rosemary, garlic powder and salt. Grind it good. I mean really mash it up. Then set it aside.
  • Peel taro roots, and cut them into 2" fries. As you cut them, place them in a pot filled halfway with water.
  • Put the pot over high heat. When the water begins to boil, time it for one minute only. (Watch the pot carefully! Taro has a lot of starch in it. The water becomes mighty frothy, and is prone to boiling over if you're not careful.)
  • Drain the taro, then place in a large bowl. Toss in EVOO. Sprinkle herb mixture over all, and toss again until fries are evenly coated.
  • Transfer fries to a parchment-lined roasting sheet. Bake 20-25 minutes, or until golden. Just watch them. The amount of baking time depends on the size of fries, and your preference.
  • When the fries are done, drain them a bit on a paper towel. Serve while still hot.

1 1/2 lbs potatoes (long & white work best)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1/2 teaspoon dried rosemary (crumbled)
2 garlic cloves (crushed)

Steps:

  • Preheat oven to 475°F.
  • Spray 15 1/2 x 10 1/2-inch jelly roll pan or large cookie sheet with nonstick cooking spray.
  • Cut each unpeeled potato lengthwise in half.
  • Holding each potato half flat side down, cut lengthwise into 1/4-inch thick slices.
  • Then cut each lengthwise into 1/2-inch wide strips.
  • Place potato sticks in pan; toss with oil, salt, pepper, rosemary, and garlic.
  • Arrange in single layer on pan and roast for 30 min (or until sticks are tender and golden).
  • Be sure and turn the potatoes once halfway through roasting time.

1/4 cup olive oil
8 garlic cloves, smashed
2 rosemary sprigs, plus additional for garnish
6 small russet potatoes, peeled
1 teaspoon paprika
Kosher salt

Steps:

  • Preheat the oven to 450 degrees F with a large rimmed baking pan inside.
  • Put the olive oil, garlic and rosemary in a small saucepan and warm over medium heat until just starting to bubble. Turn off the heat and let steep 20 minutes. Discard the rosemary sprigs and garlic.
  • While the oil is steeping, cut the potatoes into 1-inch-thick wedges. Put the potatoes in a large bowl and toss with the oil, paprika and 1 teaspoon salt.
  • Carefully remove the baking pan from the oven and spread the potatoes on the hot pan in a single layer. Sprinkle with another pinch of salt and roast until the undersides are golden brown, about 20 minutes. Flip the potatoes and continue to cook until golden brown all over, 15 to 20 minutes more.
  • Serve garnished with a rosemary sprig.

My dad's recipe. They make a great side dish that can be served with just about anything - my family loves them with bbqed steak and grilled veggie skewers, or fried perch and mushy peas. I love them because they're vegan and take no time to make!

4 potatoes (I like russet or Yukon gold)
2 tablespoons oil
1 tablespoon dried rosemary
salt and pepper, to taste

Steps:

  • Preheat oven to 425.
  • Scrub the potatoes. Peel, if you prefer skinless fries.
  • Slice potatoes lengthwise into strips. Place in large mixing bowl.
  • Pour oil over potatoes. Sprinkle rosemary, salt, and pepper over potatoes and toss to coat.
  • Line a baking sheet with tin foil and coat with non-stick cooking spray.
  • Arrange potatoes in single layer on sheet and bake for 10-12 minutes. Turn potatoes, and continue baking for another 10-12 minutes.

1 tablespoon butter, melted
4 medium yams
1/2 teaspoon coarse salt
3 teaspoons dried rosemary (chop the rosemary into smaller pieces if children will shy away from eating the rosemary)

Steps:

  • Preheat oven to 410 degrees and line a few baking sheets with foil for easy clean up.
  • Wash the yams and cut them into wedge-like pieces, lengthwise. Put the wedges into a mixture of the olive oil, salt, butter and rosemary. Bake the wedges for 25-30 minutes and then flip wedges over and bake for another 25-30 minutes. They are ready when "the edges of the wedges" have shriveled and browned on the edges some. The yams' sugar seeps out of the yams and caramelizes naturally when ready.
  • I suggest making a double batch as you will be surprised how fast these get eaten!
