Olive oil
1 garlic clove, peeled with the end cut off

Steps:

  • Preheat broiler on low. Cut baguette into 1/4" slices and place on a cookie sheet. Brush each slice with olive oil.
  • Place in the oven on a middle rack for about 2 minutes until golden brown. Keep an eye on this as it happens quickly.
  • Remove from the oven and flip each piece. broil for another 2 minutes until golden brown.
  • Once removed, use the cut side of a garlic clove and rub on the toast then sprinkle sea salt to top.

1 French baguette, cut into diagonal 1/2 inch slices
¼ cup olive oil
¼ cup butter or margarine
2 cloves garlic, minced
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Set the oven to broil at 425 degrees F (220 degrees C).
  • In a small saucepan, combine the olive oil, butter and garlic. Set over medium heat, and cook until butter has melted and the mixture starts to bubble. Season with salt and pepper. Remove from the heat.
  • Dip each slice of bread into the garlic mixture, turning to coat each side. Place Parmesan cheese on a plate. Press one side of each piece of bread into the cheese, and place cheese side up on a baking sheet.
  • Broil on the middle rack of the preheated oven for about 8 minutes, or until golden brown.

For the roasted garlic:
4 heads garlic
1/4 cup olive oil
For the crostini:
12 slices of baguette or country-style Italian bread, sliced at a 45-degree angle about 1/2 inch thick
1/4 cup extra-virgin olive oil
Pureed garlic from 4 whole roasted heads of garlic (see above)
Assorted topping options:
Shaved Parmesan, dry jack or Gruyère cheese
Fresh, creamy goat cheese, at room temperature
Roasted red bell peppers, home-roasted or bottled, cut into thin strips
Prepared tapenade (black olive and anchovy paste)
Oil-packed sun-dried tomatoes, cut into thin strips
Capers, drained
Roma tomatoes, thinly sliced, or halved, seeded, and diced

Steps:

  • 1. Preheat the oven to 375°F. Put the garlic in a roasting pan and drizzle on the olive oil. Toss to coat thoroughly. Bake for 50 to 60 minutes, or until the garlic bulbs are very tender but not overly brown. Test by carefully giving a bulb a gentle squeeze while protecting your hand with a folded kitchen towel or an oven glove. Remove from the oven and allow to cool.
  • 2. Using a sharp serrated knife, cut each head of garlic crosswise in half, midway between its leaf and root ends, to expose all the cloves inside. Their pulp will be golden brown and as soft as butter. You can squeeze it out of each half by hand or scoop it out with a small spoon or knife. Transfer the roasted garlic to a small bowl, pour in any olive oil from the baking dish, and stir and mash with a fork to form a smooth purée. You'll have 1/3 to 1/2 cup of purée, depending on the size of the garlic heads.
  • 3. To make the Roasted Garlic Crostini, preheat the oven to 375° F. Brush the bread slices with the olive oil and arrange them on a baking sheet. Bake them until golden, 12 to 15 minutes. Remove them from the oven and let them cool to room temperature. Spread the puréed roasted garlic evenly on the tops of the crostini. Top the crostini with any of the options listed above, or make an assortment. Spread some with 1 tablespoon each of goat cheese; then decorate the cheese with strips of roasted bell pepper or a mixture of sun-dried tomato strips and capers, or a smear of tapenade. In place of the goat cheese, top others with diced tomato tossed with some fresh basil, a pinch of crushed red pepper flakes, and a drizzle of balsamic vinegar; with prosciutto and Parmesan cheese; with anchovy fillets and freshly ground black pepper; or with slices of Roma tomato and fresh mozzarella, topped with fresh basil leaves.

