Funfetti Ooey Gooey Bars are fun to eat with a rainbow of colors. It's a combo of a cake mix cookie bars recipe and Fruity Pebbles Bars recipe!

- For the first layer, mix together one Funfetti Aqua Blue cake mix, egg, and oil. Press into a foil lined, greased, 9×9″ pan. Bake at 350 degrees for 10-12 minutes.
- Remove the cake mix layer from the oven and put spoonfuls of the marshmallow cream on top. Allow the marshmallow cream to warm and spread out on its own. While waiting, work on the top layer.
- For the top layer, make Fruity Pebble bars. Microwave 1 1/2 tablespoons of butter for 20 seconds in a large bowl, until melted. Add 3 cups of mini marshmallows and stir to coat. Microwave for 45 seconds and stir until smooth. (If the marshmallows aren't completely melted, microwave for an additional 30 seconds.) Mix in 3 cups of Fruity Pebbles. Drop by large spoonfuls over the marshmallow cream layer and carefully spread out evenly. I put my hand in a plastic baggie with a little butter on it and gently spread it out and patted it down.

- Preheat oven to 350°F. Line a 9x9" pan with foil and spray liberally with cooking spray.
- Add cake mix, butter, and egg to the bowl of an electric mixer fitted with a paddle attachment. (You can also use a hand mixer.) Mix until a thick dough forms. This will take a long time, especially if you're using a hand mixer. Just keep mixing! Add sprinkles and stir until incorporated.
- Press about 1/2-2/3 of the dough into the bottom of the prepared pan.Pour sweetened condensed milk over the top of the dough, leaving a thin border around the edges. Sprinkle with white chocolate chips. Separate remaining dough into small balls and evenly space over the top of the bars. Press down to flatten. Try to seal the edges as much as possible.
- Bake bars for about 25-30 minutes, or until they just begin to brown. Cool completely before slicing, otherwise the mixture will be too gooey to cut.

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x9-inch pan with aluminum foil and spray liberally with cooking spray.
- Mix yellow cake mix, butter, and egg together in an electric stand mixer fitted with the paddle attachment until a thick dough forms, add 1/3 cup multi-colored sprinkles and mix to incorporate.
- Press 2/3 of the dough into bottom of prepared pan; sprinkle white chocolate chips and remaining 1/3 cup multi-colored sprinkles over top, followed by sweetened condensed milk. - Preheat oven to 350F/180C. Line 2 baking sheets with parchment paper. Set aside.
- In a medium bowl, sift together flour, baking soda, and salt. Set aside.
- In a mixer bowl fitted with the paddle attachment, beat butter, granulated sugar, and powdered sugar on medium-low speed for 4 minutes. Beat in egg and vanilla extract just until combined. Add flour mixture and beat just until combined. Mix in sprinkles. Do not overmix.
- Shape dough into balls, the size of 1.5 tablespoons each (I use this ice cream scoop for that), and place on the cookie sheets, spacing them 2-inches apart. Bake for 11-12 minutes until cookies just begin to brown at the edges, but the center is still soft (you don't want to overbake them). Allow cookies to cool on baking sheet for 5-10 minutes, then gently transfer to a wire rack to cool completely.
- Store cookies at room temperature in an airtight container for up to 3 days. Cookies can also be frozen for up to 2 months.
