Inspired by Buffalo Wild Wings, this tangy, spicy roasted garlic Parmesan sauce is a great dip to serve with wings, chicken tenders, or fried fish.

6 cloves garlic
1 tablespoon olive oil
1/2 cup mayonnaise
1 teaspoon sugar (or a sugar replacement)
2 tablespoons grated Parmesan cheese
1 tablespoon apple cider vinegar
1 teaspoon lemon juice
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon freshly ground black pepper
1/8 teaspoon dried thyme
Optional: 1 red Fresno chile pepper (minced, 1 to 2 teaspoons)

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Peel the garlic cloves and put them in a small baking dish or ramekin. Pour the olive oil over the garlic and cover the baking dish tightly with foil. Bake the garlic for 25 minutes until it softens.
  • Let the garlic cool slightly and then mash until it is smooth.
  • Combine the mashed garlic with the remaining ingredients (including the optional minced pepper) in a bowl.
  • Whisk the ingredients until the mixture is smooth and well blended.
  • Transfer the dipping sauce to a jar and refrigerate it for at least a few hours or overnight.
  • Serve the sauce with chicken wings, fried tenders or chicken strips , fried fish, or crudités .

4 lb chicken wings - bake, deep fry, grill
SAUCE
1 stick butter
1/4 - 1/2 c or to taste - grated, parmesan cheese
1/2 - 3/4 c or to taste - franks red hot sauce
6 large clove garlic, minced or grated
1 Tbsp honey - optional

Steps:

  • 1. Place all sauce ingredients in a sauce pan. Simmer for about 10 minutes, stirring occasionally.
  • 2. When wings are done, whisk sauce making sure the butter is mixed into the sauce well. Place about a dozen or so wings in a bowl with lid. Pour some sauce, enough to coat wings. Shake well. Pour out onto a platter and repeat with remainder of wings...enjoy!

The Buffalo Wild Wings parmesan garlic wings are crispy, deep-fried wings that are covered in a creamy and cheesy sauce. The parmesan garlic wings are actually a make-ahead recipe as you have to season and chill the wings overnight.

4 pounds Chicken Wings
2 tablespoons Vegetable Oil
Kosher Salt and Freshly Ground Black Pepper (to taste)
Canola Oil (for frying)
1 head Garlic (peeled)
2 tablespoons Parmesan Cheese (grated)
1 teaspoon Olive Oil
½ cup Mayonnaise
1 tablespoon Light Corn Syrup
1 tablespoon Apple Cider Vinegar
1 teaspoon Lemon Juice
1 teaspoon Crushed Red Pepper Flakes
¼ teaspoon Dried Basil
¼ teaspoon Dried Marjoram
¼ teaspoon Dried Oregano
¼ teaspoon Dried Thyme
½ teaspoon Sea Salt
¼ teaspoon Freshly Ground Black Pepper

Steps:

  • Take a resealable bag and add the wings, oil, salt, and pepper to it. Seal the bag and shake it for a minute so that the wings get covered with the marination.
  • Place the wings in the refrigerator to chill overnight. Then, take them out of the bag and pat them dry.
  • Pour canola oil in a large skillet so it covers about an inch of it. Heat the oil to a temperature of 375℉.
  • Gently place the wings in the oil and fry them for 4-5 minutes. Take them out and let them rest for a couple of minutes. Then, refry them at the same temperature for another 5 minutes.
  • Take them out and drain the excess oil using a paper towel.
  • Cut the bottom end of the garlic head, drizzle some olive oil over it, and wrap the garlic head in aluminum foil. Then, place the garlic in the oven which is heated to a temperature of 350℉. Roast the garlic for about 30 minutes.
  • After that, take the foil-wrapped garlic out of the oven and unwrap it.
  • Squeeze the softened garlic out in a food processor jar. Then, add the parmesan and mayonnaise to the jar. Pour the vinegar and lemon juice into the jar. Also, add the salt, pepper, red pepper flakes, basil, marjoram, oregano, and thyme to the jar.
  • Close the jar and pulse it a few times until everything is well mixed. Refrigerate the sauce for a couple of hours before using it.
  • Place the wings in a large mixing bowl and pour the parmesan garlic sauce over them. Toss them well until all of the wings get coated with the sauce completely.

2 lemons, plus wedges for serving
1 head garlic, cloves smashed and peeled
1/2 cup olive oil, plus more for the grill
1/2 cup packed fresh basil, plus 2 large sprigs
5 large sprigs oregano, halved
8 to 10 sprigs thyme, halved
Kosher salt and freshly ground pepper
5 pounds chicken wings
4 tablespoons unsalted butter, at room temperature
1/4 cup grated parmesan cheese

Steps:

  • Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic. Cover and refrigerate at least 4 hours or overnight, stirring once or twice.
  • Meanwhile, pulse the butter, basil leaves, lemon zest and 1/2 teaspoon each salt and pepper in a mini food processor until combined. Cover and refrigerate until ready to use.
  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Remove the basil butter from the refrigerator. Remove the wings from the marinade. Brush the grill grates with olive oil and place the wings on the cooler side of the grill (indirect heat). Cover the grill and cook, turning the wings once, until almost completely cooked through and the skin is beginning to crisp, about 30 minutes. Move to direct heat and grill, turning often, until the skin is crisp and lightly charred, 10 to 15 more minutes.
  • Transfer the wings to a large bowl. Add the basil butter and toss to coat. Add the parmesan and season with salt and pepper; toss again. Serve with lemon wedges.

Steps:

  • Preheat oven to 350 degrees F.
  • Toss garlic cloves with oil in a small oven-safe dish. and then bake in the preheated oven for 20 mins or until the cloves soften and begin to turn light brown. Cool garlic and then run cloves through a garlic press or finely mince with a sharp knife.
  • Combine garlic and remaining ingredients in a small bowl and stir well. Cover and chill for several hours or overnight before using.
  • To use sauce, pour 1/4 cup over 12 cooked chicken wings, breaded tenders, or chicken nuggets and toss gently until coated. Makes 3/4 cup sauce, enough to coat 36 wings.
