- Sprinkle unflavored gelatin over 1/4 cup cold water; let stand for 5 minutes. In a bowl, dissolve softened gelatin and cranberry gelatin in boiling water. Stir in cranberry sauce until blended. Add the cinnamon, ginger, salt and remaining cold water. Cover and refrigerate until almost set. Fold in apples and walnuts. Pour into an ungreased 2-1/2-qt. serving bowl. Refrigerate until firm.

- In a small bowl, dissolve lime gelatin in 1 cup boiling water; stir in pineapple. Pour into a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until set but not firm., Sprinkle gelatin over cold water; let stand for 1 minute. Microwave on high for 15 seconds. Stir and let stand for 1 minute or until gelatin is completely dissolved., In a small bowl, beat cream cheese until fluffy. Gradually add milk and gelatin mixture; beat until smooth. Gently spread over lime layer. Refrigerate until set but not firm. , In a large bowl, dissolve strawberry gelatin in remaining boiling water. Whisk in cranberry sauce until smooth. Refrigerate until partially set. Gently spread over cream cheese layer. Refrigerate until firm.

Steps:
- Heat 1 cup fruit juice in small saucepan until it just simmers, do not cook for any length of time.
- Turn off heat and stir in sugar, if using.
- Place remaining 1 cup cold juice in a medium bowl and sprinkle with gelatin, stir, let sit for 2 minutes and stir again.
- Add warm juice to cold juice, stir, and pour mixture into an 8 x 8-inch pan.
- Refrigerate until firm (about 4 hours), and cut into cubes.

- Boil the one cup of water and add it to the Jello in a bowl or container.
- Stir for about 2 minutes, until completely dissolved.
- Add one cup cold water, stir.
- Put 1 cup chopped banana into bottom of the bowl.

FRESH CRANBERRY MOLD
I never bother with a mold for this, but I'm sure it would be pretty (I just use a glass-cut salad bowl). Jell-O salad with fresh fruits, including fresh cranberries. - In a large bolw, dissolve Jello in 1 1/4 cups of hot water. Add 1 1/4 cups cold water and stir. Chill until just beginning to set.
- Meanwhile, grind together cranberries and apples (I use a food processor). Add pineapple, oranges, sugar and nuts (if using). Mix.
- When Jell-O has begun to set, add fruit mixture. Fold in well. Pour into a large mold and refrigerate until set.

- Place cranberries, mandarin oranges, and pecans into a food processor and pulse several times to chop; process mixture until finely ground, about 30 seconds. Transfer mixture into a large bowl.
- Mix pineapple, gelatin, sugar, boiling water, and cold water together in a separate bowl until gelatin and sugar have dissolved. Pour gelatin mixture into cranberry mixture and stir. Pour into a gelatin mold and refrigerate 8 hours or overnight before serving.

CRANBERRY JELLO
At our house it wouldn't be Christmas dinner without "Cranberry Jello". I still serve the canned Jelly type and I make a fresh cranberry salad, but if this would be left off the menu there would be a mutiny. So easy, so good and in our house, so Christmas.

- 1. Drain pineapple; set aside.
- 2. Mix gelatin with 2 cups boiling water until gelatin is dissolved. Add drained crushed pineapple and whole cranberry sauce.
- 3. I kind of squish the cranberry sauce with my hand to break it up. Mix well.
- 4. Pour into gelatin mold. Let set until firm. Unmold onto a lettuce lined plate and serve. I usually make my gelatin a couple of days ahead, just to make things easier for me on the big day.
