2 round headed radicchio, halved or quartered according to size
3 to 4 tablespoons olive oil
1 garlic clove, minced
4 tablespoons balsamic vinegar
Ground black pepper to taste

Steps:

  • Brush radicchio with olive oil and set on grill until softened, about 5 minutes, turning once. In a small saucepan, heat remaining olive oil with garlic. Drizzle oil and balsamic vinegar over radicchio, grind some pepper over the top. Serve immediately.;

Fusilli with Shiitake Mushrooms Broccoli Rabe and Prosciutto Sauce image

1 pound fusilli pasta
1 pound broccoli rabe, trimmed and cut into 1-inch pieces
1/2 cup olive oil
1/2 cup minced shallots
1 clove garlic, minced
6-8 ounces Shiitake mushrooms, trimmed and sliced
1 6-8 ounce piece of Prosciutto or similar cured ham, cut into small dice or strips
1/2-1 teaspoon dried hot red pepper flakes to taste
1/3 cup chicken stock or broth
2 tablespoons minced fresh parsley
2 tablespoons minced fresh chives
2 tablespoons fresh tarragon
Freshly grated Parmesan cheese, optional garnish
Sundried tomatoes, optional garnish

Steps:

  • First make the sauce. In a skillet heat oil. Add shallots and cook, stirring for 1 minute. Then add mushrooms and cook, stirring occasionally for 5 minutes, or until mushrooms are lightly golden. Now stir in garlic, prosciutto, and red pepper flakes and cook for 30 minutes, and then add chicken stock or broth and simmer for 1 minute. To your pasta, bring a large pot of water to a full rolling boil. When the water is ready, add your pasta. Remember start your cooking time when the water returns to a boil, not when you add the pasta. Cook your pasta according to package directions, after 6 minutes of cooking, add the broccoli rabe to the cooking pasta. Drain pasta and broccoli rabe in a colander and transfer to a serving dish. Top with sauce, mixing well. Garnish if desired.

CAVATELLI WITH SAUSAGE AND RADICCHIO

3 tablespoons extra-virgin olive oil, plus more for serving
4 pork sausages (about 1 pound), casings removed
1/2 white onion, diced
Pinch red pepper flakes
1/2 cup white wine
1 pound pasta, such as cavatelli or orecchiette
1/3 cup freshly grated Parmigiano-Reggiano, plus more for topping
1/2 head radicchio, thinly sliced
1/2 cup walnuts, toasted and hand-crushed

Steps:

  • In an 8- to 12-quart pot, bring 6 quarts (24 cups) salted water to a rolling boil.
  • In a large nonstick skillet, heat 2 tablespoons of the olive oil over medium-high heat until hot but not smoking. Add the sausage and cook, breaking it up with a wooden spoon, until browned but not yet crispy. Remove the meat from the skillet with a slotted spoon and set aside.
  • Add the onions and remaining tablespoon of olive oil to the skillet and saute until the onions are soft. Add the sausage back along with a pinch of red pepper flakes and saute an additional minute. Reduce the flame to medium low and pour in the wine, cooking until it is reduced by half, 3 to 4 minutes. Remove the sauce from the heat.
  • Add the pasta to the boiling water and cook until al dente. Drain the pasta and add it to the sauce in the skillet. Add the Parmigiano-Reggiano and radicchio and toss to combine the ingredients. Garnish with the crushed walnuts, a drop of extra-virgin olive oil and a light dusting of freshly grated Parmigiano-Reggiano.

  • Place the radicchio on the grill for about a minute on each side, watching it carefully, as it can burn very easily. Drizzle the radicchio with olive oil. Serve hot.
