These roasted potatoes are buttery, garlicky, and roasted to yummy perfection. The lemon gives it a wonderfully light tang that helps balance out the flavors.

Number Of Ingredients 9

1 1/2 lbs red potatoes (cut into 1 to 2 inch pieces)
1/4 cup salted butter (melted)
5 cloves of garlic (minced)
2 tsp kosher salt
1 tsp freshly ground black pepper
1/4 tsp paprika powder
Juice of 1/2 of a fresh lemon
1/3 fresh chives or parsley (chopped)
3/4 cup freshly grated parmesan cheese

Steps:

  • In large heavy pot, par boil potato pieces until just barely tender when pierced, 3-5 minutes, depending on size of your pieces. Drain and run under cold water.
  • Preheat oven to 375F, with rack on middle position. Line baking pan with foil and set aside.
  • Combine melted butter, garlic, salt, pepper, paprika, fresh lemon juice, and chives (or parsley) in a large bowl. Whisk together well, and toss well with drained potatoes until completely coated.
  • Spread coated potatoes in a single layer on prepared pan. Sprinkle evenly with parmesan cheese.
  • Bake uncovered, 35 min. or until cheese is melty and bubbly and golden brown. Actual bake time will vary depending on size of cut potatoes. Serve warm.

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.

  • dice the potatoes in 1 inch cubes, i preheat my skillet and melt the butter. Then put all potatoes in the skillet and let cook on medium heat until tender about 25 minutes. i sprinkle with the garlic salt while the potatoes are cooking in the butter. I have enjoyed these for years. I used to quarter the potatoes, but when I became a diabetic I started to cross cut the potatoes and by eating them a slice at a time you get the full flavor of your potato without eating a lot of carbs. You also get your potato fix and satisfy your cravings. The trick is to place the potatoes between two steak knifes and slice down using the knife handles as stops so you don't cut completely through the potato. Make the slices about an 1/8-inch apart and fan the potato so there is space in between the slices. This holds the spices and supercharges the potato.

5 -10 small red potatoes (amount varies according to your preference or the number of people who will be eating)
2 tablespoons butter (again, amount varies) or 2 tablespoons margarine (again, amount varies)
chives (enough to sprinkle on top of potatoes)
salt and pepper
6 cups water (enough to cover potatoes and allow to boil)

Steps:

  • Bring water to a boil as you slice potatoes thick or thin, leaving the skin on. (I keep my slices "potato chip shaped" and not too thin!).
  • Boil potatoes until tender (when a fork can be inserted with ease), about 15-20 minutes.
  • Drain in colander.
  • Place potatoes in a big bowl and add plenty of butter/margarine. (I use at least 2-3 tablespoons maybe more, depending on number of potatoes used and whatever our mood happens to be!).
  • Then sprinkle chives on top of potatoes to taste and for a little more color.
  • *Add salt and pepper to taste.
  • *Can add some bacon bits and shredded cheese on top or mixed if you like. I haven't ever tried that, but sounds like it might be good.
