1 kg mutton mince
3 tablespoons ginger paste
3 tablespoons garlic paste
75 g raw papayas
3 tablespoons butter
1 teaspoon red chili powder
1/2 teaspoon ground mace
1 teaspoon cardamom powder
4 tablespoons flour of roasted channa dal
ghee, as required
salt, as required

Steps:

  • Wash and drain the mince and refrigerate for 15 minutes.
  • Peel and deseed the papaya, put in a blender and make a fine paste.
  • Mix all the ingredients, except the ghee with the refrigerated mince.
  • Refrigerate for another 30 minutes.
  • Divide into 32 equal portions,apply a little melted ghee on the palms and flatten the mince into round patties.
  • Heat ghee in a tava and shallow fry over low heat until both sides brown evenly.

minced mutton, - 50 grams
onion, - 1 small
cardamom powder, a pinch
ginger-garlic paste, -1 tsp
salt, - 1/2 tsp
red chili powder, - 1/2 tsp
papaya paste, - 1 tsp (raw, helps to tenderize the meat)
garam masala powder, - 1/2 tsp
coriander seed, - 1 tsp
1 g flour, - 1 tbsp (besan)
oil, - 1 tsp

Steps:

  • Step 1.
  • Boil the minced mutton, in a pressure cooker with salt, raw papaya paste and 1/4 cup of water.
  • Step 2.
  • Transfer the boiled minced meat into a mixer bowl and blend for 1 - 2 minutes, until soft and forms a ball.
  • Step 3.
  • In a wide bowl, add the remaining ingredients to the cooked minced mixture.
  • Step 4.
  • Shape the mixture into round kebabs.
  • Step 5.
  • Heat oil in a non-stick frying pan. Reduce heat to medium.
  • Step 6.
  • Shallow fry until brown on both the sides.
  • Step 7.
  • Serve with green chutney and onion rings.
