STANDING RIB ROAST

Provided by Emeril Lagasse

Categories     main-dish

Time 2h50m

Yield 8 servings

Number Of Ingredients 8

2 heads roasted garlic
3 1/2 teaspoons salt
1 1/2 teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh rosemary leaves
1 tablespoon finely chopped fresh thyme leaves
1 standing rib roast of beef (about 6 1/2 pounds), fat trimmed in 1 strip and reserved
1 1/2 cups red wine, plus 1 more cup if making au jus, optional
1/2 cup beef stock, plus 2 more cups if making au jus, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Separate the heads of roasted garlic into cloves and squeeze the roasted garlic out of the peels. Place the garlic in a small bowl and mash with the back of a fork until mostly smooth. Add 1 teaspoon salt, 1/2 teaspoon pepper, the rosemary and thyme, and stir to blend. Pat this mixture evenly over the top and sides of the roast. Place the trimmed strip of fat over the garlic-herb mixture and tie with kitchen string in several places to secure the fat onto the top of the roast.
  • Season the roast all over with the remaining 2 1/2 teaspoons salt and 1 teaspoon of pepper. Place the roast in a roasting pan and add 1 1/2 cups red wine and 1/2 cup beef stock to the bottom of the pan. Roast for 20 minutes. Reduce the heat to 350 degrees F and continue to roast to the desired degree of doneness, about 18 minutes per pound for rare and 22 minutes per pound for medium. Let stand at least 5 minutes before carving. De-fat the pan juices and serve alongside the beef.
  • If making au jus, place the roasting pan on the stove burners over medium-high heat. Add 1 cup red wine and scrape the browned bits on the bottom of the pan with a wooden spoon. Add 2 cups beef stock and season with salt and pepper. Continue to cook until the wine is reduced by half, about 5 minutes. Strain the sauce through a sieve to remove the solids before serving. De-grease, if necessary.

Provided by Sandra Lee

Time 2h55m

Number Of Ingredients 8

1 (4 to 5-pound) beef rib roast
5 cloves garlic, slivered
1/4 cup peppercorn and garlic marinade (recommended: McCormick's)
2 tablespoons spicy brown mustard
Salt and freshly ground black pepper
2 teaspoons Worcestershire sauce
1/2 cup red wine
1 cup beef broth

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a paring knife make small slits into roast about 3-inches apart and press the garlic slivers into the slits. Using a pastry brush, coat the entire roast with the mustard. Sprinkle on the peppercorn and garlic marinade to completely cover the roast. Place on a rack in a roasting pan and cook until the thermometer inserted into the center reads 130 degrees F. Remove the roast from the oven, cover with foil and allow to rest for 10 to 15 minutes.
  • To make the Au Jus: Place the roasting pan over stovetop burners on medium low. Whisk in the worcestershire sauce and wine and scrape up the little brown bits from the bottom of the roasting pan. Reduce slightly and add the broth. Bring to a simmer and reduce slightly. Serve along with the sliced prime rib.

GARLIC AND MUSTARD CRUSTED STANDING RIB ROAST AU JUS

GARLIC AND MUSTARD CRUSTED STANDING RIB ROAST AU JUS image

Categories     Beef

Yield 6-8

Number Of Ingredients 8

3 large cloves garlic, minced
3-4 tablespoons Dijon mustard
1 teaspoon dried rosemary, crumbled
1 3-to-4 rib prime rib roast (7-9 pounds), trimmed of excess fat
Salt and ground black pepper
3/4 ounce Glace de Viande Gold dissolved in 2 cups hot water
1 sprig fresh thyme
1 sprig fresh rosemary

Steps:

  • 1. Stir together the garlic, mustard, and dried thyme and rosemary in a small bowl. Place the roast in a large shallow roasting pan, rub the garlic-mustard mixture all over it, and season it generously with salt and pepper. Let the roast stand, loosely covered at room temperature for two hours. 2. Preheat the oven to 475 degrees. Roast the beef for 15 minutes, then turn the oven temperature down to 350 degrees. Keep the oven door closed so the oven temperature will decrease gradually. 3. After about 45 minutes, check the internal temperature of the roast with an instant-read thermometer by inserting the thermometer halfway into the thickest part of the roast without touching the bone. For a mostly rare roast (except for the end cuts, which will be medium-rare to medium), look for a temperature of 115 degrees. For a mostly medium-rare roast (with the end cuts medium to medium-well done), look for 120 -125 degrees. If the roast is not at the temperature you want when you first check it, recheck it every 10-15 minutes. 4. When the roast is done, remove it from the oven, transfer it to a cutting board, cover it loosely with aluminum foil, and let rest for at least 15 minutes, but not more than 30 minutes. 5. While the roast is resting, skim most of the fat from the pan juices. Place the roasting pan on the stove top over medium heat and add the dissolved Glace de Viande Gold and the herb sprigs, stirring and scraping up the brown bits from the pan. Simmer the jus gently for 10 minutes, then season to taste with salt and pepper and pour through a fine mesh strainer into a warmed sauceboat.
