MEDITERRANEAN ORZO SALAD



Mediterranean Orzo Salad image

You'll love this easy orzo salad loaded with chopped veggies, fresh herbs and other Mediterranean favorites. Tossed in a bold lemony dressing. For the best flavor, dress the Mediterranean orzo salad while the orzo is still a little warm. Pasta that hasn't cooled completely will drink up the dressing really well. And allow the salad to sit for at least a few minutes (or up to an hour in the fridge) for the flavors to meld before serving.

1 ½ cup dry orzo pasta
1 pint grape or cherry tomatoes, (halved)
2 green onions, (trimmed and chopped (both white and green parts))
½ green bell pepper, (seeds removed, chopped)
1 cup packed chopped fresh parsley, (about 1 ½ ounces)
½ cup packed chopped fresh dill, (about 0.5 ounces)
¼ cup sliced pitted kalamata olives, (about 1 ounce)
2 teaspoons capers
Feta cheese, (to your liking)
1 lemon, (zested and juiced)
¼ cup extra virgin olive oil
1 garlic clove, (minced)
1 teaspoon oregano

Steps:

  • Cook the orzo pasta according package instructions (mine took about 8 minutes). Drain and cool briefly.
  • In a large mixing bowl, combine the grape tomatoes, green onions, bell peppers, parsley, dill, olives and capers (hold the feta for now). Add the orzo pasta.
  • Make the dressing. In a small bowl, combine the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano and a good pinch of kosher salt and black pepper. Whisk to combine.
  • Pour the dressing over the salad and toss until well combined and the orzo pasta is well coated with the dressing.
  • Top with pieces of creamy feta cheese. Cover and refrigerate for a bit before serving.

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

1 1/2 cups sugar snap peas (about 6 ounces), strings removed and thinly sliced on the diagonal

Steps:

  • Make the dressing: Combine the watercress, parsley, dill, tarragon, chives, capers, lemon zest garlic, shallot and sugar in a blender or food processor.
  • Add the lemon juice, vinegar, mustard, mayonnaise and sour cream and puree until pale green and very smooth. Season with salt and pepper as needed.
  • Make the salad: Combine the orzo, peas, artichoke hearts, asparagus and snap peas in a bowl; toss with 1 cup of the dressing. Season with pepper. Refrigerate to let the orzo absorb some of the dressing, 20 to 30 minutes. Toss with more dressing as needed, about 2 tablespoons at a time, then toss with the dill; store any remaining dressing, covered, in the refrigerator for 3 to 5 days. Season with salt and pepper.

1 pound orzo

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Roast pine nuts in a rimmed sheet pan until golden, about 8 minutes.

FOR THE DRESSING
2 lemons, zested and juiced
2 oranges, zested and juiced
1/2 c rice wine vinegar
1/2 c apple cider vinegar
2 c fresh parsley leaves
2 c fresh basil leaves
2 c extra virgin olive oil
1 pinch salt
1 pinch pepper
FOR THE SALAD
4 c orzo pasta, uncooked
salt, for water
5 ears corn, kernels removed
5 stalks celery, diced
1 cucumber, seeded and diced
2 pt cherry or grape tomatoes

Steps:

  • 1. For the Dressing: In a food processor or blender, add lemon zest and juice, orange zest and juice, vinegars, parsley, basil, and oil. process until smooth and season with salt and pepper. Set aside.
  • 2. Cook orzo as directed on package.
  • 3. In a large mixing bowl, add corn kernels, celery, cucumber, and tomatoes.
  • 4. When orzo is cooked, drain and rinse under cold water; drain well.
  • 5. Add cooled orzo to veggies in bowl. Add dressing to salad and toss well. Season with more salt and pepper, if needed.

1 red onion , cut into thin wedges
1 tbsp olive oil
6 cherry tomatoes , halved
25g orzo pasta
25g feta cheese , crumbled

  • Heat oven to 200C/180C fan/gas 6. Put the peppers and onion in a roasting tin and drizzle with half the oil. Roast for 20 mins, adding the tomatoes for the final 5 mins. Leave to cool.
  • Cook the orzo following pack instructions, then run under cold water to cool before draining thoroughly. Toss with the vegetables, the remaining oil, the feta and basil. Will keep in the fridge for a few days.

I enjoy making salads during the summer that I keep on hand to make meals easier. I love pasta salads, especially ones using orzo. This one was inspired by my herb garden. I had an abundance of oregano and marjoram, so I thought I would use those in a pasta salad. I am not a huge fan of mayonaise, so I do more with olive oils and vinegars. This salad also incorporates soft goat cheese which blends in to become part of the dressing. This salad does not have a lot of dressing, so it's not very saucy. I really liked the ease of preparation and the flavor was fabulous. My husband gave it a thumbs up. Hope you enjoy it as well.

16 ounces orzo pasta
1 cup pitted & chopped kalamata olive
1 cup chopped red onion
1 cup chopped roasted red sweet pepper
4 ounces creamy plain goat cheese
8 ounces of newman's own balsamic vinaigrette
1 tablespoon loose chives
2 tablespoons fresh oregano leaves
2 tablespoons fresh marjoram
2 tablespoons fresh lemon basil leaves
1/3 cup fresh purple basil leaves
olive oil
salt
pepper

Steps:

  • Bring a large pot of water to boil and cook orzo according to directions for al dente. I used Garafalo brand orzo and it cooks perfectly in 9 minutes.
  • While orzo is cooking, chop the red onion, Kalamata olives and Roasted Red Peppers. I don't chop too finely, but that is a matter of personal choice.
  • Once the orzo is done, drain it and put it into a large work bowl.
  • While orzo is hot, add 1/4 of the bottle of Newmans's Balsamic Vinaigrette. Stir.
  • Next, while the orzo is still hot, add the goat cheese. IF the cheese comes in a log, you may want to slice it before adding. Blend.
  • It's important to add the goat cheese while the orzo is hot. This allows it to blend and become part of the dressing. It takes a few minutes to make sure the goat cheese and dressing blend well. There will not be a lot of sauce. The pasta may be a bit dry at this point.
  • Once the goat cheese is all blended, add the olives, onion and peppers. Mix well.
  • Add about 2 tablespoons of olive oil and mix. Salad will not be very wet. Let cool for about 10 minutes.
  • Gather the fresh herbs, rinse them and finely chop. You should have about 1/4 cup once all the herbs are finely chopped.
  • Add the herbs to the salad and blend.
  • Add another 1/4 of the bottle of balsamic dressing and mix.
  • Salt & pepper to taste. I don't use too much salt as I feel the olives can be somewhat salty.
  • You can add a bit more olive oil if needed. I usually add a few splashes at the end.
  • This salad is not dripping in dressing. If you prefer more liquid, feel free to use more of the balsamic dressing.
  • I let this salad rest for a few hours for flavors to meld.
  • I think it is best served at room temperature.
  • Feel free to experiment with whatever herbs you like or have on hand. I think the key is to use fresh herbs for this salad.
