This is a fantastic fudge. This is my grandmother's recipe. Actually the French Canadian name for this recipe is sucre a la creme. It's delicious and also very rich and sweet for all you sweet lovers.

Steps:
- In pot melt butter.
- Add brown sugar and evaporated milk.
- Bring to a medium boil.
- Boil for exactly 5 minutes.
- Remove from heat.
- Add icing sugar and mix well with electric mixer (Do this fast enough because it will start to harden around the edges of the pot).
- Add walnuts.
- Pour in a 9x9 square pan.
- Cool completely before cutting into squares.

These brownies are so rich and fudgy and so simple to make. I got the recipe from a recipe group, and have never bought a mix again!

Steps:
- In a medium saucepan, melt butter or margarine on low heat.
- Remove from heat and in same pan, stir in sugar, eggs and vanilla, stir well.
- Add in flour, cocoa, baking powder and salt.
- Stir in chips and nuts if desired.
- Bake at 350 for approx 25-30 minutes, depending on your oven.
- Do not over-bake.
FUDGE
I double the recipe and put in a glass baking dish (9x13 inches). Nice for holidays . . . Keep it for a secret and family and friends will think you worked forever on it . . . (smiles). You can also use peanut butter chips and make peanut butter fudge.

FUDGE
Make this fudge as a present for family and friends. You'll need a sugar thermometer but it's well worth it - this is a recipe you'll use again and again

Steps:
- Line an 18cm square tin with greaseproof paper.
- Put the milk, sugar and butter in a heavy-based saucepan. Heat slowly, stirring all the time, until the sugar has dissolved and the butter has melted.
- Bring to the boil for 15-20 minutes, stirring all the time. When the mixture rises dramatically take it off the heat, stirring all the time until the mixture goes back down.
- When the mixture reaches the soft-ball stage (115°C on a temperature probe) remove from the heat and stir in the vanilla extract. Leave to cool for 5 minutes.
- Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears. Pour the mixture immediately into the tin and leave to set at room temperature.
- Once set, cut the fudge into small pieces and store in a sealed container.

CHOCOLATE-TAHINI FUDGE CAKE
Steps:
- Place an oven rack in the middle position and preheat the oven to 300 degrees F.
- Grease a 9-inch cake pan with cooking spray or butter. Line the bottom with a parchment round. Set aside.
- In a medium mixing bowl set over a saucepan with barely simmering water over medium-low heat, add the butter, tahini and chocolate chips. Gently cook, stirring occasionally, until just melted and smooth. Whisk in the granulated sugar until combined. Remove from the heat. Add the eggs one at a time, whisking until fully incorporated. Add the vanilla and salt and stir to combine. Add the flour and mix until just combined.
- Pour the cake batter into the prepared pan. Bake for 1 hour to 1 hour and 15 minutes, until a toothpick inserted into the middle comes out with a few fudgy crumbs and the sides pull slightly away from the pan. Cool completely in the pan on a wire rack.
- To assemble the cake, remove the cooled cake onto a platter or cake stand. Cut and serve with a dollop of Tahini Whipped Cream and crumbled halva on top.
- In the bowl of a stand mixer fitted with the whisk attachment, add the heavy cream, powdered sugar and salt. Beat on low speed until incorporated, then increase the speed to medium. Beat to medium peak and then add the tahini. Beat until smooth and just under a stiff peak.
PEANUT BUTTER FLAXSEED FUDGE RECIPE
Steps:
- Place the milk, honey, peanut butter and flax seeds in a food processor.
- Blend together until smooth and fudgy (add extra milk if needed). Stir in the remaining peanuts.
- Line a small baking tray with baking paper and pour the mixture into the tray.
- Freeze for an hour.
- Cut into 12 even pieces.

FUDGE FOR ONE

- 1. Add all the ingredients in at least a quart( 32 oz.) size GLASS bowl. I like to use my 4 cup glass measuring cup. Stir together then wash sugar off spoon.
- 2. Put in microwave. Heat on high for 1 minute. Take out and stir. If you hear any scraping noises put in microwave for another 30 seconds. Take out and stir again. It should be shiny and smooth. If there is sugar on the sides use a brush moistened with water to wash down sides. Heat another 15 seconds in microwave. Stir again.
- 3. Add 1 Tablespoon of butter and 1 teaspoon of vanilla.
- 4. Fill a pan about half way up with cold water, just a little larger than the bowl. Put bowl in to water making sure not to get any water in your fudge. Cool about 5 minutes this way. Take out and stir until the fudge becomes dull. Eat and Enjoy.
