We've created the perfect brownie by employing a few tips and tricks. Using both semisweet chocolate and cocoa powder gives us the deep and complex chocolate flavor we crave. Cooking the butter until golden brown adds a toasted nuttiness, while the pop of cream provides luscious texture.

Nonstick baking spray
3 sticks (1 1/2 cups) unsalted butter
6 ounces bittersweet chocolate (64-percent cacao), chopped
1/4 cup heavy cream
1 cup all-purpose flour (see Cook's Note)
1 1/4 cups Dutch-process cocoa
1 3/4 cups granulated sugar
1/2 cup packed dark brown sugar
1 3/4 teaspoons kosher salt
1 tablespoon pure vanilla paste or extract
2 teaspoons instant espresso powder
6 large eggs, chilled

Steps:

  • Arrange a rack in the center of the oven and preheat to 350 degrees F. Spray a 13-by-9-inch baking pan, preferably metal, with nonstick baking spray. Line the pan with parchment paper leaving a 2-inch overhang on the longer sides. Lightly coat with nonstick spray.
  • Melt the butter in a large saucepan over medium heat, swirling occasionally, until the butter is a deep golden color, about 5 minutes; the butter will hiss and spit as the whey evaporates so be careful. As the foam subsides the butter will go from a canary yellow color to golden. When it does, take it off the heat. Add the chocolate and cream to the butter and let it sit, stirring occasionally, until the chocolate is melted.
  • Sift the flour and cocoa powder through a fine-mesh sieve into a medium bowl. Beat the granulated sugar, brown sugar, salt, vanilla, espresso powder and eggs in the bowl of a stand mixer fitted with the whisk attachment. Start on low speed and gradually increase to high speed until the eggs are pale, very thick and fluffy, about 8 minutes (start your timer when you get to high speed). Do not be tempted to skimp on the mix time; this step is key to getting the signature shiny, crackled brownie top. Reduce the speed to low and slowly pour the warm chocolate into the eggs; beat until completely incorporated. Gradually add the dry ingredients and beat until just combined; do not overmix. Use a rubber spatula to scrape the sides and bottom of the bowl and fold until the batter is completely combined.
  • Scrape the batter into the prepared pan. Bake until the brownies are glossy and just barely firm, and an instant-read thermometer inserted into the center registers 205 degrees F, 25 to 35 minutes. Don't let the thermometer touch the bottom of the pan or you will get a much higher reading. (The cook time will be at the higher end of the range if using a glass or ceramic baking dish.)
  • Let the brownies cool completely to allow the crumb to set before slicing, about 3 hours.
  • Use an offset spatula to loosen the brownies from the sides of the pan. Use the parchment overhang to lift the brownies out of the pan. Remove the parchment and cut into 24 squares.

1-1/3 cups butter, softened
2-2/3 cups sugar
4 large eggs, room temperature
1 tablespoon vanilla extract
2 cups all-purpose flour
1 cup baking cocoa
1/2 teaspoon salt
1 cup Golden Grahams, coarsely crushed
1-3/4 cups miniature marshmallows
4 ounces milk chocolate, chopped

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In a bowl, mix flour, cocoa and salt; gradually beat into creamed mixture. , Spread into a greased 13x9-in. baking pan. Bake 25-30 minutes or until a toothpick inserted in center comes out with moist crumbs (do not overbake)., Preheat broiler. Sprinkle baked brownies with cereal and marshmallows; broil 5-6 in. from heat until marshmallows are golden brown, 30-45 seconds. Immediately sprinkle with chopped chocolate. Cover with foil and let stand until chocolate begins to melt, about 5 minutes. Remove foil and cool completely in pan on a wire rack. Cut into bars.

1 (9 inch) graham cracker crust (store bought is ok)
1 (19 ounce) betty crocker brownie mix
1 large egg
1/3 cup water
1/3 cup oil
1/2 cup mini marshmallows
1/2 cup semi-sweet chocolate chips
6 ounces semisweet mini chocolate chips
3/4 cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, toss 1/2 cup of chocolate chips with 1 TBSP brownie mix. (This will help keep the chips from all sinking in the mix).
  • Combine brownie mix, egg, oil, and water in a medium mixing bowl.
  • Mix on low to medium speed until combined.
  • Fold in marshmallows and dusted chocolate chips.
  • Pour into crust and bake for 30-35 minutes (crust will be quite full, a cookie sheet underneath is a good idea) or until it is set - gooey is good, liquid is bad.
  • Let pie cool completely.
  • While the pie is baking, heat cream in a small saucepan. until the first bubbles appear. Do not bring to a full boil.
  • Pour hot cream over the mini chocolate chips (mini chips will melt better than standard size, but you can use any finely chopped chocolate).
  • Let the cream and chips stand for a minute to soften, then stir until smooth.
  • The ganache needs to be at room temperature to whip. You can either chill it completely and then let it sit on the counter at room temperature for a half hour, or just pop it in the freezer for 15-30 minutes then let it sit at room temperature. Once you have slightly cool chocolate ganache, whip it on high until thick and fluffy, like mousse.
  • Top pie with whipped ganache.
  • You can decorate with mini marshmallows and/or chocolate candies (Hershey Kisses are lovely for this) or eat as is.

1 (14 ounce) can sweetened condensed milk
1/2 cup biscuit mix

Steps:

  • Preheat oven to 375°.
  • Bake the pastry shell for 10 minutes; remove from oven.
  • Reduce temperature to 325°.
  • In a saucepan over low, melt the chocolate chips with butter.
  • In large mixer bowl, beat chocolate mixture with remaining ingredients except nuts until smooth.
  • Add nuts and pour mixture into baked pastry shell.

175g plain flour
85g butter , chopped into pieces
2 tbsp icing sugar
1 tsp ground cinnamon
3 large eggs
300g light brown muscovado sugar
1 tsp vanilla extract
175g butter , melted
50g plain flour
50g cocoa , plus extra to serve
50g macadamia nuts , chopped
50g dark chocolate , chopped
ice cream to serve

Steps:

  • Tip the flour, butter, icing sugar and cinnamon into a food processor and pulse to make crumbs. Add 2 1⁄2-3 tbsp water and pulse until it comes together. Wrap in cling film and chill for 20 mins.
  • Heat oven to 180C/160C fan/gas 4. Roll out the pastry on a lightly floured surface and use to line a deep 23cm loose-based tart tin. Leave the excess pastry overhanging the edges of the tin. Line with baking parchment, fill with baking beans and chill for 15 mins.
  • Bake for 15 mins, remove the paper and beans, then bake 5 mins more until the pastry is crisp and pale golden.
  • Beat the eggs and sugar together to create a mousse-like texture. Stir in the vanilla and melted butter, then fold in the flour and cocoa. Scatter the nuts and chocolate over the pastry case and pour the filling on top. Bake for 30 mins until firm with a slight wobble. Trim away the excess pastry and leave to cool. If freezing, wrap in cling film and foil. To defrost, unwrap and thaw.
  • Serve at room temperature or warm, with a scoop of ice cream and dusting of cocoa.
