CHOCOLATE FUDGE FILLING
Use this chocolate filling when making Sparkling Vanilla Sandwich Cookies.

Steps:
- Place chocolate chips, sugar, and salt in a medium bowl; set aside. Heat evaporated milk in a small saucepan over medium-high heat until it just comes to a simmer. Remove from heat and pour over chocolate mixture; let stand until chocolate melts, about 5 minutes. Add vanilla, whisk until filling is smooth and well combined.
- Transfer chocolate filling to refrigerator; let chill until slightly firm, but still spreadable, about 2 hours.
CHOCOLATE FUDGE THUMBPRINT COOKIES
Karo recipe that adds chocolate to all those wonderful thumbprint cookies. I looked through all 'zaar had, but didn't see one with chocolate and using Karo corn syrup.

Steps:
- Preheat oven 325 degrees.
- Mix margarine, light brown sugar, and vanilla till smooth.
- Beat in 1/2 cup corn syrup and egg.
- Blend in 3 cups of flour and salt, adding more flour if necessary to make dough.
- You can refrigerate at this point for 48 hours.
- Roll dough into 1 inch balls, roll in nuts to coat.
- Place on ungreased sheet 2 inches apart. Press thumb into ball.
- Fill with prepared filling:.
- Warm 1/3 cup light corn syrup in saucepan or carefully in microwave.
- Add chocolate chips; heat and stir till melted and mixed.
- Let cool till you can handle it easily. Then put into pastry bag or sealable bag. (Cut SMALL snip from bottom corner).
- Fill hollow thumbprints with chocolate mix.
- Bake 10-12 minutes or till firm.
- Cool on wire rack.

ITALIAN FUDGE-FILLED COOKIES
Steps:
- Preheat oven to 350 degrees F.
- For the dough: in a mixer, beat together the shortening and brown sugar. Add the milk and the egg, and beat until combined. Add the salt, baking powder, vanilla and flour. Mix until everything is thoroughly combined.
- Remove dough from bowl, cut in half. Roll each half of dough between 2 sheets of waxed paper. Peel waxed paper off the bottom of 1 of the layers and place it in a greased 9 by 13-inch baking pan. Press dough with hands into the corners of the pan, trimming any pieces that come over the sides. Peel off the waxed paper from the other side.
- Meanwhile, stir all the filling ingredients together. Evenly pour fudge filling on top of first layer in pan. Remove waxed paper from 1 side of top dough layer and place that side over filling. Then remove waxed paper from the top side. Bake until top is brown, about 30 to 35 minutes. Let cool on a rack for 4 to 5 hours or even overnight. Sprinkle with powdered sugar and cut into serving pieces
CHOCOLATE CARAMEL THUMBPRINTS
These taste like Pecan turtles in a cookie! Who doesn't like chocolate with caramel and nuts? YUMMY!! Time does not include chill time.

- Separate egg; set egg yolk aside. Cover and chill egg white until needed. Stir together flour, cocoa powder, and salt; set aside.
- In large bowl, beat butter with electric mixer on medium to high speed for 30 seconds. Add sugar; beat until combined. Beat in egg yolk, milk, and vanilla. Beat in as much of the flour mixture as you can with mixer. Stir in any remaining flour mixture. Cover and chill about 2 hours or until dough is easy to handle.
- Preheat oven to 350°F In small saucepan, cook and stir caramels and whipping cream over low heat until mixture is smooth. Set aside.
- Slightly beat reserved egg white. Shape dough into 1 inch balls. Roll balls in egg white, then in pecans to coat. Place balls 1 inch apart on greased cookie sheet. Using your thumb, make indention in center of each cookie.
- Bake about 10 minutes or until edges are firm. Spoon melted caramel mixture into indentation. (If necessary, reheat caramel mixture to keep it spoon able.) Transfer cookies to wire rack; cool.
- In another small saucepan, combine chocolate chips and shortening. Cook and stir over low heat until melted. Cool slightly. Drizzle cookies with chocolate mixture. Let stand until chocolate is set.

- Combine first 6 ingredients (sugar through salt) in a large saucepan. Bring to a boil over medium heat; cook 10 minutes or until a candy thermometer registers 234°, stirring occasionally. Remove from heat. Add peanut butter and vanilla; stir until peanut butter melts.

ULTIMATE CHOCOLATE CHOCOLATE CHIP FUDGE CAKE
Judge a cake by the list of ingredients. How can a cake be truly deeply rich chocolate with only a bit of cocoa? This cake has a depth of flavor that can only come when real chocolate is used in sizeable amounts. Use a higher quality chocolate to further heighten the flavor. This cake is VERY easy to make. Do NOT try to lighten up this cake...it needs the fat in the whole milk and butter to add to the moistness. I originally found this on Epicurious.com but have made a few changes for my own taste. - Heat oven to 350. Butter and parchment line two 8x2 baking pans.
- Measure all ingredients (except chocolates) inth a large mixing bowl. Mix once or twice by hand to incorporate ingredients.
- Blend for 30 seconds on LOW speed, scraping bowl constantly.
- Melt chocolate bars in the microwave by heating for 30 second intervals.
- Add melted chocolate to mixing bowl. Beat for 3 minutes on HIGH speed.
- Mix in chocolate chips by hand.
- Spoon into the pans and level them off.
- Bake layers for 45-50 minutes or until a toothpick inserted comes out clean.

- Cream butter, salt & vanilla till fluffy; beat in sugar.
- Blend in flour, milk, and mini chocolate chips.
- Shape into 1" balls. Place on ungreased baking sheet. With finger or thumb, poke depression in each.
- Bake in 375 degree F. oven for 10-12 minutes.
- Roll while warm in confectioners sugar. Set aside while you make filling:.
- Melt chocolate chips with shortening; stir.
- Cool a little.
