I have tried many different low-carb chocolate cookie recipes, and these are my favorite keto cookies; moist, chewy, and so decadent!

1 ½ cups almond butter
2 eggs
½ cup low-calorie natural sweetener (such as Swerve®)
⅓ cup unsweetened cocoa powder, sifted
1 teaspoon sugar-free vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine almond butter, eggs, sweetener, cocoa powder, vanilla extract, and salt in the bowl of a food processor; pulse until a dough forms.
  • Roll dough into 1-inch balls. Place on the prepared baking sheet and press down twice with a fork in a criss-cross pattern.
  • Bake in the preheated oven until edges are firm, about 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1 1/4 cups butter or 1 1/4 cups margarine, softened
2 cups sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups peanut butter chips (12 oz. pkg.) or 2 cups semi-sweet chocolate chips (12 oz. pkg.)

Steps:

  • Heat oven to 350°.
  • In large mixer bowl; cream butter and sugar until light and fluffy.
  • Add eggs and vanilla; beat well.
  • Combine flour, cocoa, baking soda and salt; gradually blend into creamed mixture. Stir in peanut butter or chocolate chips.
  • Drop by teaspoonfuls onto ungreased cookie sheet. Bake 8-9 minutes. (Do not overbake; cookies will be soft. They will puff while baking and flatten while cooling.).
  • Cool slightly; remove from cookie sheet onto wire rack. Cool completely.
