1 teaspoon salt (or to taste)
3 teaspoons Dijon mustard
3 -4 teaspoons honey (or to taste)
6 tablespoons balsamic vinegar
1/2 cup olive oil, plus
2 tablespoons olive oil
black pepper

Steps:

  • For the dressing; in a bowl whisk together garlic, salt, Dijon, honey and balsamic vinegar; add in olive oil in a slow steady stream until emulsified.
  • Adjust honey amount adding in more if desired for a sweeter taste, then season with more salt if needed, and black pepper.
  • Chill for a minimum of 2 hours before using.

1 1/2 lbs small red potatoes, washed well but do not peel
3/4 lb fresh green beans, trimmed
1 small purple onion, chopped
1/4 cup chopped fresh basil
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1 dash Worcestershire sauce
1 garlic clove, minced

Steps:

  • Vinaigrette: Combine all the ingredients in a jar. Cover tightly and shake vigorously. Yield: 1 cup
  • Arrange potatoes in steamer basket over boiling water. Cover and steam 20 minutes or until tender. Place in large serving bowl.
  • Arrange beans in steamer basket over boiling water. Cover and steam 10 minutes or until crisp tender.
  • Halve the potatoes and add the beans, onion, and basil.
  • Add the vinaigrette to potato mixture and toss gently.
  • Serve at once or cover and chill.

1 teaspoon minced fresh garlic

1 (10 ounce) bag salad greens
1 (10 ounce) bag spinach, baby

Steps:

  • In a small bowl, whisk together the mustard, honey, garlic, vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified.
  • Place the salad greens in a medium bowl and add enough dressing to moisten. Sprinkle with a little extra salt and pepper, if desired, and serve immediately.

If you are a spinach salad-lover then this is one you should not pass up! Serve this to your guests or family then sit back and wait for all the rave reviews you will get! Add in some cooked shrimp or chicken breast if desired! the dressing can be made up to 2 days in advance, it will need a minimum of 2 hours chilling time to blend flavours, the dressing will make about 3/4 cup but it can easily be doubled. The vinaigrette is asy to make and emulsifies beautifully and can be made right in your salad bowl. If whisked properly it won't separate on you for a long time. Use the salad ingredients that you like. This is how I fixed it the last time I served it and it was a hit. Yummy!

2 tablespoons mustard (what you like but I used yellow the last time and it was great!)
1/2 teaspoon kosher salt
1/2 teaspoon cracked black pepper
1/4 cup balsamic vinegar
1/4 cup honey
1 tablespoon shallot, finely minced
1/4 teaspoon finely minced garlic
1 cup extra virgin olive oil
12 cups lettuce, trimmed and torn (mixed or what you like, romaine works well)
2 finely sliced scallions (or half of a thinly sliced red onion)
1/4 cup herbs, fresh minced (what you like but parsley and thyme work well)
2 cups grape tomatoes, halved
1 -2 carrot, thinly sliced
2 celery ribs, thinly sliced
1/4 cup sultana raisin
1/4 cup craisins (dried cranberries)
1/4 cup toasted walnuts, chopped
1/2 cup blue cheese, crumbles (optional, feta works too)

Steps:

  • In your salad bowl whisk mustard, salt, pepper, vinegar briskly until very well combined. Add the vinegar and whisk for about a minute. Add honey and whisk for about 30 seconds. It should be thick. Whisk in the shallot and garlic.
  • Dribble the olive oil into the base very slowly whisking all the while. The olive oil should be completely incorporated as you dribble. This is important so if you see oil in a ring around the vinegar, keep whisking! After all of the oil is mixed in, keep whisking for a few seconds more to ensure the emulsification.
  • Just before serving add your salad fixings, romaine, carrots, tomatoes, scallions, herbs, what you like. Toss and add the walnuts and cheese to the top.
  • Serve on chilled plates.
  • I have made this in a punch bowl to serve about 35 people.
  • If you want, you can store the dressing in the refrigerator in a jar for everyday use.
