GARLIC LOVER'S PASTA

This highly flavorful cold-serve pasta salad is sure to be a hit with the family and with a heaping pile of peas per serving it's a great way to get the kids to eat their vegetables and actually enjoy it! *Take heart: If this recipe is too garlicky for you just adjust the amount of minced garlic until you find your own desired strength.

Steps:
- Cook pasta per instructions until al dente.
- In a large mixing bowl combine all ingredients.
- Let chill in an airtight container in the refrigerator for at least 30 minutes before serving.
GARLIC LOVER'S FETTUCCINE WITH OLIVE OIL, GARLIC AND ZUCCHINI
Entered for safe-keeping. From Martha Rose Schulman's Fast Vegetarian Feasts, received in February 2009 Cookbook Swap. This is based on Italian Pasta Aglio e Olio (pasta with oil and garlic), adding zucchini that has been cut in matchsticks and briefly steamed, then tossed with the pasta and the oil, garlic, and Parmesan cheese. Although the author says 2-3 teaspoons of finely minced garlic is a lot, I would tend to add more, just because... DH and I love garlic.

Steps:
- Steam the zucchini 5 minutes and remove from the heat.
- Begin bringing water to a boil in a large pot for the pasta. (I would add a generous amount of grated sea salt to the water.).
- Meanwhile, heat the olive oil with the garlic in a small pan over very low heat. The garlic should simmer very gently, never turning brown, but just golden. (If it cooks too quickly, it will burn.) It should simmer for about 10 minutes. When it is golden and the oil aromatic, remove from the heat.
- Have a warmed serving dish ready.
- Cook the pasta al dente, and when it is done, spoon into the serving dish and toss with the oil and garlic, and the remaining ingredients.
- Serve at once, passing additional Parmesan cheese.

This is something I whipped up spur of the moment & I couldn't get enough. I love all the garlic & feta...pure bliss! Since I'm the only one in my household who eats pasta I always make just enough for me.

Steps:
- Cook pasta according to package, drain.
- In a small saucepan heat olive oil & garlic until garlic is lightly browned over med. heat.
- Add pasta & feta cheese, stirring to coat.
- Cook 1-2 minutes on low heat or until feta is melted to your liking.
- Empty into a bowl & add a dash of salt & a few dashes of pepper to taste.

GARLIC LOVERS CHICKEN SCAMPI PASTA
Very tasty recipe I came up with by throwing together a bunch of my favorite ingredients that are always on hand. I would have used egg noodles, but didn't have any on hand so I substituted fettuccini instead and it was absolutley decadent!! Recipe is for one but can easily be doubled or tripled. I never measure so my measurements are apporoximate but it's almost all a matter of taste.

Steps:
- Preheat oven to 400.
- Sautee all ingredients except chicken over medium heat until tender (about 7-8 minutes).
- Meanwhile, butterfly chicken breasts lengthwise almost all the way through creating a pouch for the filling.
- Add some of the mushrooms and sauce mixture to the inside pouch in the chicken breast.
- Seal the chicken up using several toothpicks.
- Place the chicken breasts into a small pyrex dish or meatloaf pan and pour the remaining mushroom & sauce mixture over the chicken breasts to coat.
- Bake in oven at 400 for 25-30 minutes until no longer pink inside, re-basting chicken in juices at least once halfway through cooking.
- Serve over buttered noodles, fettuccini or other pasta of choice using remaining sauce to coat noodles.