I purchased a box of 'garlic chips' the other day. I arrived home only to discover my four dollar box of bread slices were all broken. It was then that I decided I'd simply make my own...less expensive with better flavour. Crostini are multi-use flavoured and baked thin bread slices. I've used them to float cheese in onion soup, broken into giant croutons for salads, and my favourite...as a base for flavourful spreads and appetizers. Don't discount their use plain, as a crunchy snack either. Recipe #415921 is an easy and tasty spread that goes well with these. I recommend using day old baguettes to make slicing easier.

1/4 cup olive oil, I use a mix of regular and light olive oils
1 teaspoon garlic, minced
1 baguette, sliced 1/4-inch - 1/2-inch thick
kosher salt, sprinkling (optional)
fresh ground black pepper (optional)

Steps:

  • Mix olive oil and minced garlic in a heat-proof measuring cup. Microwave at half power for 30 seconds. Set aside.
  • Note: depending on the size of your baguette, you may have to double the garlic oil ingredients.
  • Preheat oven to 375*. Line a large baking sheet with parchment paper.
  • Slice the baguette, on the diagonal, into 1/4" to 1/2" thick slices.
  • Using a pastry brush lightly wipe both sides of the bread slices with garlic oil. Arrange on the baking sheet.
  • Sprinkle (one side only), lightly with kosher salt and black pepper (if using).
  • Bake for 10 minutes. Turn slices over and continue to bake for another 5 - 10 minutes or until golden in colour and crispy. The baking time will depend on the thickness of the slices and the amount of garlic oil used.
  • Remove from the baking sheet and let cool in a single layer on a cooling rack.
  • You can use these immediately, or allow to cool completely for storage in an airtight container.

2 whole garlic bulbs
1 foot aluminum foil
1 tablespoon olive oil
1/4 cup pine nuts
1 sourdough baguette, cut into 1/2-inch slices
4 ounces strong goat cheese
6 sprigs Italian parsley

Steps:

  • Preheat oven to 400 degrees F.
  • Slice 1/2-inch off the pointed end of the garlic bulb to expose each clove. Place garlic on aluminum foil. Pour 1 teaspoon of olive oil over the top of each bulb and let it sink into the cloves.
  • Wrap foil around garlic bulbs and bake for approximately 1 hour, or until exposed cloves are golden brown.
  • In a dry saute pan over medium-high heat, toast pine nuts for approximately 5 minutes, or until golden brown.
  • Toast baguette slices in oven or toaster oven.
  • To serve, place garlic, cheese, pine nuts and parsley on a serving plate along side crostinis. Instruct guests to extract individual garlic cloves from bulb with a small fork, spread on toast, and top with goat cheese, pine nuts and parsley leaves.

1 head garlic
Vincotto (grape must) or good quality aged balsamic vinegar, to serve
2 cups beluga (black) lentils
1 (4-ounce/125 g) piece bacon
1 onion, quartered
1 carrot, quartered
1 celery stalk, quartered
2 cups red wine
2 cups veal stock
1/4 cup brown sugar
Sea salt and freshly ground black pepper (recommended: Maldon sea salt)
4 thick slices of country bread
1/4 cup olive oil
1/4 cup goat cheese
12 cherry tomatoes
1 cup olive oil, for poaching
8 slices pancetta
1 teaspoon butter, plus more for sauteing
4 large pieces Swiss chard, blanched

Steps:

  • Preheat the oven to 400 degrees F. Slice off the top of the garlic head and wrap it in aluminum foil. Bake until soft, about 30 minutes. Squeeze out garlic and put aside.
  • To assemble:
  • Spread the roasted garlic and a generous dollop of goat cheese on each slice of bread and then place in the oven for a few minutes so that the cheese melts just slightly and the bread is warm.
  • To prevent the bread from sliding, place a touch of goat cheese in the center of each plate. Place the warm bread on top, then top the bread with a couple of slices pancetta. Next, top with the Swiss chard-lentil mixture and a spoon of the red wine sauce. Add a drizzle of Vincotto and the poached tomatoes.
  • For the lentils:
  • Cook the lentils in about 2 cups salted boiling water with the bacon, onion, carrot, and celery. Reduce the heat and let simmer, uncovered, for 30 minutes or until the lentils are tender. Drain the lentils; discard the vegetables and bacon and keep the lentils aside.
  • For the wine sauce:
  • Meanwhile, in another pot, bring the red wine, veal stock, and brown sugar to a boil. Reduce the heat and let simmer for 30 minutes, until reduced by half and thick, about 30 minutes. Season with salt and pepper, and keep aside.
  • For the crostini:
  • Meanwhile, in a hot pan, add 1/4 cup olive oil and grill the bread in in the hot oil on both sides for about 30 seconds. Finish in the oven for 5 minutes to crisp them. Put aside.
  • For the poached tomatoes:
  • Pour about 1 cup olive oil in a small stockpot. Heat the oil on medium and when hot, toss in the tomatoes. Remove when the tomato skin begins to crack, about 3 minutes. Remove the tomatoes, keeping the oil for another use.
  • For the pancetta:
  • Place the slices on a baking sheet covered with parchment paper. Cover with another piece of parchment paper and cover with another baking sheet to ensure they stay flat. Cook the pancetta in the oven for 15 minutes, or until crispy.
  • For the Swiss chard:
  • Add the butter to a hot pan. Add the Swiss chard and saute to heat through. Add the cooked lentils and heat gently on medium-low heat to warm through, then season with salt and pepper.

1/3 cup KRAFT Real Mayo Mayonnaise
1/4 cup KRAFT Grated Parmesan Cheese
1 green onion, chopped
4 tsp. minced roasted garlic (jarred)
1 Tbsp. chopped fresh basil
24 round buttery crackers
6 cherry tomatoes, each cut into 4 slices

Steps:

  • Heat oven to 400ºF.
  • Mix first 5 ingredients; spread onto crackers. Place on baking sheet.
  • Bake 5 min. or until mayo mixture is lightly browned.
  • Top with tomatoes.

24 slices French bread
2 tablespoons olive oil
4 ounces cream cheese
4 ounces chevre cheese
1/4 teaspoon italian seasoning
1 garlic clove, minced
2 tablespoons butter
3 garlic cloves, minced
12 ounces raw shrimp, peeled and deveined (about 48)
1/4 cup red bell pepper, minced
2 tablespoons parsley, minced

Steps:

  • Preheat oven to 375. Lightly brush bread slices with olive oil and bake 10-12 minutes until golden brown.
  • Combine cream cheese, goat cheese, Italian seasoning, and garlic; set aside.
  • Heat butter in large skillet over medium heat until melted. Add garlic, shrimp, and bell pepper.
  • Cook and stir 3-5 minutes. Remove from heat and stir in parsley.
  • Spread each bread slice with cheese mixture, top with 2 shrimp and serve.

I serve this crostini with a spaghetti dinner, it's also wonderful with a salad. You can use as much garlic as you wish, make certain to purchase the long thin French baguette for this. You can adjust all amounts to taste)

1 French baguette (cut into 1/2-inch slices)
3/4 cup butter, melted
2 tablespoons minced fresh garlic (use more or less!)
fresh ground black pepper
kosher salt (optional)
3/4 cup grated parmesan cheese

Steps:

  • Set oven to 250 degrees.
  • Prepare a large baking sheet/s.
  • Arrange the slices on the baking sheet.
  • In a bowl combine the melted butter with minced garlic.
  • Drizzle or brush the melted butter/garlic mixture over the top of the bread slices, then sprinkle lightly with kosher salt and black pepper.
  • Bake for about 15 minutes, remove from oven, turn over the slices and brush again with butter, then kosher salt and pepper; return to oven and continue baking for 1 hour or until golden brown, turning every 15 minutes.
  • Immediately after the slices are finished baking, sprinkle the top with grated Parmesan cheese.
  • Store any leftovers in the fridge.
