GREEK SHRIMP (PRAWN) SAGANAKI RECIPE WITH FETA CHEESE (GARIDES SAGANAKI)

- To prepare this Greek shrimp saganaki recipe start by peeling and cleaning the shrimps.
- Continue preparing the sauce. To prepare the sauce for this shrimp saganaki recipe, dice the fresh tomatoes in small cubes and let them strain in a colander, so that no excess water is added to the sauce.
- Begin with the sauce for the shrimp saganaki. Heat the olive oil over medium-high heat, add the chopped onion and sauté for 1 minute. Stir in the chopped garlic, chilli peppers and season with salt and and pepper. Sauté all the ingredients together for 1 more minute. Add the chopped tomatoes, cover with the lid, bring to the boil and let simmer for approx. 5 minutes, until the sauce thickens a little bit.
- In the meantime sauté the shrimps for this shrimp saganaki recipe. Season the shrimps with salt and pepper on both sides. Heat a large saucepan over medium heat and add 3-4 tbsps olive oil. Add the shrimps, sauté for 1 minute and deglaze with the ouzo.
- Pour the sauce in the saucepan along with the shrimps and stir. Top the shrimp saganaki with the crumbled or cubed feta cheese, place the lid on and cook for 2 more minutes, until the feta slightly melts.

- 1. n a heavy skillet, sauté onion in butter and oil over medium-high heat until soft.
- 2. Add wine, tomatoes, garlic, salt, pepper and oregano. Bring to boil, lower heat to medium, and simmer until sauce is slightly thickened.
- 3. Stir in cheese and simmer for 10 to 15 minutes. Adjust seasonings.
- 4. Just before serving, add shrimp to simmering sauce and cook for 5 minutes or until shrimp are just tender. Do not overcook.
- 5. Garnish with parsley and serve immediately .

- Peel and devein shrimp.
- Sprinkle with lemon juice and garlic set aside.
- Melt butter in large skillet.
- Saute garlic green onion and tomato.

- Greek Tomato Sauce:.
- In a skillet, heat olive oil and sauté onion and garlic until onion is tender. Stir in tomatoes, tomato sauce, wine and ground pepper. Simmer 15 minutes (or longer if a thicker sauce is desired).
- Shrimp dish:.
- Peel and devein shrimp. Wash, pat dry and sprinkle with lemon juice. Divide shrimp and place into 4 individual casseroles.

- Put rack in middle of oven and preheat to 425ºF.
- Spray or oil a 9 x 13 baking dish.
- Heat 1 Tablespoon olive oil in 4 quart heavy saucepan over moderately high heat.
- Add onon, garlic, oregano and red pepper flakes and saute until onion is soft, about 3 minutes (stir constantly).
- Add wine, bring to a boil and reduce by half, about 3 minutes.
- Stir in tomatoes and salt and bring to a boil.
- Reduce heat and simmer briskly until sauce is slightly thickened (stir frequently), about 8 minutes.
- Stir shrimp into sauce and simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes.
- MEANWHILE:
- Cook orzo pasta in 6 - 8 qts. boiling water with 1 tablespoon salt until al dente (see package directions).
- Thoroughly drain orzo, reserving 1/2 cup of the water.
- Return orzo to pot and toss with remaining 1 tablespoon olive oil.
- Stir sauce and reserved cooking water into orzo.
- Add olives and season with salt and pepper to taste.
- Spoon half pasta into oiled baking dish and sprinkle with half of feta.
- Top with remaining pasta and feta.
- Bake, uncovered until cheese is slightly melted, 10 - 15 minutes.
- Serve immediately.
