TURKEY CURRY



Turkey curry image

Go classic with your turkey leftovers and whip up this healthy spice-filled stew with peppers and tomatoes

1 tbsp sunflower oil
1 large onion, thickly sliced
1 green pepper, deseeded and chopped
2 tbsp curry paste (or gluten-free alternative)
2 garlic cloves, crushed
400g can chopped tomatoes
300g leftover turkey, diced
300g leftover cooked potato (either boiled or roast), diced
2 tbsp mango chutney
small pack coriander, roughly chopped
rice or naan bread, to serve

Steps:

  • Heat the oil in a large pan over a fairly high heat. Cook the onion and pepper for 3-4 mins until starting to soften and brown slightly. Stir in the curry paste and garlic, then cook for another 1-2 mins. Add the chopped tomatoes and 150ml water. Bring to the boil and bubble for 5 mins.
  • Turn the heat down, stir in the turkey and potatoes, and cook for another 2-3 mins, then season and add the mango chutney. Scatter with coriander and serve with rice or naan.

Freshen up Christmas leftovers of turkey, carrots and parsnips with ras el hanout in this sweet and spicy Moroccan stew

1 tbsp olive oil
1 red onion , thickly sliced
3 carrots , thickly sliced on the diagonal
3 parsnips , thickly sliced on the diagonal
2 garlic cloves , crushed
2 tsp ras el hanout
500ml turkey or chicken stock
400g can chopped tomatoes
400g can chickpeas , drained and rinsed
140g mixture of dried apricots and prunes , roughly chopped
300g leftover turkey , cut into chunks
good drizzle of clear honey
½small bunch coriander , roughly chopped
1 tbsp flaked almonds
couscous , to serve
Greek yogurt , to serve

Steps:

  • Heat the oil in a large saucepan, add the onion and cook gently for 8 mins or until softened. Add the carrots and parsnips, and cook for 8 mins until starting to soften and brown a little. Stir in the garlic and ras el hanout, and cook for a further 30 secs. Tip in the stock, tomatoes, chickpeas, dried fruit and 150ml water. Season, bring to a simmer and cook for 25-30 mins until the vegetables are tender.
  • Add the turkey and simmer for 5 mins to warm through. Stir in the honey, then scatter over the coriander and almonds just before serving with couscous and Greek yogurt.

1 cup sliced celery
1/2 cup sliced carrots
1 cup fat-free milk
2 tablespoons cornstarch
3/4 cup reduced-sodium chicken broth
2 cups diced cooked turkey or chicken
2 tablespoons dried minced onion
1/2 teaspoon garlic powder
1 to 4 teaspoons curry powder
Hot cooked rice, optional

Steps:

  • Lightly coat a skillet with cooking spray; saute celery and carrots until tender. In a bowl, mix 1/4 cup milk and cornstarch until smooth. Add broth and remaining milk; mix until smooth. , Pour over vegetables. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the turkey, onion, garlic powder and curry powder; heat through, stirring occasionally. Serve with rice if desired.

2 tablespoons coconut oil
1 yellow onion, diced
One 2-inch piece ginger, peeled and chopped
4 cloves garlic, chopped
1/4 cup chopped fresh cilantro stems (from 1 bunch), plus chopped fresh cilantro, for garnish
Kosher salt
1 tablespoon tomato paste
2 teaspoons curry powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
One 28-ounce can whole tomatoes
1 1/2 cups low-sodium turkey or chicken stock
1/2 pound russet potatoes, peeled and diced into 1/3-inch cubes
3 cups cubed turkey breast
1 cup frozen peas
1/4 cup heavy cream
2 tablespoons lime juice (from 2 limes)
Rice, for serving, optional

Steps:

  • Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the coconut oil and swirl to melt and coat the base of the pot. Add the onion, ginger, garlic, cilantro stems and 1/2 teaspoon salt. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  • Add the tomato paste and stir to coat the vegetables. Add the curry powder, cumin, coriander and cayenne and stir to combine and toast the spices. Add the tomatoes, stock, and potatoes to the pot. Bring the mixture up to a boil, then turn the heat down to low, cover the pot and let simmer until the potatoes are very tender, about 25 minutes.
  • Add the turkey and peas to the pot and simmer until heated through, another 5 minutes. Turn off the heat and stir in the cream and lime juice.
  • Ladle the curry into bowls and garnish with the chopped cilantro. Serve with rice, if desired.

