BEEF AND MUSHROOM STEW

Beef and Mushroom Stew image

The sour cream is an unusual add-in for a beef stew, but it adds a lovely richness. This stew is definitely homey, but good enough for company.

Time 3h25m

Yield 6-8 serving(s)

Number Of Ingredients 21

1 tablespoon unsalted butter
1 tablespoon olive oil
2 slices bacon, finely chopped
1 onion, peeled and chopped
2 cloves garlic, minced
1 carrot, peeled and sliced into thick coins
1 stalk celery, thickly sliced
1 teaspoon Worcestershire sauce
1 bay leaf
2 teaspoons dried thyme
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (you can use less, if you wish)
1/4 cup all-purpose flour
2 lbs stewing beef, in large cubes
1/2 cup red wine
2 cups chicken stock
1 1/2 cups peeled white pearl onions (optional)
1/2 lb button mushroom, cleaned and left whole
1 cup sour cream (lowfat is fine)
2 tablespoons chopped fresh flat-leaf Italian parsley

Steps:

  • In a Dutch oven over medium heat, melt butter and add oil.
  • Add bacon pieces to fat and cook, stirring often, until bacon starts to brown.
  • Add onion, garlic, carrots, celery, worcestershire, and herbs and spices.
  • Cook, stirring often, until onion is softened (it takes about 5 minutes).
  • Pat beef cubes dry with a paper towel, if necessary, then dredge in flour until cubes are evenly coated.
  • Increase heat under Dutch oven to medium-high and cook beef, adding a few pieces at a time to pan; let pieces brown before adding new ones.
  • When all beef cubes have browned, add wine to pan and cook for 1 minute, stirring and scraping up any brown bits on bottom of pan.
  • Add chicken stock and bring to a boil.
  • Reduce heat to low, partially cover pot, and let simmer for one hour.
  • Stir in pearl onions; if you don't want to be bothered peeling the pearl onions, substitute 1-1/2 cups of cubed yellow onion.
  • Continue to cook on low heat, partially covered, for another hour.
  • Remove pot lid and add mushrooms; simmer for 30 additional minutes; beef should be very tender.
  • Just before serving, remove pot from heat and stir in sour cream and parsley; return to heat to heat through; DO NOT ALLOW TO BOIL.
  • Taste, add more salt and pepper if necessary, fish out bay leaf (if you can find it) and discard, and serve.
  • I serve it with rice (personal preference) but mashed potatoes or egg noodles also work well.

OLD-FASHIONED BEEF STEW WITH MUSHROOMS

Old-Fashioned Beef Stew with Mushrooms image

Provided by Food Network

Categories     main-dish

Time 3h10m

Yield 6 to 8 servings

Number Of Ingredients 15

6 tablespoons grapeseed or olive oil, plus more as needed
3 pounds beef chuck, cut into 1-inch pieces
Kosher salt and freshly ground pepper
4 carrots (1 roughly chopped, 3 cut into 1/2-inch rounds)
4 stalks celery (1 roughly chopped, 3 cut into 1/2-inch pieces)
1 onion, roughly chopped
1 tablespoon tomato paste
1 cup hearty red wine, such as shiraz
2 quarts beef stock or reduced-sodium beef broth
2 sprigs thyme
1 1/4 pounds russet potatoes, peeled and cut into 1-inch chunks
1 pound mixed mushrooms (such as cremini, chanterelle, oyster and/or stemmed shiitake), sliced or quartered if large
4 tablespoons unsalted butter
1/2 cup all-purpose flour
Chopped fresh parsley, for topping

Steps:

  • Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Season the beef with 2 teaspoons salt and 1 teaspoon pepper. Add to the pot in batches and cook, turning and adding more oil as needed, until browned all over, about 5 minutes. Transfer to a bowl with a slotted spoon.
  • Add 2 more tablespoons oil to the pot and reduce the heat to medium. Add the roughly chopped carrot, celery and onion and cook, occasionally stirring with a wooden spoon and scraping up the browned bits on the bottom of the pot, until the vegetables soften, about 5 minutes. Move the vegetables to one side and add the tomato paste to the empty side. Cook until it darkens around the edge, about 2 minutes; stir into the vegetables. Add the wine and bring to a boil.
  • Return the beef and any juices to the pot; add the stock. Bring to a boil, skimming any foam off the top. Add the thyme. Reduce the heat to low, cover and simmer until the beef is tender, about 2 hours.
  • Strain the beef and vegetables in a colander set over a large bowl, reserving the cooking liquid. Tent the beef mixture with foil. Let the cooking liquid stand for 5 minutes and then skim off the fat on the surface. Return the liquid to the pot. Add the remaining carrots and celery and the potatoes and bring to a simmer over high heat. Reduce the heat to medium and simmer until the vegetables are just tender, about 20 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms; cook, stirring occasionally, until they release their juices and brown, 10 minutes. (Pour off any extra liquid, if necessary.) Season with salt and pepper. Remove from the heat and set aside.
  • Melt the butter in a saucepan over medium-low heat. Whisk in the flour to make a roux, then let it bubble (do not brown), 2 minutes. Whisk in 2 cups of the reserved cooking liquid. Stir this sauce into the pot with the vegetables; bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thickened, 5 minutes.
  • Return the beef to the pot, discarding the roughly chopped carrot, celery, onion and thyme. Add the mushrooms and simmer until heated through, 5 minutes. Season with salt and pepper; sprinkle with parsley.

BOEUF EN DAUBE - CLASSIC FRENCH BEEF BURGUNDY STEW (BOURGUIGNON)

Boeuf En Daube - Classic French Beef Burgundy Stew (Bourguignon) image

Rich, savory stew of prime beef in red wine and cognac with traditional French herbs, pearl onions, garlic, mushrooms, bacon and dried orange: a French classic! A rustic country bread for mopping the juices, a tossed green salad, a platter of cheeses, and a nice bottle of red wine are all you need to round out this fabulous meal in true French style. Bon appetit! Adapted from Williams-Sonoma. Notes: Can be made in the crock-pot. I like to make this in advance, as it tastes better the second day. Occasionally I've reduced the marinade time to just an hour or two, and it still turns out fine. Freezes and reheats beautifully, and leftovers make a lovely shepherd's pie see my recipe #355446 #355446.

Time P1DT1h

Yield 6-8 serving(s)

Number Of Ingredients 23

3 1/2 lbs boneless prime lean stewing beef, trimmed and cubed in 2-inch pieces
4 tablespoons cognac
2 whole cloves
4 garlic cloves, peeled and chopped
12 ounces white pearl onions, peeled
2 medium carrots, peeled and sliced
2 stalks celery, sliced
1 large bay leaf
1/2 teaspoon crushed dried sage
1 teaspoon crushed dried thyme
3 tablespoons fresh parsley, chopped
1/4 teaspoon fresh coarse ground black pepper
1 teaspoon dried orange peel, finely chopped
1 (750 ml) bottle Burgundy wine
12 ounces fresh baby bella mushrooms, halved (can use button mushrooms or 2 oz. dried porcini cepes)
3 ounces cured unsmoked bacon such as pancetta, diced (regular bacon or lardons is fine)
kosher salt
fresh ground pepper
2 cups beef stock or 2 cups beef consomme
1 pinch sugar
2 tablespoons tomato paste
1 cup diced tomato (optional)
10 whole pimiento-stuffed green olives (optional)

Steps:

  • In a large non-reactive bowl, combine beef, Cognac, cloves, garlic, onions, carrots, celery, bay leaf, sage, thyme, parsley, 1/4 teaspoon coarsely ground black pepper, orange peel, wine, and mushrooms. Cover and refrigerate overnight or for up to 2 days, stirring from time to time.
  • Bring the meat and vegetables to room temperature. Drain, reserving the marinade.
  • Blot the beef and veggies dry with paper towels.
  • Preheat oven to 325F/175°C.
  • In a large heavy oven proof dish (such as a cast iron dutch oven or Le Creuset), fry the bacon over medium heat until it renders its fat, about 3-5 minutes. Using a slotted spoon, remove the bacon to paper towels and reserve.
  • Working in batches so as not to overcrowd the pan, add the meat and vegetables to the fat in the pan, and brown them on all sides over medium heat, seasoning with salt and pepper as they brown, about 7 minutes per batch.
  • Transfer to a platter. Add the marinade to the pot, and bring to a boil over high heat. Reduce to medium heat and simmer until the liquid is reduced by one-third, about 8 minutes. Skim off the foam from the surface. Add the stock or consomme, and simmer another 8 minutes, until reduced again by one-third. Stir in the pinch of sugar and the tomato paste, (and add the diced tomatoes and green olives now, if using).
  • Return the meat, vegetables and reserved bacon to the pot. Cover and bake in the oven until the meat is tender, 2 1/2-3 hours. -OR- alternately, at this stage you can cook in the crock-pot on LOW heat 8 to 10 hours, or on HIGH heat 4 to 6 hours.
  • Serve with a rustic bread for mopping the juices, along with a green salad and a platter of cheeses.
  • Freezes and reheats beautifully. Leftovers will make a lovely Cottage-Shepherd's Pie a la Provencale, see my recipe #355446.

