- Preheat the broiler.
- Cut the bread into slices 1 to 2 inches thick.
- In a small bowl, mix butter, olive oil, garlic, oregano, salt and pepper. Spread the mixture evenly on the bread slices.
- On a medium baking sheet, arrange the slices evenly and broil 5 minutes, or until slightly brown. Check frequently so they do not burn.
- Remove from broiler. Top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.

Steps:
- Slice the bread into about 1 to 1-1/2-inch thick slices using a serrated knife.
- In a small bowl mix together 1/2 cup plus 2 tablespoons soft butter (10 tablespoons) with olive oil, Parmesan cheese, garlic, oregano, and salt until well combined.
- Add in black pepper to taste.
- Spread the mixture over the bread slices.
- Place the slices onto a baking sheet.
- Broil for about 4 minutes or until slightly brown (watch closely these will brown quickly!).
- Remove then sprinkle the mozzarella cheese onto each slice, return to broiler for about 2 minutes or until the cheese is lightly browned.
- Serve immediately.
GARLIC BREAD PIZZAS

- Tip all of the base ingredients into a mixing bowl. Pour over 300ml warm water - not too hot. Stir quite hard with a spoon until the mixture comes together.
- Turn out onto a lightly floured surface and knead 2-3 times until the mixture forms a ball. Divide dough into 8 equalsize pieces. Take 1 piece, leaving the remainder loosely covered with oiled cling film. Lightly flour the surface again and use a rolling pin to roll out dough into a round about 15cm diameter or as thin as you can. Put pizza on a baking sheet.
- Mix together the butter and crushed garlic, then spread a little over the pizza. Tear the mozzarella into thin strips and scatter over. Repeat for the remaining pieces of dough. You should be able to fit 2 pizzas per baking sheet; depending on how many baking sheets you have, you may have to cook in batches.
- Heat oven to 240C/fan 220C/gas 9. Bake pizzas for 12-15 mins until crisp and cooked through. Meanwhile, mix together the remaining ingredients, then season well. When the pizza comes out of the oven, top with the tomato mixture and serve straight away.

- Heat the oven to 400 degrees. In a small bowl, stir together the butter, garlic, Parmesan and parsley. Add the salt and generously season with pepper. Set aside while you cut the baguette.
- Cut deep slits into the baguette, 1-inch apart - don't cut all the way through the loaf - and place the baguette on a large piece of foil. Using a teaspoon or an offset spatula, generously spread the seasoned butter inside each slit. Make sure to reach the bottom of the slit; don't be shy here.
- Wrap the baguette in the foil, place on a baking sheet and bake for 15 minutes. Remove the baguette from the oven and unwrap the top (leave the bread on the foil). If you're adding mozzarella, use the offset spatula or spoon to gently open each slit and tuck a piece of mozzarella in (it's O.K. if the cheese pops out from the top a little). Return bread to the oven and bake until crisp and golden on top, another 5 minutes. Slice with a serrated knife (or tear with your hands) and serve at once.

- In a bowl combine: 1/2 cup softened butter, 1/4 cup parsley, 1/4 tsp of salt, 1/4 tsp of garlic powder and finely minced garlic. Mash together with a fork. In a separate bowl combine the parmesan and mozzarella cheese.
- Cut your loaf of French bread in half length wise and spread the butter mixture on the inside of each half. Place bread buttered-side-down on a large sheet of foil and fold over the foil creating a pack and sealing the edges. Place foil pack on the grill buttered side down, cover the grill with the lid and cook for 5 minutes.
- Carefully open the foil. Flip the halves over with tongs and sprinkle the cheese mixture on top. Do not close the foil pack. Cover the grill and continue to cook for another 4-5 minutes to melt the cheese. Remove from the grill, slice bread, garnish with parsley and serve warm (*See baking instructions in notes).

MOZZARELLA HERB GARLIC BREAD

- Preheat oven to 400 degrees F and prepare a sheet pan lined in aluminum foil.
- Peel the garlic clove and have it handy for when the bread comes out of the oven. A larger clove will work best.
- Using a bread knife, cut as many ½ to 1-inch thick slices of bread that you want and place them on the prepared pan.
- Bake for about 5 minutes, just until the bread starts to get crisp a bit, but not brown. You just want some resistance for the garlic application.
- Once the bread is crisp (not brown), about 3 to 5 minutes take the pan back out of the oven and turn on the broiler.
- Being careful not to burn yourself on the hot pan, lightly press down on the bread and rub the garlic clove all over the surface of the bread. You will notice the garlic will sort of melt away as you go along.
- Once the bread has been rubbed with the garlic, sprinkle the slices lightly with basil and oregano.
- Cover the bread with the slices of mozzarella cheese and sprinkle with a bit more basil and oregano.
- Place the baking sheet back into the oven under the broiler and closely watch it as the cheese turns brown and bubbles; about 5 minutes. Remove from the oven and serve.

- Preheat the oven to 375°F. Line a cookie sheet with parchment. Set aside.
- Use a sharp knife cut approximately 1-inch slices on the diagonal across the bread. Repeat going the opposite direction to form diamonds.
- Melt butter and mix with the Italian seasoning, onion powder, garlic powder and garlic salt.
- Drizzle into the cut portions of the loaf reserving 2 Tbsp to brush on top.

I made this bread last weekend to serve with homemade lasagna because garlic bread with cheese was $2.69 per loaf! I decided that was rather ridiculous and it's not that tasty, so I decided to make my own. This is what I came up with and it's very simple, but one of the best breads I've served. - Preheat oven to 400 degrees F. Peel the outer layers of the whole head of garlic. Making sure to leave the garlic cloves intact.
- Use a sharp knife and cut the top 1/4 of the head of garlic. You want to be able to expose the garlic. Drizzle with olive oil and sprinkle with salt and pepper. Cover with aluminum foil. Bake for 40 minutes. Set aside to cool.
- Once the garlic is cool enough to handle, squeeze in a large mixing bowl. Add room temperature butter, parsley, parmesan cheese, salt and pepper. Mix until smooth.
- Make 1/2 inch wide cuts in your bread. Make sure to cut about 90% of the way down, leaving the bottom of the bread connected. Spread compound butter in between the slices, and across the top of the crust. Sprinkle the shredded mozzarella cheese on top of the bread and cover with aluminum foil.
- Set your oven to 400 degrees F and bake the loaf for 35-40 minutes.
- Remove from the oven and serve warm. You can cut through the bottom of the bread with a knife or pull off a slice with your hands!

- In a small plate bowel, combine milk, egg, yeast and brown sugar. Stir and set aside.
- In a large bowl, add flour and then the yeast-milk mixture. Stir using the wooden spoon followed by adding the melted butter
- Use your hand to knead the dough till it turns soft and fluffy
- Transfer into the baking tray and use your hand to shaped into a ball
- Cover with a clean towel and set aside for 1 hour to let it grow
