Steps:

  • In a small saucepan, combine sugar, cornstarch, cocoa, and milk.
  • Cook on medium until thick.
  • Remove from heat and add vanilla and butter and stir until combined.
  • Place in molds and freeze until firm.

  • In a medium-size, heavy-bottom saucepan, place the coconut milk or cream, milk, and cocoa powder, and whisk to combine well.
  • Place the pan over medium-low heat and bring to a simmer. Remove the pan from the heat.
  • Add the chopped chocolate to the pot and whisk until the chocolate is melted.

8 ounces bittersweet chocolate, chopped fine
12 ounces (1 1/2 cups) heavy cream
8 ounces (1 cup) whole milk
2 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
Special Equipment: Icepop molds

Steps:

  • Place chopped chocolate into a medium glass mixing bowl. Set aside.
  • Combine heavy cream, milk, and cocoa powder in a medium saucepan over medium heat. Whisk constantly until cocoa is dissolved and mixture comes to a simmer. Remove from the heat and pour over the chocolate. Let stand for 2 to 3 minutes and then whisk gently until all chocolate is melted. Whisk in the vanilla extract.
  • Divide the mixture evenly among the molds and place in the freezer. Freeze for at least 4 hours or until solid. Fudgepops can be held in the freezer for up to 1 week in an airtight container.

2 15-ounce cans full-fat coconut milk*
2 tablespoons honey (use maple syrup or agave nectar for vegan pops)
1/4 cup unsweetened cocoa powder
1 tablespoon cornstarch or arrowroot powder (optional) - see note below
1 teaspoon pure vanilla
2-ounce or 3-ounce popsicle molds**

Steps:

  • In a medium saucepan over medium-high heat, combine the coconut milk and honey; bring to a simmer.
  • Add the cocoa powder and cornstarch and continue to heat and whisk until the powders are well incorporated and the mixture comes to a simmer, 4-5 minutes. Continue to simmer for 1-2 minutes, until the mixture thickens slightly and easily coats the back of a spoon.
  • Remove the saucepan from the heat and let it sit aside for 15-30 minutes to cool slightly before stirring in the vanilla and pouring the mixture into popsicle molds.
  • Pour mixture into 2- or 3-ounce popsicle molds and place in freezer 8 to 24 hours before removing from molds and wrapping individually in plastic wrap.***

Number Of Ingredients 6

3 cups low-fat milk (1% or 2% milk fat)
1 cup sugar
3/4 cup unsweetened cocoa powder (preferably Dutch-process)
1/4 cup light corn syrup
1 teaspoon pure vanilla extract
Equipment: 8 (1/3-cup) or 10 (1/4-cup) ice pop molds and 8 or 10 wooden sticks (if necessary)

Steps:

  • Heat milk, sugar, cocoa powder, corn syrup, and 1/4 teaspoon salt in a 2-quart heavy saucepan, stirring, until sugar has dissolved. Remove from heat and stir in vanilla. Cool to room temperature or quick-chill in an ice bath. Pour into molds and freeze 30 minutes. Insert sticks (if using), then freeze until firm, about 24 hours.
  • Run hot water over molds (or dip in hot water) to loosen pops before unmolding.
