I got this recipe off of the back of a packet of Knorr Italian Sides Four Cheese Pasta Spiral Pasta in a Parmesan, Romano, Blue & Cheddar Cheese Flavored Sauce.

1 2/3 cups water
1 cup 2% low-fat milk
2 tablespoons I Can't Believe It's Not Butter
1 package knorr italian sides four cheese pasta
1/4 cup roasted red pepper, cut into strips
1 lb uncooked medium shrimp, peeled and deveined
1 (10 ounce) bag fresh Baby Spinach
1 garlic clove, finely chopped

Steps:

  • Bring water, milk and 1 tablespoon spread to the boiling point in 3-quart saucepan. Stir in Knorr Italian Sides Four Cheese Pasta and roasted red peppers. Continue boiling over medium heat, stirring occasionally, 13 minutes or until pasta is tender.
  • Meanwhile, melt remaining 1 tablespoon spread in 10-inch nonstick skillet over medium-high heat and cook garlic 30 seconds. Add shrimp and cook, turning once, 4 minutes or until shrimp turn pink. Add spinach and cook 2 minutes.
  • Stir in Four Cheese Pasta. Serve immediately.

4 large cloves garlic, minced (about 4 teaspoons)
2 medium shallots, thinly sliced (about 1/3 cup)
1 1/4 pounds large shrimp (about 20), peeled and deveined
1 (11-ounce) package frozen artichoke hearts, thawed, or 1 (14-ounce) can artichoke hearts, rinsed, drained, and quartered
1/3 cup dry white wine
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large skillet over medium heat. Add garlic and shallots and cook, stirring until softened but not browned, 2 to 3 minutes. Add shrimp, artichoke hearts, wine, and lemon juice and cook until the shrimp are cooked through, 3 to 4 minutes. Stir in the parsley, salt and pepper. Divide among 4 plates, garnish with additional parsley, and serve.

1/4 cup olive oil
1/4 cup finely chopped shallots
1 tablespoon minced garlic
1/4 teaspoon crushed red pepper flakes
1 cup dry white wine
1 pound large shrimp, peeled and de-veined
12 ounces fusilli pasta
3 cups (packed) fresh arugula, torn in 1/2

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the shallots and garlic and and saute until translucent, about 2 minutes. Add the red pepper flakes and white wine and bring to a simmer. Simmer until the wine reduces by half, about 5 minutes. Add the shrimp and cook just until they are pink, about 2 minutes.
  • Meanwhile, cook the fusilli in a large pot of boiling salted water until just tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
  • Drain the fusilli. Add the fusilli and arugula to the skillet. Toss to combine. Season the pasta, to taste, with salt and pepper. Transfer the pasta to a large bowl and serve.

3/4 cup drained oil-packed sun-dried tomatoes, sliced, 2 tablespoons of oil reserved
1 pound Italian hot sausages, casings removed
2 (8-ounce) packages frozen artichoke hearts
2 large cloves garlic, chopped
1 3/4 cups chicken broth
1/2 cup dry white wine
16 ounces fusilli pasta
1/2 cup shredded Parmesan, plus additional for garnish
1/3 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
8 ounces water-packed fresh mozzarella, drained and cubed, optional
Salt and freshly ground pepper

Steps:

  • Heat the oil reserved from the tomatoes in a heavy large frying pan over medium-high heat. Add the sausages and cook until brown, breaking up the meat into bite-size pieces with a fork, about 8 minutes. Transfer the sausage to a bowl. Add the artichokes and garlic to the same skillet, and saute over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine, and sun-dried tomatoes. Boil over medium-high heat until the sauce reduces slightly, stirring occasionally, about 8 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the fusilli in boiling water until tender but still firm to the bite, stirring often, about 8 minutes. Drain the pasta (do not rinse). Add the pasta, sausage, 1/2 cup Parmesan, basil, and parsley to the artichoke mixture. Toss until the sauce is almost absorbed by the pasta. Stir in the mozzarella. Season, to taste, with salt and pepper. Serve, passing the additional Parmesan cheese alongside.