Time 3h

Number Of Ingredients 17

2 pounds (900 grams) beef stewing meat, (cut into 2-inch chunks)
Kosher salt and freshly ground black pepper
¼ cup all-purpose flour
2 tablespoons vegetable oil
5 ounces lardons, cubes of thick-cut bacon, or chopped pancetta
12 frozen pearl onions, (thawed and blotted dry (about 1 cup))
2 cloves garlic, (peeled and smashed)
2 cups red wine
1 ¼ cups water
1 tablespoon tomato paste
Pinch sugar
1 bay leaf
A handful of parsley stems, (torn into smaller pieces)
2 sprigs fresh thyme
3 whole cloves
10 black peppercorns ((about ¼ teaspoon))
8 ounces cremini mushrooms, (cleaned with a damp cloth and halved or quartered depending on size)

Steps:

  • Preheat the oven to 300°F. Make a bouquet garni by wrapping the bay leaf, parsley stems, thyme, cloves, and peppercorns in a piece of cheesecloth and tying it with kitchen string.
  • Season the meat with salt and pepper and dust with 2 tablespoons of the flour. Heat the oil in a large Dutch oven over medium-high heat and sear the meat in batches until browned, about 3 to 5 minutes per batch. Remove the seared beef from the pan and set aside.
  • In the same pan, add the lardons, onions, and garlic and cook until golden brown, about 5 minutes (lower the heat to medium if needed so it cooks evenly and doesn't burn).
  • Add the remaining 2 tablespoons flour and stir for a minute until it starts to cook. Slowly add the wine, water, tomato paste, and sugar, stirring to make sure the flour dissolves evenly into the liquid, and scraping up any caramelized bits in the bottom of the pan. Return the meat to the pan with any accumulated juices.
  • Add the prepared bouquet garni to the pan and bring the mixture to a simmer. Cover, place in the oven, and cook until the meat is fork tender, about 2 to 2 ½ hours.
  • Add the mushrooms and season with salt and pepper. Return the covered pot to the oven for another 20 minutes to finish cooking with the mushrooms. The meat should be very tender and almost falling apart (you should be able to easily pull it apart with a fork or even a spoon). Remove the bouquet garni before serving.

Number Of Ingredients 2

2.5 to 3 lbs (1.1-1.4 kg) stewing beef, cubed2 tsp salt2 tsp fresh ground black pepper 4 tbsp (57g) unsalted butter, divided8 ounces cured pork or 5-6 slices bacon, cut in fine strips4 sprigs thyme3 bay leaves3 garlic cloves, peeled and finely chopped10 pearl onions, peeled 4-5 medium carrots, peeled and roughly chopped2 cups (500ml) red wine2 tbsp (30ml) brandy2 cups (500ml) beef broth2 tbsp (50g) tomato paste¼ cup (32g) flourOptional: 6-7 sprigs parsley, for garnish
For the mushrooms: 2 tbsp (28.5g) unsalted butter 1lb (0.45kg) cremini mushrooms, quartered¼ tsp salt½ tsp freshly ground black pepper

Steps:

  • Step 1 - About 2 hours before cooking, pat the beef cubes dry with paper towels and season them well with salt and black pepper. Let rest to near room temperature.
  • Step 2 - On the stove top over medium-high heat, melt 2 tablespoons of butter in a Dutch-oven. Add the bacon strips and cook for about 6-7 minutes, stirring occasionally, until fully cooked and lightly crisp. Set aside, leaving the fat drippings in the Dutch-Oven.
  • Pre-heat your oven to 325°F ( 163°C) with a rack in the middle.
  • Step 3 - Working in batches, add the beef cubes to the Dutch-oven and brown them, about 3 minutes on each side. Be careful not to overcrowd or overlap any meat cubes or they won't brown properly. It should take about 3 to 4 batches to brown 2 ½ lbs of beef. Transfer the browned beef to a separate bowl or plate.
  • Step 4 - Melt 2 tablespoons of butter in the Dutch-oven and add the garlic, carrots, pearl onions, thyme and bay leaves. Cook for 6-7 minutes, until the onions are glistening.
  • Step 5 - Add the beef and bacon back in the Dutch-oven. Add the tomato paste and sprinkle with the flour. Stir all the ingredients until no dry flour is visible. Pour in the red wine, brandy and beef stock so the meat is barely covered. Bring to a simmer, cover with a lid and cook for 1 hour 30 minutes in the oven.
  • While the stew cooks in the oven - Melt 2 tablespoons of butter in a large frying pan over medium heat. Add the mushrooms, season to taste with salt and black pepper, and cook for about 10 minutes, until the mushrooms are cooked and lightly browned.
  • Take the Beef Bourguignon out of the oven and stir in the mushrooms. Return the pot to the oven for 30 more minutes. Take the Beef Bourguignon out of the oven, adjust seasoning if needed (salt, pepper). Let the Beef Bourguignon sit for 15 minutes before serving.

