GARLIC AND PARMESAN CHICKEN WINGS

Garlic and Parmesan Chicken Wings image

The trick to keeping these oven-baked chicken wings crispy, is parboiling the wings in a flavorful liquid, which helps season the chicken and produce a surface texture in the oven that your guests will swear came straight out of a deep fryer.

Time 1h10m

Yield 8

Number Of Ingredients 16

3 quarts cold water
⅓ cup balsamic vinegar
¼ cup salt
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
8 cloves garlic, minced
1 pinch salt

4 pounds chicken wings, separated at joints, tips discarded
2 tablespoons fine bread crumbs

  • Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
  • Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.

GARLIC-PARMESAN CHICKEN WINGS

Garlic-Parmesan Chicken Wings image

This buttery garlic-parmesan sauce is so simple and tastes sinfully delicious. A friend baked plain chicken wings for her Super Bowl party but realized at the last minute that she didn't have Tabasco sauce on hand to make Buffalo sauce. She called in a panic, and this is the sauce I advised. All her party guests raved about it. Some reviewers have stated these wings are as good as or better than Wingstop's. We don't have a Wingstop in our area, so I'll take their word for it! (Note: In response to reviewers' recommendations to decrease the amount of butter, this recipe has been adjusted from 1/2 cup to 1/4 cup of butter. Thanks!)

PARMESAN CHICKEN WINGS

Another military wife I know shared this delicious recipe with me. Sherry originally found this recipe in an issue of Taste of Home. This is my adaptation of her version. I always have a bag of frozen wings in the freezer for last minute guests and this recipe is great for using them, since no thawing is required.

PARMESAN-GARLIC CHICKEN WINGS

Parmesan-Garlic Chicken Wings image

Provided by Food Network Kitchen

Time 5h10m

Yield 8 to 10 servings

Number Of Ingredients 10

2 lemons, plus wedges for serving
1 head garlic, cloves smashed and peeled
1/2 cup olive oil, plus more for the grill
1/2 cup packed fresh basil, plus 2 large sprigs
5 large sprigs oregano, halved
8 to 10 sprigs thyme, halved
Kosher salt and freshly ground pepper
5 pounds chicken wings
4 tablespoons unsalted butter, at room temperature
1/4 cup grated parmesan cheese

Steps:

  • Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic. Cover and refrigerate at least 4 hours or overnight, stirring once or twice.
  • Meanwhile, pulse the butter, basil leaves, lemon zest and 1/2 teaspoon each salt and pepper in a mini food processor until combined. Cover and refrigerate until ready to use.
  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Remove the basil butter from the refrigerator. Remove the wings from the marinade. Brush the grill grates with olive oil and place the wings on the cooler side of the grill (indirect heat). Cover the grill and cook, turning the wings once, until almost completely cooked through and the skin is beginning to crisp, about 30 minutes. Move to direct heat and grill, turning often, until the skin is crisp and lightly charred, 10 to 15 more minutes.
  • Transfer the wings to a large bowl. Add the basil butter and toss to coat. Add the parmesan and season with salt and pepper; toss again. Serve with lemon wedges.

GARLIC-PARMESAN CHICKEN WING APPETIZER

Garlic-Parmesan Chicken Wing Appetizer image

If you love GARLIC these are for you, they pack a punch but man is it good! I had these at a hot wing bar and they were the most delicious wings I had ever had. The problem was trying to recreate them. I still haven't been able to make them exactly the same way but these are pretty close. If you are looking for something a little different than the traditional hot wings make a batch of these and I bet you they will go just as quickly!

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 7

30 chicken wings
3 heads garlic
1 cup olive oil
2 teaspoons Tabasco sauce
1 1/2 cups parmesan cheese
1/2 cup fine breadcrumbs
1 teaspoon black pepper

Steps:

  • Boil the wings for approximately a half hour to cook off all the fat.
  • Drain in a colander and rinse off any remaining fat particles.
  • In a food processor, combine the 3 heads of garlic, olive oil and Tabasco sauce.
  • Puree until smooth.
  • In a dish combine the cheese, breadcrumbs and pepper.
  • Mix well.
  • Dunk the cooked wings into the garlic puree and then immediately into the dry mixture to coat.
  • Place in a shallow baking dish.
  • Repeat until all wings are coated.
  • Bake in 425 degree oven for 35 minutes. This will make them crunchy and brown.
  • Check them at approximately 25 minutes, depending on the size of the wings they may already be done and you don't want the breading to burn.
  • Remember, they are already cooked since they were boiled first so once the crust is browned they can be taken out.
  • Every oven varies as does the chicken size so watch them carefully.
  • Once they burn they don't taste the same. Enjoy!
  • These will keep overnight if you want to make them a day ahead. I bread them and then put them in the fridge. This way all I need to do is pop them in the oven once my guests arrive. They take approximately 45 minutes if I make them this way, but check them at 30 minutes again to be safe.
