CHINESE CURRY BEEF STIR FRY
Chinese Curry Beef Stir Fry features curry-spiced crispy beef in velvety black bean sauce. Make this recipe for an easy weeknight meal!

- In a bowl mix the curry powder, vinegar and soy sauce. Add the thin strips of beef and massage with hands to cover each piece of meat with marinade. Cover and place in refrigerator to rest for 30 minutes.
- In a wok placed over high heat, add the oil. In small batches to ensure the meat gets seared, not steamed, quickly stir fry the meat until cooked on both sides, 2-3 minutes. Remove from wok and set aside.
- Add the 1/2 cup of beef stock and scrape up bits of caramelized beef bits. Add the black bean paste and stir. Stir in the cornstarch slurry and stir to create a smooth sauce. Cook for a minute and add the meat back in and stir fry for 3-4 minutes.
- Season to taste with salt and white pepper if needed. Serve with steamed rice and vegetables if desired.

SOUTHWESTERN HOMINY CASSEROLE
I love hominy, but I rarely find recipes to use it. Recipe courtesy of Jim Fobel's Casseroles. He says to serve this with burgers, broiled salmon, or roasted/barbecued meat. Jim also says you can roast 8 ounces of poblano chilies for a fresher, bigger flavor (peel, seed, and chop. For more flavor serve sprinkled with chopped cilantro and sliced scallions. I enjoyed it with 8 ounces of chilies. Thank you Jim Fobel, you always have the best casserole recipes. YUMMY!

- Preheat the oven, and prepare the casserole or gratin dish by oiling.
- In a large bowl, stir together the yogurt, sour cream, and hot pepper sauce.
- Add the chilies, flour, salt, oregano, cumin, and pepper.
- Stir to combine.
- Stir in the hominy and beans.
- Toss together both cheeses and stir half of it into the mixture.
- Turn into the prepared casserole and sprinkle with the remaining cheese and the paprika.
- Bake for 35 or 40 minutes, or until lightly browned and bubbly around the edges.
- Serve hot. Top with cilantro and scallions if desired.
- To reheat, cover the casserole with aluminum foil.
- If at room temperature, reheat at 325 for about 30 minutes.
- If cold, add 10 to 15 minutes.

FRIED TOFU IN CURRY SAUCE
This recipe comes from a local Indian restaurant here in my hometown. You can substitute chicken or fish for the tofu.

- Heat olive oil in a large skillet over medium-high heat and sauté tofu pieces until crispy and browned. Remove tofu from skillet and set aside.
- Sauté onion and green pepper until onion is translucent then add ginger and garlic. Cook for 2 to 3 min until fragrant, then stir in the curry powder.
- Return tofu to skillet and add tomato sauce, coconut milk, cloves, cardamom and cinnamon stick. Season with salt and pepper.and stir all together.
- Reduce heat to low and simmer for about 15 minutes, stirring occasionally.

- Combine ground pork, bread crumbs, egg, onion and salt.
- Shape into 1 1/2-inch balls (about 30).
- Heat oil in a fry pan.
- Add half pork balls and cook, shaking pan to brown all sides.
- Remove browned balls from pan and repeat with remainder.
- Remove browned balls from pan; pour off fat, measure and return 2 tablespoons to pan.
- Add red peppers, curry powder and ginger; cook and stir about 1 minute.
- Add onions, garlic, vinegar, tomato sauce, sugar and chicken broth; stir to blend and bring to a boil.
- Add pork balls; cover; reduce heat and simmer for 45 minutes.
- Push balls to one side and stir in sour cream; carefully mix sauce and balls.
- Serve with noodles or rice, if desired and fresh herbs scattered to garnish.

TRADITIONAL MINESTRONE
This is an excellent minestrone. I got the original recipe from the Moosewood Cookbook. The original recipe called for tomato sauce. I only had spaghetti sauce on hand and I think the end result is very good. The original recipe also called for zucchini and/or eggplant which my family doesn't care for so green beans were substituted. I reduced the amount of olive oil to make it lower in fat.

- Heat the olive oil in nonstick Dutch oven.
- Add onion, garlic and salt.
- Saute over medium heat for about 5 minutes.
- Add celery, carrot, green beans and seasonings.
- Cover and cook overy very low heat 10 minutes, stirring occasionally.
- Add bell pepper, water and spaghetti sauce.
- Cover and simmer 15 minutes.
- Add beans and simmer another 5 minutes.
- Bring to a gentle boil.
- Add pasta.
- Stir and cook until pasta is done.
- Serve topped with parsley and parmesan.