Leftover turkey shines in this make-ahead curry. I often reduce the amount of curry powder as my family doesn't like it, but feel free to spice this how you please. I use fresh pineapple but it works well with the canned.

2 medium onions, peeled and chopped
1 celery rib, sliced
2 granny smith apples, with peel on,cored and thinly sliced
6 tablespoons butter or 6 tablespoons margarine
1/4 cup all-purpose flour
4 teaspoons curry powder
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dry mustard
1 bay leaf
3 cups chicken broth, or turkey if you have it
2 cups canned pineapple chunks, or fresh
1 cup half-and-half (whipping cream is too heavy) or 1 cup 10% cream (whipping cream is too heavy)
4 cups cooked turkey meat, , white and dark,in bite size pieces

Steps:

  • Here's something different to help use up leftover holiday turkey.
  • Make this entire dish the night before, or first thing in the morning and then refrigerate all day; it tastes much better when reheated.
  • In a large saucepan over medium heat, melt butter and saute onions, celery and apple slices until tender, but do not let brown.
  • Sprinkle with the flour and curry powder and cook for 3 minutes, whisking occasionally.
  • Add salt, pepper, dry mustard and bay leaf, then slowly pour in the chicken stock (or turkey stock if you were ambitious and made some).
  • Turn the heat up and bring to a boil, then turn heat back down and simmer for 15 minutes, stirring occasionally.
  • Remove bay leaf and add pineapple chunks and cream and cook for 2 minutes.
  • Remove from heat, cover, and refrigerate; pour into a storage container if you don't want to refrigerate your pot too.
  • Just before serving, return curry mixture to a large pot and stir in turkey meat.
  • Cook over medium heat until completely heated through.
  • Serve with rice.
  • If you happen to have leftover cranberry sauce, goose it up with some raisins that have been plumped in hot water (or warm brandy) and some freshly grated ginger-- a sort of cheater chutney that uses up the cranberry sauce.

1/2 teaspoon cornstarch
2 tablespoons reduced-sodium soy sauce
1 tablespoon minced fresh cilantro

1/8 teaspoon crushed red pepper flakes, optional
1 tablespoon canola oil
1 large sweet red pepper, julienned
3 green onions, cut into 2-inch pieces
2 cups cubed cooked turkey breast
2 cups hot cooked brown rice

Steps:

  • Mix first 7 ingredients and, if desired, pepper flakes. In a large skillet, heat 1 tablespoon canola oil over medium-high heat; stir-fry red pepper until crisp-tender, about 2 minutes. Add green onions; stir-fry until tender, 1-2 minutes., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in turkey; heat through. Serve with rice.

Use up your leftover Christmas turkey in these moreish turkey curry patties. They're perfect for the days after the big meal, or you can freeze them for later

2 tbsp vegetable oil
1 medium onion, finely chopped
1 large tomato, chopped
3 thyme sprigs
3 garlic cloves, finely chopped
1 scotch bonnet chilli, chopped (optional)
2½cm piece of ginger, peeled and grated
1 tsp ground turmeric
2 tsp each ground coriander
2 tsp ground cumin
½ tsp ground cinnamon
½ tsp ground allspice
300g leftover roast turkey, chopped
350ml turkey or chicken stock
600g plain flour, plus extra for dusting
4 tsp ground turmeric
1 tsp mild curry powder
1 tsp sugar
300g cold unsalted butter, cut into cubes
100g vegetable shortening, grated (or use very cold butter)
2 large eggs
1 tsp white wine vinegar
splash of milk

Steps:

