FRENCH VANILLA BANANA CREAM PIE
I saw this recipe in Family Circle magazine this month. I love banana cream pie and this looked so delicious and easy I just had to try it! This is a fabulous pie... little effort and oh so good! Cook time = chill time.

Steps:
- Place banana slices in crust.
- Pour milk into bowl.
- Add pudding.
- Beat with wire whisk 2 minutes.
- Gently stir in one cup of Cool Whip; spoon into crust.
- Refrigerate 4 hours.
- Top pie with remaining Cool Whip.
FRENCH VANILLA BANANA CREAM PIE

I love this recipe because you have all different cream pie recipes in one and it's delicious! Add a cup of milk and you have pudding!

Steps:
- in saucepan, combine sugar, flour, and salt; gradually stir in milk.
- Cook and stir over medium heat till mixture boils and thickens.
- Cook 2 minutes longer.
- Remove from heat.
- Stir small amount hot mixture into yolks.
- Return to hot mixture; cook 2 minutes stirring constantly.
- Remove from heat.
- Add butter and vanilla; cool to room temperature.
- Pour into baked pie shell----> Meringue: Beat 3 egg whites with cream of tartar and vanilla.
- Gradually add 6 Tbsp sugar till soft peaks form, spread atop pie.
- Bake in moderate oven 350°F 12 to 15 minutes.
- Variations of Vanilla Cream Pie-------------.
- Banana or Coconut or Butterscotch or Chocolate or Pineapple.
- Follow directions for vanilla cream pie substituting the following: for butterscotch pie substitute 1 cup brown sugar and use 3 Tbsp butter.
- For chocolate increase sugar to 1 cup and use approximately 4 tbsp cocoa.
- For banana layer three sliced bananas on crust and pour pie filling over.
- For pineapple, drain 1 8 oz can of crushed pineapple and stir into cream filling.
- You may also make this into a pudding by using 3 cups of milk instead of 2.
BANANA CREAM PIE V
Delicious vanilla pudding is made from scratch on the stove top, then layered in a deep dish pie shell with banana slices. The pie is then covered with meringue and toasted in the oven.

- Preheat oven to 400 degrees F (200 degrees C.)
- Combine sugar, cornstarch, and salt for custard in a large saucepan or double boiler until well mixed. Stir in milk and egg yolks; whisk until all ingredients are thoroughly combined. Cook over medium heat, stirring constantly, until mixture is thickened. Remove from heat and stir in butter and vanilla.
- Pour 1/2 of the custard into baked pie shell. Cover with sliced banana. Spread remaining custard over banana layer.
- Beat egg whites and cream of tartar for meringue topping in a large glass or metal mixing bowl until foamy. Gradually add sugar, continuing to beat until stiff peaks form. Beat in vanilla extract. Spread meringue over pie, covering completely.
- Bake in the preheated oven for 10 to 15 minutes, or until lightly browned.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. - Combine flour, butter and pecans. Press into the bottom and up the sides of a greased 9 inch pie plate.

- In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
- Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
- Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