  • Place all of the ingredients for the marinade in a bowl with the cubes of beef. Cover and refrigerate for about 12 hours, or overnight, stirring occasionally.
  • Strain the marinade into a saucepan, then remove the beef and set it aside, keeping the vegetables and bouquet garni separate. Bring the marinade to a boil, skim off the foam, and cook for 6 to 8 minutes. Strain through a fine sieve.
  • In a large, heavy-bottomed flameproof casserole or Dutch oven, heat a little oil and butter. Pat the meat dry and brown it on all sides in batches; remove and keep to one side. Add the well-drained vegetables from the marinade (don’t add the bouquet garni), lower the heat slightly, and cook, stirring occasionally, until they are lightly browned.
  • Heat the oven to 400°F. Return the meat to the pan, add the tomato paste, and stir over medium heat for 3 minutes. Sprinkle the meat with the flour and place it in the oven for 6 to 8 minutes; then carefully remove the hot pan and mix in the flour. Place the pot over medium heat again, add the marinade, and bring it to a boil, stirring constantly. Then add the beef stock and bouquet garni.

FRENCH FOOD: 50 POPULAR FRENCH DISHES - CHEF'S PENCIL

From chefspencil.com
  • Foie gras. Because it is so unique and so famous worldwide, I had to go with foie gras as number 1—despite the criticisms about how the ducks reared for this purpose are overfed to make them fatter.
  • Steak-frites (Steak with French Fries) If there was a national dish, it would have to be steak-frites, which is a piece of beef with French fries. Now, before I go any further, French fries are not French, they come originally from Belgium—that’s the reason why I decided not to give them their own spot in the list.
  • Jambon-beurre (Ham Sandwich) This is the most classical and popular sandwich in France: the one that you will find in every single bakery in the country; the one that people buy at the railway station to snack on during their journey; the one that families prepare for a picnic at the beach; the one you make yourself in the morning when you know you have a busy working day ahead and won’t have time to go out for lunch…
  • Fromage (Cheese) What goes better with bread than fromage? Nothing, if you ask me! While the baguette is the visual icon of French gastronomy, cheese is perhaps the element that stands out the most from our gastronomy.
  • Baguette, pain, and others. Ah, the famous, enduring cliché of the French walking around with a baguette under their arm! I know, I know, I have already talked about it with the saucisson.
  • Charcuterie. Charcuterie is a category of food in itself, consisting of a wide variety of cured meats and preparations using meat (usually pork) as a base.
  • Galettes bretonnes, aka crêpes salées. Galette bretonnes, also known as crêpes salées, are the savory equivalent of the famous and sweet crêpes. These thin buckwheat pancakes, originally from Brittany, are extremely popular all across the country.
  • Quiche. You could argue that quiche is to the French what pizza is to the Italians. Indeed, this savory pie with a crusty dough is found everywhere in the country, with many different types of filling: cheese, vegetables, smoked salmon, meat, anchovies, mushrooms, herbs, shrimps… you name it!
  • Huîtres (Oysters) Ah, oysters! After frogs and snails, this is probably the third most “disgusting” specialty on this list. After all, we eat them raw, directly from the shell, with just a dash of lemon juice.
  • Omelette. Why would I put such a basic preparation so high on the list? Well, because it is a very popular dish, and because it can be much more complex and fancy than you would think.

BEEF STEW | FOODTALK
Beef Stew. This classic French beef stew, otherwise known as Beef Bourguignon, is the ultimate comfort food. Chunks of well-marbled beef are seared in olive oil and then gently braised with garlic and onions in a wine-based broth.
