Easy Vegan Protein Pancakes image

Enjoy a filling breakfast with these vegan protein pancakes. Eggless and dairy-free, this easy recipe tastes delicious with plant-based butter and fruits.

1 1/4 cups non-dairy milk (plus more as needed)
1 cup all-purpose flour (or whole wheat)
1/4 cup vegan protein powder
2 to 3 tablespoons maple syrup (or coconut sugar)
3 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon (optional)
1/3 cup coconut flakes, raisins, or chocolate chips (optional)
Vegan butter

Steps:

  • In a large bowl, combine the dry ingredients.
  • Add the maple syrup, if using. Mix well.
  • Slowly add the milk, stirring until the mixture is thick. Add more liquid until the batter is pourable.
  • Add coconut flakes, raisins, or other mix-ins, if using. Stir well.
  • In a large pan over medium-low heat, melt 1 tablespoon vegan butter. Scoop 1/3 cups of batter onto the pan. Cook for 2 to 3 minutes on each side or until light golden brown. Repeat with the remaining batter.
  • Serve immediately with vegan butter, maple syrup, or fruit.

We love pancakes, oatmeal and fruit but can't eat eggs so after trying several eggless pancake recipes, I altered them and created this one. My daughter loves them and will eat 3 pancakes --- she's only 2. Thankfully they are healthy.

Number Of Ingredients 10

1 cup oat flour
2/3 cup whole wheat flour
1/4 teaspoon salt
1 tablespoon baking powder
1 tablespoon sugar
1 cup rice milk
3/4 cup pulp free orange juice
1 banana, mashed
10 strawberries, mashed
1/2 pint blueberries

Steps:

  • If you can't find oatmeal flour, you can make your own by grinding up Quaker Oatmeal in your blender until it is a fine powder.
  • Don't have oatmeal either, you can use white flour as a substitute.
  • Mix first 5 dry ingredients together in a large mixing bowl.
  • Mash your banana and strawberries together in a separate bowl.
  • Add whole blueberries, milk and OJ to the banana mix and stir together.
  • Pour fruit mixture into the dry ingredients and stir until moist.
  • Add more milk or juice if you like a thinner batter.
  • Set batter aside for 10 minutes.
  • Preheat your griddle to 350°F.
  • Pour 1/4 cup batter on griddle and cook for approximately 3-4 minutes or until the bottom side is golden or the top of the pancake starts to bubble.
  • Flip and cook on other side until golden brown, approximately 3 minutes.
  • Serve with butter and syrup, honey or fresh fruit on top.

3 tablespoons sugar
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2 1/2 tablespoons margarine
3/4 cup water
1 egg

Steps:

  • Sift flour, sugar, baking powder and salt together into a mixing bowl.
  • Heat frying pan and melt margarine. Coat bottom and pour remaining into bowl with flour.
  • Add water and egg, mix well.
  • Mixture can still be lumpy.
  • Cook pancakes in fry pan, pour in mixture, wait until top gets bubble and them flip. 4 minutes per side usually works!
  • Top with syrup, brown sugar or margarine and honey.

  • Heat a griddle or large skillet (preferably cast iron - see notes) on medium-low to medium heat. Using a paper towel, rub on a bit of oil. Each pancake takes about 7-8 minutes total to cook, so if you can only fit one pancake on your griddle, use 2 pans at once to reduce the total cooking time.
  • In a medium bowl, mix together the oats and 1 cup (240 milliliters) oat milk. Microwave on high for 1 minute 30 seconds. Remove from microwave and give the oatmeal a stir. Mix in the sunflower oil. Set aside and allow to cool for a few minutes.
  • In a separate large bowl, mix together the flour, baking powder, baking soda, sugar and salt. Make a well in it and mix in the oatmeal with a fork.
  • Slowly mix vinegar and the remaining 1/2 cup oat milk, adding about 2 tablespoons at a time. You may not need the entire 1/2 cup. How much you end up using will be dependent on the brand and type of oats you use. The batter should be the consistency of a thick bowl of oatmeal, so when you drop the batter on the griddle, the batter will slowly form into a circle shape with the gentle help of a spoon to spread it.
