- Preheat oven to 325 degrees F (165 degrees C).
- Rinse ham and pat dry with paper towels; arrange ham cut-side down in a shallow roasting pan.
- Make 20 incisions with the point of a knife all over the ham; stuff one garlic clove into each incision.
- Press whole cloves into the ham.
- Cover ham with aluminum foil.
- Bake in the preheated oven for 1 hour and 20 minutes.
- While ham is baking, mix pineapple juice, brown sugar, dry mustard, and ginger in a bowl.
- Remove foil from ham. Pour pineapple juice glaze over ham.
- Return ham to oven uncovered and continue baking until glaze thickens, about 45 minutes more. Baste ham every 15 minutes.
- Allow ham to rest 5 to 10 minutes. Remove garlic and whole cloves before slicing.

GARLICKY HAM AND SWISS

- Melt the butter in a medium saucepan over medium-low heat and add the minced garlic. Cook to infuse the garlic flavor into the butter and until the butter turns brown, about 15 minutes. Remove from the heat and strain.
- Lay out 4 slices of the bread on a work surface. Layer each with 1 slice of the cheese, some ham and then some of the cornichons. Top with 1 more slice of cheese. Close the sandwiches with the remaining bread and brush with butter until fully coated on both sides.
- Place 2 sandwiches into a medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches. If desired, rub the outside of the toasted bread with the garlic halves to add a little more garlic flavor.
GARLIC AND HAM SPAGHETTI
This is a wonderful and quick dinner. I have never not been asked for the recipe when I serve it to friends. Don't be discouraged by the number of ingredients... you can add or delete any items you wish. Sprinkle Parmesan cheese on top, toss with olive oil and serve with French bread, if desired. Toss in some artichoke hearts if you'd like.

FRESH HAM WITH ROSEMARY, GARLIC, AND LEMON
With just a few seasonings rubbed on a day ahead, a slow-roasted fresh ham (that is, an uncured, unsmoked hind leg of a hog), becomes a juicy, fork-tender, and fragrant holiday centerpiece.

- Set the ham fat side up in a large heavy-duty roasting pan. Use a sharp knife to score the fat in a 1-inch diamond pattern, cutting only about three-quarters of the way through the fat. Peel the zest from the lemon with a vegetable peeler, avoiding the white pith. Put the zest, olive oil, rosemary, garlic, 1 Tbs. salt, and 1 tsp. pepper in a food processor and pulse to a coarse paste. Rub this mixture all over the ham. Cover the pan tightly with foil and refrigerate for 12 to 24 hours. Position a rack in the oven so that the ham will sit as high as possible but still have at least 2 inches head space for air circulation. Heat the oven to 350°F. Keep the ham covered with the foil and roast for 3 hours. Uncover the pan and drizzle the vinegar over the ham, taking care not to wash off the coating. Continue roasting, basting every 15 minutes or so, until the ham is well browned and an instant-read thermometer inserted in the center of the meat without touching bone registers 170°F (check in several places), 1 to 1-1/2 hours more. If the ham or drippings begin to brown too much, cover loosely with foil to prevent burning. Transfer the ham to a carving board to rest while you make the sauce.
- Pour the pan drippings into a bowl, let sit until the fat rises to the top, and then skim off the fat. Return the skimmed drippings to the roasting pan and set the pan over medium heat. Whisk in the wine, scraping up any particles stuck to the pan's bottom. Whisk in the broth, add 1/2 cup water, and continue to boil until the liquid is reduced by one-third, about 2 minutes. Meanwhile, use a fork to mash the butter with the flour in a small bowl or ramekin to create a thick paste. Whisk the cherry jam into the sauce, then add the butter paste in parts, whisking until the paste is fully dissolved and the sauce is simmering and thickened. Carve the ham and serve with the sauce. Leftover ham will keep in the refrigerator for up to 3 days and in the freezer for up to 2 months.

- Preheat oven to 350 degree F.
- Score skin on ham in a diamond pattern.
- Insert cloves where score lines cross.
- In a roasting pan, place ham and add onions.
- Roast in preheated 350 degree F oven for 1 hour.
- In a mixing bowl, combine brown sugar, flour, corn syrup, dry mustard and vinegar and mix well to combine.
- Remove ham from oven.
- Pour brown sugar mixture over ham.
- Return ham to oven and increase heat to 450 F and cook for another 30 minutes, basting at least twice during this cooking period.
- Remove ham from oven and continue basting as ham cools and until glaze starts to harden.

- Slice and serve ham hot or cold.

- In a food processor or meat grinder, grind the meat into fine pieces. Transfer to a medium mixing bowl.
- Scoop the flesh from the baked potatoes, crumble and add to the bowl. Discard the skins. Add the green onion, egg, sage, dill and pepper. Mix until well blended.
- Place the panko crumbs in a pie plate. Using your hands, form the ham mixture into six round ham patties, about 1/2 inch thick. One at a time, place the ham patties in the panko crumbs to coat. You may need to push down for them to stick. Turn over to coat both sides.

- Preheat oven to 350 F degrees. Lightly spray a 2 quart rectangular baking dish with cooking spray and set aside.
- Add package of rolls to your cutting board and using a serrated knife (like a bread knife), carefully slice across the rolls, horizontally, keeping one hand on top of the rolls to steady them. Once sliced, keep the rolls connected to each other and lift the entire top section off the bottom section.
- Add the bottom section of the rolls to the prepared baking dish, and spread half of the garlic and herbs cheese over the cut side. Spread the remaining half of the cheese over the cut side of the top section.
- Top the bottom section with the shredded sliced ham, then with the slices of cheese. Add the top section of the rolls and set aside.
- In a small saucepan, add butter, shallots, parsley, mustard and garlic and melt over MED heat until well combined. Stir well, then pour carefully over the top of the rolls in the baking dish.
- Cover loosely with foil and bake 15 minutes. Remove foil and bake another 10-15 minutes, until roll tops are golden brown and cheese is melted.

We always had these beans with our Christmas dinner. They are very flavorful and a family favorite. Most of the work can be done in advance. Although there is alot of garlic, the cooking process mellows it considerably.

- Bring a large pot of water to a boil.
- Add garlic; cook 8 minutes until very tender.
- Transfer to a paper towel using a slotted spoon.
- Pat dry.
- Add salt to pot; return water to boil and add green beans.
- Cook beans until just tender, about 6 minutes.
- Drain beans, rinse under cold water, pat dry and set aside.
- Heat 2 T oil in heavy nonstick skillet over medium-high heat.
- Add ham and saute until crisp, 6 or 7 minutes depending on the moisture content of the ham.
- Set aside.
- Can be prepared 1 day ahead.
- Keep garlic separate from beans and ham.
- Melt butter with remaining oil in a large heavy skillet over medium high heat.
- Add garlic and mash with a fork or the back of a spoon.
- Add green beans and ham.
- Toss until heated through and coated with garlic.
- Season to your taste with salt and pepper.
- Serve.
