GRILLED STEAK WITH ROSEMARY AND GARLIC

3 sprigs rosemary, leaves picked and finely chopped
3 cloves garlic, smashed and finely chopped
Pinch crushed red pepper flakes
Extra-virgin olive oil, plus high quality finishing oil, for garnish
2 (20-ounce) porterhouse steaks or other large steaks with a bone
Kosher salt, plus coarse sea salt, for garnish

Steps:

  • In a small bowl, combine the rosemary leaves, garlic, crushed red pepper and enough olive oil to make a loose paste. Slather the steaks with the mixture and sprinkle them generously with salt. Let the steaks hang out outside the fridge to come to room temperature.
  • Preheat the grill to medium-high. Use a wire grill brush to loosen any crud and soot. Wipe the grill down with an oiled side towel to pick up any bits of loosened crud.
  • Put the steaks on a hot spot on the grill to get a great sear and really create BROWN FOOD! Once both sides of the steak are really nice and brown, move the steak to a cooler part of the grill to allow the steaks to cook to desired temperature. About 5 to 6 minutes on each side for medium-rare.
  • Remove the steaks from the grill and let rest for 5 to 10 minutes.
  • Cut the steak off the bone, slice across the grain and divide among 4 serving plates. Drizzle the steak with a little big fat finishing oil and a sprinkling of sea salt.

An absolutely delicious way to enjoy steak -- I usually make this with London Broil. A favorite of ours for many years. Preparation time does not including marinating -- this must marinate at least overnight.

1/2 cup olive oil
1/2 cup soy sauce
1/4 cup balsamic vinegar or 1/4 cup red wine vinegar
8 cloves garlic, minced
4 teaspoons dried rosemary, crumbled
3 1/2 lbs boneless beef top sirloin steaks or 3 1/2 lbs london broil beef, approximately 2 inches thick
pepper, to taste

Steps:

  • Tenderize steak before marinating.
  • Combine first 5 ingredients.
  • Add steak and turn to coat.
  • Season generously with pepper.
  • Cover and refrigerate steak overnight, turning occasionally (I use a Tupperware made for marinating where you can turn it over easily).
  • Bring steak to room temperature.
  • Preheat the broiler for 5 minutes.
  • Remove steak from marinade and pat dry.
  • Transfer marinade to heavy small saucepan.
  • Broil steak to desired degree of doneness-- about 10 minutes per side for rare (125°F).
  • Transfer to platter and let it stand for 10 minutes.
  • Bring marinade to a boil.
  • Thinly slice steak across the grain.
  • Pour marinade over steak slices and serve (and/or serve marinade alongside).
  • Enjoy!

4 sirloin steaks, 1-inch thick, about 10 to 12-ounces each
2 cloves garlic, cracked from skin and halved
Extra-virgin olive oil, for drizzling, plus 2 tablespoons
4 sprigs rosemary very finely chopped
Salt and freshly ground black pepper or grill seasoning, if desired
4 cups arugula leaves
1 pint multi-color, yellow or red cherry heirloom tomatoes or 2 medium vine-ripe tomatoes, cut into bite-size pieces
1 lemon
Parmigiano-Reggiano, for grating

Steps:

  • Heat grill or grill pan to medium-high to high.
  • Rub room temperature meat with cut garlic. Drizzle the meat with olive oil, rub with rosemary and season liberally with salt and pepper or grill seasoning. Cook steaks 4 minutes on each side for medium, let rest 5 minutes then slice.
  • Dress greens and halved or chopped tomatoes with the juice of 1 lemon, 2 tablespoons olive oil and salt and pepper. Pile salad on top of sliced steak and garnish with long grates of cheese made with vegetable peeler.

1 ribeye steak, 2 inch (5 cm) thick, preferably USDA Prime
salt, to taste
pepper, to taste
3 tablespoons canola oil
3 tablespoons butter
3 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Preheat oven to 200°F (95°C).
  • Generously season all sides of the steak with salt and pepper.
  • Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F (51° C) for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done (you monster).
  • Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature.
  • Sear the steak for 30 seconds on the first side, then flip.
  • Add the butter, garlic, rosemary, and thyme and swirl around the pan.
  • Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
  • Baste for about 30 seconds, then flip and baste the other side for about 15 seconds.
  • Turn the steak on its side and cook to render off any excess fat.
  • Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable.
  • Slice the steak into ½ -inch (1 cm) strips, then fan out the slices and serve.
  • Enjoy!

1 cup red wine
1 teaspoon salt
1 sprig fresh rosemary
4 New York strip steaks, cut 1-inch thick

Steps:

  • Combine the red wine, salt and rosemary in a small bowl. Let stand at room temperature for 2 to 3 hours.
  • Heat a large griddle or cast-iron skillet over high heat. Place the steaks on the hot pan, and cook for about 8 minutes per side, or to desired degree of doneness. The internal temperature should be at least 145 degrees F (62 degrees C) for medium rare. Pour in the wine mixture, and allow it to boil for a minute. Serve steaks with sauce on a deep platter.

Steps:

  • For steak:
  • Combine first 5 ingredients in glass baking dish. Add steak and turn to coat. Season generously with pepper. Cover and refrigerate steak overnight, turning occasionally.
  • For peppers and onions:
  • Heat oil in heavy large skillet over medium-high heat. Add onions and sauté 4 minutes. Add peppers and sauté until beginning to soften, about 8 minutes. Add marjoram and dried red pepper. Season to taste with salt and pepper and stir 2 minutes. Remove from heat.
  • Bring steak to room temperature. Preheat broiler 5 minutes. Remove steak from marinade; pat dry. Transfer marinade to heavy small saucepan. Broil steak to desired degree of doneness, about 10 minutes per side for rare (meat thermometer will register 125°F. for rare). Transfer to platter. Let stand 10 minutes
  • Meanwhile, reheat bell peppers and onions in skillet. Bring marinade to boil.
