GARBANZO BEANS CHICKPEA SALAD

Loaded with garbanzo beans, fresh vegetables, and feta cheese, Chickpea Salad is a healthy dish packed with proteins.

Number Of Ingredients 12

Ingredients

2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon minced garlic
salt and pepper or to taste
15 oz garbanzo beans (drained and rinsed)
1 cup arugula
1 cup cherry tomatoes (sliced)
1/2 cucumber (sliced)
1/2 medium red onion (thinly sliced)
1 avocado (sliced)
1/4 cup chopped cilantro
optional pomegranate

Steps:

In a medium bowl, mix together olive oil, lemon juice, garlic, salt and pepper.
In a large bowl, mix together the rest of the ingredients.
Add the salad dressing. Toss to coat. Serve and enjoy!

Came from the Better Home and Garden's Meat Stretcher cookbook. It's kinda like hamburger helper for people who can't have pasta. This is my husband's favorite thing for me to make. I regularly use a can of white kernel corn (never tried yellow) instead of two cans garbanzo beans but would recommend trying all garbanzo beans first.

Ingredients

1 lb ground beef
1 cup chopped onion
2 garlic cloves, minced
2 (15 ounce) cans garbanzo beans (you can substitute 1 15 oz can white kernel corn for 1 can garbanzo beans if you want)
1 (15 ounce) can tomato sauce
1/2 cup water
1 teaspoon dried oregano, crushed
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
2 bay leaves

Steps:

Preheat oven to 350°F.
Brown beef with onion and garlic until onion is tender and beef is brown.
Drain fat.
Stir in everything else and heat to boiling.
Put in a 1 1/2 quart casserole and cover.
Bake for 45 minutes.
Remove bay leaves.
Be sure and stir before serving.

1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon canola oil
2 medium tomatoes, chopped
1 medium zucchini, chopped
1/2 teaspoon dried oregano
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups cooked rice
1 cup shredded reduced-fat cheddar cheese

Steps:

In a nonstick skillet, saute onion and garlic in oil until tender. Stir in the tomatoes, zucchini and oregano. Cover and cook for 4-6 minutes or until zucchini is crisp-tender, stirring occasionally., Add the beans, salt and pepper; cook and stir until heated through. Serve over rice. Sprinkle with cheese.
