1 1/3 lb Boneless skinless chicken thighs ((~8 medium))
1/2 tsp Sea salt
1/4 tsp Smoked paprika
1/8 tsp Black pepper
2 tbsp Unsalted butter ((divided))
1/2 head Garlic ((peeled and sliced very thinly; ~6 cloves))
1/2 cup Chicken bone broth ((or regular chicken broth))
1/2 cup White cooking wine
1/4 cup Heavy cream
1 medium Bay leaf

Steps:

  • Season the chicken on both sides with the salt, pepper, and smoked paprika.
  • Heat 1 tablespoon (30 grams) butter in a large skillet or saute pan, over medium-high heat. Add the chicken and sear for 5 to 7 minutes per side, without moving, until browned and cooked through.
  • Remove the chicken from the pan, cover with foil and set aside.
  • Add the remaining tablespoon (30 grams) butter to the pan. Add the sliced garlic. Saute for 2-3 minutes, stirring often, until the garlic is fragrant and starting to brown.
  • Add the broth and wine to the pan. Use a wooden spoon to scrape any browned bits from the bottom (this is called de-glazing).
  • Place the bay leaf into the pan and submerge. Bring the liquid to a gentle boil, then reduce heat and simmer for 8-12 minutes, until the volume is reduced by half.
  • Add the cream to the pan. Heat for just a few minutes (do not boil).
  • Remove the bay leaf and add the chicken back to the pan. Spoon the sauce over the chicken.

1 tsp garlic powder
Salt and pepper
1 tbsp olive oil
1/2 cup / 125 ml dry white wine ((or broth or water))
25 g / 2 tbsp unsalted butter
2 large garlic cloves (, minced)
Finely chopped parsley (, optional)

Steps:

  • Sprinkle both sides of chicken with garlic powder, salt and pepper.
  • Heat oil in a large skillet over medium heat. Place chicken in skillet smooth side down.
  • Press down lightly with with spatula. Cook for 5 minutes until deep golden and crispy.
  • Turn and press lightly with spatula. Cook for 2 minutes. Add garlic and butter, cook for 1 minute until garlic is light golden and it smells amazing.
  • Add wine, then turn up heat. Stir around the chicken to dissolve golden bits stuck on the skillet into the wine. Simmer rapidly for 1 1/2 minutes or until alcohol smell evaporates.
  • Remove from heat. Serve chicken with sauce.

8 (5 ounce) boneless chicken thighs
salt and ground black pepper to taste
2 tablespoons olive oil, or as needed
½ medium onion, finely chopped
7 cloves garlic, chopped, or to taste
1 cup honey
½ cup soy sauce
1 pinch onion powder, or to taste
1 pinch garlic powder, or to taste
¼ cup chopped fresh cilantro

Steps:

  • Season the chicken on both sides with salt and pepper.
  • Cover the bottom of a cast iron skillet with olive oil and bring to medium-high heat. Add chicken and brown on one side, 3 to 5 minutes. Flip chicken, and add onion and garlic; continue to cook until chicken is mostly (but not fully) cooked and onion and garlic are soft, 5 to 7 minutes more. Remove chicken to a plate.
  • Add honey, soy sauce, onion powder, garlic powder, and onion powder to the skillet. Stir and scrape the bottom of the pan with a wooden spoon to get the garlic and onion to mix with the liquid.
  • Put chicken back into the pan, cover, and reduce heat to medium. Cook until no longer pink in the center and juices run clear, about 10 more minutes, turning once halfway through. An instant-read thermometer inserted into the center of a thigh should read at least 165 degrees F (74 degrees C).
  • Place on a serving tray and drizzle liquid from the pan on top. Sprinkle with chopped cilantro before serving.

  • Preheat the oven to 375 degrees F.
  • Season the chicken with 1 1/2 teaspoons salt and a few grinds of pepper. Heat the butter and oil in a large, deep cast-iron skillet over medium-high heat until hot. Add the chicken skin-side down and cook, undisturbed, until deep golden brown, about 5 minutes. Turn the chicken over and turn off the heat.
