100g spring onion , cut into rings
150ml/¼ pint full-fat milk
900g mashing potato , such as King Edward or Maris Piper
85-100g/3-4oz butter
extra butter , for serving

Steps:

  • Put the spring onions and milk in a small pan and heat to boiling. Take off the heat and leave to infuse.
  • Boil whole potatoes in their skins for 30-40 mins, or until tender (timing depends on their size). Drain and peel off the skins. Put the potatoes back in the pan, cover and gently heat for a min or two.
  • Remove from the heat and mash the potatoes with the butter until no lumps are left. Reheat the milk and the spring onions, then gradually beat this into the potatoes, mixing well with a wooden spoon to make the potatoes fluffy. Season well.
  • Serve on individual plates with a hollow in the centre of each serving in which you can put a big knob of butter. Diners then dip each forkful into the pool of melted butter before eating.

50g butter
4 leeks , thinly sliced
1 large celeriac , peeled and cut into chunks
4 small Bramley apples
150ml medium cider or apple juice
1 tbsp wholegrain mustard
pinch of golden caster sugar
1 tbsp oil
4 gammon steaks

Steps:

  • Melt half the butter in a large lidded frying pan. Cook the leeks over a medium heat, covered, for about 10 mins until soft, stirring occasionally so they don't catch.
  • Meanwhile, put the celeriac in a pan, cover with salted water, bring to the boil and cook for 15-20 mins until soft. Drain and roughly mash, then whizz with a stick blender to make an almost smooth mash. Stir in the leeks and the rest of the butter, season well and keep warm.
  • Put the apples and cider in a pan. Heat for 10 mins on a medium heat, stirring until the apples have broken down, then stir in the mustard, some seasoning and the sugar.
  • Heat the oil in the pan you cooked the leeks in and fry the gammon steaks on a medium-high heat for 3-4 mins each side. Serve with the mash and apple sauce on the side.

4 -5 lbs smoked ham
1 large onion
6 carrots, peeled and sliced
8 potatoes, peeled and cubed
1 teaspoon dried thyme
1 bunch fresh parsley
1 head cabbage, cut into quarters

Steps:

  • Place thyme, parsley, and onion in a cheese cloth for easy removal after cooking.
  • Put ham into a large pot and cover with cold water.
  • Add all other ingredients except cabbage and bring to a boil.
  • Turn to simmer and cook until veggies are tender.
  • Remove the herb bag.
  • Add cabbage, simmer for 20 minutes.
  • or until cabbage is cooked.
  • Remove ham and cut in to pieces.
  • Place on the center of a large platter.
  • Strain the cabbage and season it with pepper.
  • Surround the ham with the cabbage, carrots, and potatoes.
  • EAT!
