Steps:
- Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
- Mix carrots, celery, peppers, tomatoes, and green onion together in large bowl. Add the cooled pasta and mix together. Pour the dressing over mixture, add the Parmesan and mix well.
- Chill before serving.

- Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.
- Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.
- Chill for one hour before serving.

Steps:
- In large bowl, toss together egg noodles, vegetables and parsley. Set aside. For dressing, combine basil leaves, sun dried tomatoes, garlic, mascarpone and Parmesan cheeses, salt and pepper in a food processor. Process, and slowly add in the olive oil and reserved oil from tomatoes; blend until smooth. Pour dressing over pasta mixture. Chill for one hour. Top with Parmesan cheese before serving.

- Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min. Drain.

- Cook pasta according to package directions. Drain but do not rinse. Return pasta to the pan; add vegetables and toss. Cover for 3-5 minutes. Vegetables will lightly steam in pasta. , Place pasta in a large salad bowl. Top with three-fourths of the dressing and lightly toss. Chill several hours or overnight. , If pasta is dry, add remaining dressing along with meat, cheese, olives, and parsley or basil if desired. Chill until serving.

GOURMET PASTA SALAD
This is my favorite pasta salad. It makes a perfect summer lunch served with cold red grapes and a fruity rosé wine. You can use whatever kind of salami you prefer (sopressata and genoa are both excellent).

- For the dressing, place all ingredients in a jar. Close lid tightly and shake until blended.
- For the salad, cook the pasta according to package directions in salted boiling water (about 1-2 tablespoons salt for a big pot of water).
- While the pasta is cooking, soak the red onion in ice water to mellow its flavor.
- Drain cooked pasta and place in a large bowl.
- Drain onions and pat dry, then add them to the pasta. Add the dressing, olives, peppers, feta, sun-dried tomatoes and salami to warm pasta and toss.
- Serve immediately at room temperature or refrigerate until ready to use.

- Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl and set aside., Meanwhile, cut the eggplant, zucchini and summer squash lengthwise into 3/4-in.-thick slices. Brush the eggplant, zucchini, summer squash, red onion and red pepper with oil; sprinkle with salt and pepper.
