HAWAIIAN CHICKEN SALAD



Hawaiian Chicken Salad image

A giant salad loaded with the tropical flavours of Hawaii! This recipe is based on the marinade for these Hawaiian Chicken Skewers I shared a few weeks ago - see note 1 for how to REUSE the marinade for this recipe. This recipe also uses leftover Coconut Lime Cilantro/Coriander Rice that I shared as a side for the skewers.

Marinade ((Note 1):)
1/3 cup coconut milk ((from a can))
1/4 cup pineapple juice ((from can, save pineapple pieces))
1 tbsp tomato sauce/ketchup
1 tbsp soy sauce
Zest of 1 lime
2 garlic cloves (, minced)
1/4 tsp EACH onion powder (, cumin, paprika, ginger powder, salt)
Chicken & Salad:
1/2 tbsp olive oil
1 large chicken breast (, halved horizontally)
1/2 cup corn
1/2 - 3/4 cup pineapple pieces ((from can))
4 - 6 cups chopped lettuce
1/2 avocado (, cut into wedges)
1/2 red onion (, finely sliced)
1/2 cup cherry tomatoes (, halved)
1 small carrot, finely shredded
1 - 1 1/2 cups Coconut Lime Cilantro / Coriander Rice ((Note 2))
Dressing:
1 1/2 tbsp lime juice
2 1/2 tbsp olive oil
2 tbsp finely chopped cilantro/coriander
1/2 garlic minced
1/2 tsp sugar or honey
1/4 tsp salt
Black pepper

Steps:

  • Mix together Marinade ingredients, marinate chicken for minimum 3 hours, preferably overnight.
  • Shake Dressing ingredients together in a jar, set aside for at least 15 minutes.
  • Heat oil in a non stick skillet over high heat (or BBQ). Add chicken and cook each side for 3 minutes or until golden. Remove and cover loosely with foil for 5 minutes, then slice thickly.
  • Sear 1/2 cup pineapple pieces and corn in the skillet until golden.
  • Pile salad ingredients on a platter and top with sliced chicken. Drizzle over Dressing. Serve and pretend you're in Hawaii!

2-1/2 cups diced cooked chicken
1 can (20 ounces) pineapple tidbits, drained
1 cup seedless red grapes, halved
3/4 cup sliced celery
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup navel orange segments
3/4 cup sliced firm bananas
1/3 cup salted peanuts

Steps:

  • In a bowl, combine the first seven ingredients. Fold in oranges. Cover and refrigerate until chilled. Just before serving, fold in bananas and sprinkle with peanuts.

This is very rich and very different from any other chicken salad I have had. It is very easy to make low fat by using low fat Miracle whip and cream cheese. I have always loved the combination of sweet and salty so this works for me but it does seem to be a love it or hate it kind of recipe. I hope you love it! :wink:

6 ounces cream cheese, brought to room temp
1/3 cup Miracle Whip
3 cups diced rotisserie-cooked chicken or 3 cups grilled chicken breasts
1 cup fresh pineapple tidbits, well drained
15 ounces mandarin oranges, well drained
1/3 cup dry roasted almonds, chopped roughly (dry roasted)
1/4 cup chopped green onion
salt and pepper
sugar (if needed) or Splenda sugar substitute (if needed)

Steps:

  • Cream the cream cheese and miracle whip together.
  • Fold in the chicken then pineapple, onions, and then very carefully fold in oranges careful not to break them apart.
  • Taste it at this time and if your fruit isn't very sweet you may want to add a tsp or 2 of sugar or Splenda to sweeten it a bit.
  • Refrigerate till ready to serve and add almonds just before serving.
  • Serve with crackers, bread, or rolls.
  • Cook time doesn't include cook time for chicken or time to chill.

⅓ cup creamy salad dressing, e.g. Miracle Whip ™
1 (8 ounce) can pineapple tidbits, juice reserved
3 (5 ounce) cans chunk chicken, drained
1 cup blanched slivered almonds
1 ½ cups seedless grapes, halved

Steps:

  • In a medium bowl, beat cream cheese until fluffy. Mix in salad dressing and 2 tablespoons reserved pineapple juice. Stir in the pineapple tidbits, chicken, almonds, and grapes until evenly coated. Chill until serving.

1 can (15 ounces) mandarin oranges, drained
1-1/2 cups sliced fresh strawberries
1-1/2 cups green grapes, halved
1-1/4 cups pina colada-flavored or vanilla yogurt
1/2 cup sweetened shredded coconut, toasted, divided
1/4 to 1/2 teaspoon coconut or vanilla extract

Steps:

  • Stand the pineapple upright and vertically cut a third from one side, leaving the leaves attached. Set cut piece aside. Using a paring or grapefruit knife, remove strips of pineapple from large section, leaving a 1/2-in. shell; discard core. Cut strips into bite-size chunks. Invert shell onto paper towels to drain. , Remove fruit from the small pineapple piece and cut into chunks; discard peel. Place shell in a serving basket or bowl., In another bowl, combine the pineapple chunks, oranges, strawberries and grapes. 1 can (16 ounces) pineapple chunks, drained
1 can (8 ounces) sliced water chestnuts, drained

2 cups celery, diced

  • Mix together the marinade ingredients and place half of the marinade in a bowl with the chicken breasts (reserve the rest). Stir and cover, then place in the fridge to marinade for 30 minutes.
  • Heat a griddle plate or pan and brush with oil. Place the chicken on the griddle (discarding this marinade). Spoon half of the reserved marinade onto the chicken and cook for 5-6 minutes, then turn over and spoon on the rest of the marinade. Cook for a further 5-6 minutes until the chicken is no longer pink in the middle. Remove from the heat and leave to rest on a chopping board.
  • Place the pineapple slices on the griddle and cook for 2-3 minutes on each side until griddle marks appear.
