Garlic-Molasses Chicken Wings image

These chicken wings are marinated in garlicky molasses then basted and slow roasted. Make plenty as they will go fast by the plateful.

1 ½ cups soy sauce
5 cloves garlic, minced
2 tablespoons molasses
2 tablespoons brown sugar
2 tablespoons honey
1 dash garlic salt
20 whole chicken wings, split

Steps:

  • Mix soy sauce, garlic, molasses, brown sugar, honey, and garlic salt together in a large bowl. Pour 3/4 of the marinade mixture into a resealable freezer bag and add wings. Release any air from the bag and seal. Place marinating chicken wings and remaining marinade into the refrigerator and chill for 5 to 6 hours.
  • Remove wings from the refrigerator 1 hour before baking.
  • Preheat the oven to 225 degrees F (110 degrees C). Line a baking sheet with aluminum foil and top with an oiled rack about 1/2-inch above the surface of the foil.
  • Space marinated wings on the rack about 1/2-inch apart.
  • Bake in the preheated oven for 20 minutes. Baste wings with some of the remaining marinade; repeat baking and basting every 20 minutes 2 more times for a total of 1 hour. Turn wings over, baste, and bake 30 minutes more. Turn wings over again, sprinkle with garlic salt, and increase oven temperature to 350 degrees F (175 degrees C). Continue baking 15 minutes more.

3 pounds chicken wings, split and tips discarded
½ cup soy sauce
½ cup honey
¼ cup molasses
2 tablespoons chile sauce
1 teaspoon ground ginger
2 cloves garlic, finely chopped

Steps:

  • Place chicken in a shallow, medium dish.
  • In a medium bowl, mix soy sauce, honey, molasses, chile sauce, ground ginger and garlic. Pour the mixture over the chicken. Cover and refrigerate approximately 1 hour, turning occasionally.
  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large baking dish, arrange chicken in a single layer. Bake in the preheated oven approximately 50 minutes, brushing with remaining soy sauce mixture often and turning once, until meat is no longer pink and juices run clear.

20 chicken wings
1/4 cup vegetable oil
1 cup packed brown sugar
2 tablespoons molasses
2 teaspoons paprika
2 teaspoons dried thyme
1 teaspoon garlic powder
1 1/2 teaspoons salt
1 1/2 teaspoons fresh ground black pepper

Steps:

  • Preheat oven to 180.C.
  • In a food processor or blender, combine the ingredients for the rub and process until mixture is well blended.
  • In a large bowl, toss the chicken wings in the oil until the wings are completely coated, add the molasses rub and toss again until all the wings are coated.
  • Place the seasoned wings in a large roasting pan & bake for 35-40 mins or until wings are cooked through.

3 tablespoons soy sauce, plus
1/2 teaspoon soy sauce
3 tablespoons honey, plus
1/2 teaspoon honey
4 3/4 teaspoons molasses
2 1/2 teaspoons chili sauce
1/2 teaspoon ground ginger
1 garlic clove, finely chopped

Steps:

  • Place chicken in a shallow baking dish, arranging in a single layer.
  • In a separate bowl, mix the soy sauce, honey, molasses, chili sauce, ground ginger and garlic.
  • Pour the mixture over the chicken.
  • Cover and refrigerate approximately 1 hour, turning occasionally.
  • Preheat oven to 375°F.
  • Bake in the preheated oven approximately 50 minutes, or until the chicken is no longer pink and juices run clear.
  • Turn the chicken once.

½ cup flour
1 teaspoon garlic powder
½ teaspoon pepper
½ teaspoon salt
2 lb chicken winglets, and/or chicken drumlets
oil, for frying
1 tablespoon butter
1 tablespoon garlic, minced
1 tablespoon ginger
½ cup soy sauce
5 tablespoons honey
1 tablespoon brown sugar
1 teaspoon sesame seed
scallion

Steps:

  • Mix flour, garlic powder, pepper, and salt in a small bowl.
  • Coat each chicken wing with a generous layer of the flour mixture.
  • Pour ¼ inch (6 mm) of oil into a shallow pan, and bring it to a medium high heat.
  • In small batches, fry the chicken wings for 4 minutes on each side.
  • Remove from the oil and let rest on a paper towel.
  • Over medium-high heat, melt the butter and add the garlic and ginger.
  • Add soy sauce, honey, and brown sugar to pan and reduce for 5-7 minutes, stirring occasionally.
  • Add the fried wings directly into the sauce pan and stir until the wings are covered in the sauce, then sprinkle with sesame seeds.
  • Serve with scallions on top.
