GARBANZO BEAN SOUP



Garbanzo Bean Soup image

A quick and delicious vegetable bean soup! Perfect in a crockpot as well!

Provided by Sarah Criddle

Number Of Ingredients 14

2- zucchini chopped
1- red bell pepper chopped
3- cloves of garlic chopped
3 or 4 carrots chopped
1- onion chopped
6 cups of fat free chicken broth
4 or 6 cans of garbanzo beans (rinsed)
2 tablespoons of extra virgin olive oil
2 tsp turmeric spice
4 tsp salt (or to taste)
2 tsp pepper
2 tsp garlic powder
2 tsp onion powder
2 tsp favorite Cajun seasoning

Steps:

  • Chop all vegetables.
  • Heat a large soup pot and add oil.
  • Add vegetables to heated oil in pot.
  • Cook veggies until tender or 15 minutes on medium high heat.
  • Pour in chicken broth.
  • Rinse the canned garbanzo beans and add to pot.
  • Simmer for an hour or put in a crockpot on low until the beans are even more tender.
  • Enjoy!

This is a recipe that I picked up in Italy a few years ago. Being that I'm not a soup fan, I was somewhat hesitant... but this thick and hearty soup quickly won my praise. It will quickly become a favorite recipe!

1 (14.5 ounce) can peeled and diced tomatoes
1 teaspoon olive oil
2 (15.5 ounce) cans garbanzo beans
salt and pepper to taste
2 sprigs fresh rosemary
1 cup acini di pepe pasta

Steps:

  • Combine the tomatoes, olive oil and 1 1/2 cans of the beans in a large saucepan. Bring to a boil. Puree the remaining 1/2 can of garbanzo beans using a blender or food processor, and stir into the saucepan. Place the sprigs of rosemary into the pan without breaking off the leaves. The sprigs will be removed before serving.
  • Add acini de pepe pasta and simmer until pasta is soft, stirring gently to prevent sticking. Remove rosemary, and season with salt and pepper.

1/4 cup olive oil
1/2 onion, chopped
2 large garlic cloves, chopped
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon dried rubbed sage
1 16-ounce can plum tomatoes, drained, chopped
3 cups canned beef broth
1 16-ounce can garbanzo beans (chick-peas), drained
1/2 cup orzo or other small pasta
Chopped fresh parsley
Grated Parmesan

Steps:

  • Heat olive oil in heavy large saucepan over medium heat. Add onion and sauté until translucent, about 4 minutes. Add garlic, rosemary and sage and continue cooking 1 minute. Mix in tomatoes and cook until slightly thickened, stirring occasionally, about 10 minutes. Add broth and garbanzo beans and simmer 5 minutes. Puree soup in blender or processor. Return soup to saucepan and bring to boil. Stir in orzo and cook until orzo is just tender but still firm to bite. Season soup to taste with salt and pepper. Ladle soup into bowls. Garnish with parsley and serve, passing Parmesan cheese separately.

3 -4 potatoes, diced into bite-sized pieces
4 (14 1/2 ounce) cans garbanzo beans
2 minced garlic cloves
2 (32 ounce) cans chicken broth
2 (2 g) packets of vigo spanish flavoring, for yellow rice and chicken
1 lb sliced pepperoni

Steps:

  • Saute chopped onion in a little olive oil, until fragrant.
  • Add all ingredients, except pepperoni, to crockpot.
  • Cook on low for 6 hours.
  • Once done cooking, stir in pepperoni and serve.

2 cans V8 vegetable juice (spicy)
1 can corn mixed with chopped peppers, drained
2 cups frozen southern style hash browns

Steps:

  • Add all ingredients to stock pot.
  • Cook on medium heat for about 20-25 minutes, until potatoes are tender.
  • Serve in soup bowls, and sprinkle with grated cheese and serve with warm tortillas or corn muffins.
  • Enjoy.

2 chicken breasts, diced
1 lb kielbasa or 1 lb sausage, sliced
2 tablespoons olive oil
1 small onion, diced
1 small head cabbage, cut into bite sized pieces
1 (15 ounce) can diced tomatoes
2 -3 carrots
2 (15 ounce) cans garbanzo beans (chick peas)
1 tablespoon salsa
1/2 tablespoon dried thyme

Steps:

  • Saute pepperoni or sausage in oil.
  • Flour & brown chicken in same pan.
  • Add onion.
  • Add remaining ingredients.
  • Simmer on Low for 30 minutes.
  • Serve with a nice, crusty French or Italian bread.

  • Heat the olive oil in a Dutch oven (or a large pot) over medium heat. Add onion and garlic, and cook for 10 minutes, stirring frequently.
  • Stir in the water, rosemary, salt, pepper, tomatoes, and drained and rinsed chickpeas, and bring to a boil. Note: If using spinach, add it in here. Reduce heat, and simmer 20 minutes.
  • Place 2 cups soup in a blender or food processor, and process until smooth. Pour the pureed soup into a bowl. Repeat procedure with 2 cups soup. (Note: the other alternative here is to use a hand blender - it works a lot more quickly and is a lot less messy!)