  • First, make the pastry. Combine the flour, spices, sugar and 1 tsp salt. Rub in the butter and shortening with your fingers until the mixture resembles breadcrumbs. Whisk 1 egg and the vinegar together, then tip into the flour mixture. Bring together into a dough using your hands, adding 3-6 tbsp water if needed until just pliable. Knead for 3-5 mins, then cover and chill for 30 mins. Remove from the fridge 30 mins before you're ready to use.
  • Meanwhile, heat the oil in a pan and fry the onion over a medium heat for 10 mins until softened. Add the tomato, thyme, garlic, chilli, if using, and ginger. Fry for a further 3 mins. Mix all the spices with a few tablespoons of water, then add to the pan. Fry for another 5 mins until the water evaporates and the spices are fragrant.
  • Add the turkey and fry for 5 mins. Pour in the stock, then reduce the heat and simmer for 10-15 mins until most of the liquid has reduced. Remove from the heat and leave to cool completely. Chill until ready to use. Will keep chilled for up to 24 hrs.
  • Heat the oven to 180C/160C fan/gas 6. Roll the chilled pastry out on a floured surface or sheet of baking parchment (this helps prevent the turmeric from staining the surface) to a 4mm thickness. If it starts to crack, press small pieces of the pastry into the gaps to fill. Using a 15cm-diameter bowl as a template, cut out as many circles of pastry as you can, then re-roll the offcuts and repeat until all the pastry has been used. You should end up with about 10 circles. Transfer to a baking tray lined with baking parchment.
  • Working with one pastry circle at a time, spoon 2 tbsp of the turkey curry filling onto one side of the circle, leaving a 2cm border. Beat the remaining egg with the milk and brush onto the border. Fold one half of the pastry over the other to form a semicircle and enclose the filling. Press the edges together, seal with a fork and prick the top all over.
  • Bake for 20-25 mins, or until the pastry is firm. Leave to cool slightly and serve. After cooling completely, will keep in the freezer for up to three months.

2 tsp vegetable or sunflower oil
4 chicken drumsticks , skin removed
2 large red onions , chopped
2 peppers (any colours will do), chopped
3-4 tbsp mild curry powder
425g can pineapple chunks in unsweetened juice
400g can coconut milk
400g can kidney beans , drained
2-4 tbsp hot pepper sauce (depending on how hot you like it)
small bunch coriander , chopped
cooked rice , to serve (we used Tilda coconut rice)

Steps:

  • Heat the oil in a large frying pan. Add the chicken and brown well on all sides, then transfer to a plate. Add the onions and peppers to the pan, and cook for 5 mins until the veg starts to soften. Return the chicken to the pan and sprinkle in the curry powder, then add the pineapple with its juice, and the coconut milk. Season and simmer, uncovered, for 40 mins until the chicken is tender and the sauce has reduced and thickened a little.
  • Add the beans and pepper sauce to the pan. Simmer for another 2-3 mins until the beans are warmed through, then scatter with coriander and serve with cooked rice.

1 medium onion, chopped
1 medium tart green apple, such as granny smith,cored and chopped
1 clove garlic, minced
1 tablespoon curry powder, preferably madras brand
2 tablespoons flour
1 1/2 cups turkey broth or 1 1/2 cups canned chicken broth
1 lb cooked turkey, cut in 1 inch cubes (about 3 cups)
1/2 cup plain yogurt
1 medium banana, cut into 1/2 inch slices
1/2 cup toasted blanched slivered almond

Steps:

  • In a large skillet, melt the butter.
  • Add the onion, apple and garlic and cook over moderate heat, stirring often, until softened, about 3 minutes.
  • Sprinkle with the curry powder and stir for 15 seconds.
  • Sprinkle on the flour and cook, stirring, for 1 minute.
  • Stir in the broth and bring to a simmer; reduce the heat to low and cook for 5 minutes.
  • Stir in the turkey and cook until heated through, about 2 minutes.
  • Stir in the yogurt and banana and cook until heated through, about 30 seconds; do not boil.
  • Transfer to a serving dish, sprinkle with the almonds and serve immediately, preferably over cooked basmati rice.
  • Serves four.