2 tablespoons olive oil
1 large shallot, sliced thin, ( about ½ cup)
1 teaspoon minced garlic
1-½ teaspoon kosher salt
¼ teaspoon crushed red pepper
1 can artichoke hearts, drained and halved, (14-ounces)
1 pound fusilli
5 cups chicken stock
1 teaspoon concentrated chicken base, (such as Better Than Bouillon)
¼ cup mascarpone cheese
¼ cup Greek yogurt (or sour cream)
1 package fresh spinach, 5-ounces, (about 6 to 7 cups)
1 pound shrimp, peeled and deveined
½ cup shaved Parmesan cheese, (plus extra for serving)

Steps:

  • Warm the olive oil in a large stockpot over medium heat. Add the sliced shallot and sauté until tender and translucent, about 5 minutes.
  • Stir in the garlic and sauté for an additional 3 minutes.
  • Add the kosher salt along with the crushed red pepper and the artichoke hearts.
  • Toss in the fusilli and stir in the chicken stock along with the concentrated chicken stock.
  • Raise the heat to medium high and cook uncovered, stirring frequently until the pasta is just tender, about 9 minutes.
  • Stir in the mascarpone cheese and the yogurt.
  • Add the fresh spinach and the shrimp, cover the pan and reduce the heat to medium-low. Cook until the shrimp are cooked through, stirring occasionally, about 8 to 10 minutes.
  • Stir in the shaved Parmesan cheese, mixing into the pasta.
  • Top with extra Parmesan cheese for serving.

I love shrimp! I am like Bubba Gump in Forrest Gump. Fried! Broiled! Steamed! Sauteed! Just about any way is good for me. This is a simple recipe that's similar to shrimp scampi. The artichokes and sun-dried tomatoes with the basil and lemon make for a killer sauce over linguini or serve it with some toasted baguette to mop it up. Just don't let the sauce go to waste!

1/4 cup extra-virgin olive oil
1 pound U-12 (under 12 per pound) shrimp, peeled and deveined
1/2 red onion, sliced
4 cloves garlic, sliced
1 cup sun-dried tomatoes in oil, chopped
1 cup artichoke hearts in brine, drained (brine reserved) and quartered
1/2 cup dry white wine
Kosher salt and freshly ground black pepper
1 pinch crushed red pepper
1 lemon, halved
2 tablespoons unsalted butter, optional
1 bunch fresh basil, stemmed and chopped or thinly sliced
Cooked linguini or toasted baguette, for serving

Steps:

  • Heat the olive oil in a large saute pan over high heat until smoking. Add the shrimp and cook, stirring, until lightly caramelized, about 1 minute on each side. Remove the shrimp from the pan and set aside. Add the red onion and garlic and cook, stirring, until lightly golden brown, about 2 minutes. Add the sun-dried tomatoes and artichoke hearts. Add the white wine, scraping the bottom of the pan with a wooden spoon.
  • Add the shrimp back to the pan and continue to cook over high heat until the liquid is reduced by half, 4 to 5 minutes. Add about 1/4 cup of the reserved artichoke liquid. Season with salt and black pepper and add the red pepper. Squeeze in the juice from the lemon, add the butter (if using) and basil and stir together.
  • Toss with linguine or serve in a bowl with some toasted baguette.

Additional chopped fresh basil
1/2 cup freshly grated Parmesan cheese

  • Heat oil in heavy large skillet over medium heat. Add onion and garlic; sauté until tender, about 5 minutes. Add 1/4 cup basil, oregano and dried red pepper and stir 1 minute.   • Cook spaghetti in large pot of boiling salted water until tender but still firm to bite. Drain.
  • Meanwhile, bring sauce to a simmer. Stir in shrimp and simmer until just cooked through, about 5 minutes. Season to taste with salt and pepper.
  • Add spaghetti to sauce and toss to coat. Transfer to large bowl. Sprinkle with additional chopped fresh basil. Serve, passing Parmesan separately.
