Steps:
- In a small saucepan, combine sugar, cornstarch, cocoa, and milk.
- Cook on medium until thick.
- Remove from heat and add vanilla and butter and stir until combined.
- Place in molds and freeze until firm.
HEALTHY FUDGESICLES RECIPE
Steps:
- In a medium-size, heavy-bottom saucepan, place the coconut milk or cream, milk, and cocoa powder, and whisk to combine well.
- Place the pan over medium-low heat and bring to a simmer. Remove the pan from the heat.
- Add the chopped chocolate to the pot and whisk until the chocolate is melted.

These taste amazing and are very simple! They must freeze for 4 hours (not included in preparation time).

Steps:
- Place chopped chocolate into a medium glass mixing bowl. Set aside.
- Combine heavy cream, milk, and cocoa powder in a medium saucepan over medium heat. Whisk constantly until cocoa is dissolved and mixture comes to a simmer. Remove from the heat and pour over the chocolate. Let stand for 2 to 3 minutes and then whisk gently until all chocolate is melted. Whisk in the vanilla extract.
- Divide the mixture evenly among the molds and place in the freezer. Freeze for at least 4 hours or until solid. Fudgepops can be held in the freezer for up to 1 week in an airtight container.
DAIRY-FREE FUDGESICLES
These creamy dairy-free fudgesicles are made from basic pantry ingredients for a decadent cool treat that kids and adults will love.

Steps:
- In a medium saucepan over medium-high heat, combine the coconut milk and honey; bring to a simmer.
- Add the cocoa powder and cornstarch and continue to heat and whisk until the powders are well incorporated and the mixture comes to a simmer, 4-5 minutes. Continue to simmer for 1-2 minutes, until the mixture thickens slightly and easily coats the back of a spoon.
- Remove the saucepan from the heat and let it sit aside for 15-30 minutes to cool slightly before stirring in the vanilla and pouring the mixture into popsicle molds.
- Pour mixture into 2- or 3-ounce popsicle molds and place in freezer 8 to 24 hours before removing from molds and wrapping individually in plastic wrap.***

- Heat milk, sugar, cocoa powder, corn syrup, and 1/4 teaspoon salt in a 2-quart heavy saucepan, stirring, until sugar has dissolved. Remove from heat and stir in vanilla. Cool to room temperature or quick-chill in an ice bath. Pour into molds and freeze 30 minutes. Insert sticks (if using), then freeze until firm, about 24 hours.
- Run hot water over molds (or dip in hot water) to loosen pops before unmolding.

- Place bittersweet chocolate into a medium bowl and set aside.
- Using a medium sized pan over medium heat, ad coco powder, heavy cream, and cold milk. Heat to simmer.
- Pour milk mixture over bittersweet chocolate. Let sit for 2-3 minutes.
- Whisk gently to combine, then add vanilla and continue whisking till thouroughly mixed.
- Pour into popsicle molds and freeze for a minimum of 4 hours. NOTE: A turkey baster will do the trick nicely for filling the molds or you can use a container with a spout, such as a large measuring cup.
